  • The influence of caponizing successfulness on carcass meat chemical composition

    In breast and leg muscles without skin of eight capons and seven slips of Prelux-G provenance were determined dry matter, crude protein, total fats and crude ash. Cockerels were caponised at eight ... weeks of age. Caponising was not wholly successful in all cockerels. Thus animals were called slips and later on compared to capons. At eleven weeks of age capons and slips were moved to two breeders and reared indoors with free range. After the slaughtering at thirty-tree weeks of age muscles from left legs and left parts of breast without skin were taken fot the chemical analysis of meat. Muscles of capon legs contained significantly more total fats in comparison ot muscles of slip legs. Differences between breding of Prelux-G were noticed in breast muscles. ANimals in the first breeding contained significantly less dry matter and morecrude ash in muscles in comparison to muscles of animals from the second breeding.
