Encimska aktivnost jagod v stresnih pogojih : diplomska naloga = Enzymic activity of strawberries under stress conditions : graduation thesisMozetič, BrankaJagode kultivarja Marmolada smo pred skladiščenjem v normalni atmosferi pri 1 °C kratkotrajno tretirali (24 ur) v atmosfero dušika, ogljikovega dioksida ter hlapih acetaldehida. Raziskovali smo vpliv ... dušika in ogljikovega dioksida na podaljšanje obstojnosti in kakovosti jagod ter vpliv dodanega acetaldehida na aromo jagod. Tretiranje z acetaldehidom je povzročilo akumulacijo acetaldehida, etilacetata in etanola. V plodovih tretiranih z dušikom se je akumuliralo več acetaldehida in etanola in enaka količina etilacetata kot pri jagodah, ki so bile tretirane z ogljikovim dioksidom. V plodovih se akumulira tudi metanol, neodvisno od tretiranja. Atmosfera dušika in ogljikovega dioksida vzpodbudi delovanje piruvat dekarboksilaze. Povečanje aktivnosti alkohol dehidrogenaze smo zasledili v plodovih tretiranih z dušikom in acetaldehidom. Atmosfera dušika zadrži spremembo barve in mehčanje plodov. Pri plodovih tretiranih s ogljikovim dioksidom je bila trdota večja kot pri plodovih tretiranih z dušikom. Dodan acetaldehid pospeši spremembo barve in mehčanje jagod.
