Mass transfer during the extraction of Balm

The paper presents the extraction of antioxidants from Balm (Melissa officinalis L.) with ethanol and supercritical CO2. The effect of process parameters (particle size, temperature, pressure) on the ...rate of extraction and concentration of antioxidants in obtained extracts has been studied. Experimental extraction curves were analysed with a mathematical model derived from the second Fick law and the diffusion coefficients of antioxidants at different operating conditions in conventional solvents and in supercritical carbon du=ioxide were determined.
