Vpliv temperature skladiščenja na kakovost in obstojnost govejega gyrosa : diplomsko deloPrajndl, MetkaOsnovni namen naloge je bil preučiti vpliv različnih temperatur skladiščenja na mikrobiološke in senzorične lastnosti govejega gyrosa. V teoretičnem delu so predstavljene značilnosti govejega mesa, ... mikrobiološka in senzorična kakovost govejega mesa ter značilnosti mesnih pripravkov, kamor uvrščamo tudi goveji gyros. V eksperimentalnem delu je predstavljen tehnološki postopek izdelave govejega gyrosa in pakiranja, načini skladiščenja pri različnih temperaturah ter metode mikrobioloških in senzoričnih analiz. Z mikrobiološko analizo je bilo ugotovljeno, da je tehnološki postopek izdelave govejega gyrosa ustrezen. S senzorično analizo je potekalo ugotavljanje roka uporabnosti glede na temperaturo skladiščenja. Rok uporabnosti govejega gyrosa, skladiščenega v kontrolirani atmosferi pri temperaturi 0–1 ºC in 3–4 ºC, je 8 dni.Type of material - undergraduate thesis ; adult, seriousPublication and manufacture - Maribor : [M.
