This work was designed to verify the effective levels of β-carotene fortification of Brazilian commercial, popular spaghetti brands and assess the nutrient retention after cooking. Total carotenoid ...contents in the raw dried pasta varied from 0.9 to 5.9 μg/g. After separating what appeared to be degradation products, however, contents fell to not detectable to 3.8 μg/g and two brands out of seven ranked below the minimum vitamin A value stated on the label. Cooking did not decrease the total carotenoid content. It is concluded that β-carotene fortification of dried pasta can be valid, but analytical separation of β-carotene is necessary to assess the true provitamin A content.

Discute-se o conjunto dos recentes relatórios do Institute of Medicine e Food and Nutrition Board da US National Academy of Sciences, publicados entre 1998 e 2000, dando-se particular ênfase ao livro ...das propostas de Ingestão Alimentar de Referência para os denominados antioxidantes alimentares. O conceito das DRI engloba os já conhecidos valores de Recomendações de Cotas ou Doses Alimentares (RDA), os novos valores de Ingestão Adequada, Ingestão Máxima Tolerável e as Estimativas Médias dos Requerimentos. O termo RDA continua em uso, e é reservado para a recomendação mais apurada de um determinado nutriente, da qual se tenha informação. Na tabela da Ingestão Alimentar de Referência, encontram-se as Recomendações de Doses Alimentares atualizadas e complementadas com valores de Ingestão Recomendada de Nutrientes canadenses, ou completadas com valores de Ingestão Adequada. Valores de Ingestão Máxima Tolerável para os antioxidantes, exceto os carotenóides, são fornecidos em separado.
This is a brief, commented review of the 1998-2000 reports of the Institute of Medicine/Food and Nutrition Board, of the US National Academy of Sciences, particularly that concerning the recommendations for dietary antioxidants. Dietary Reference Intakes (DRI) include Recommend Dietary Allowance (RDA), the new Adequate Intakes and the concepts of Upper Tolerable Intake Levels and Estimated Average Requirements. The term RDA therefore has not disappeared and continues to represent the most refined value known for a numerical recommendation. The Dietary Reference Intakes table is an ensemble of Recommended Dietary Allowance that were either updated, complemented with the Canadian Recommended Nutrient Intake, or completed with Adequate Intake values. Upper Tolerable Intake Leved for the antioxidants, except for the carotenoids, have been proposed in a separate table.
This work describes the effect of feeding enzymatically hydrolyzed α-lactalbumin on blood sugar, albumin and fatty acids, muscular and hepatic glycogen of rats subjected to physical exercise. Three ...normoenergetic/normoproteic diets, containing either casein (
C), α-lactalbumin (
L) or α-lactalbumin hydrolyzate (
H) were fed to thirty male Wistar rats for five weeks. During this period, half of the rats swam for 1 hr daily (
T category) while the other half remained sedentary (
S category). At the end of training, all rats were required to swim to exhaustion. The results showed that those rats of the
T-category consuming diet
H reached exhaustion with significantly higher concentrations of serum glucose (
H 56.0 and
L 32.3 mg/100ml), serum albumin (
H 3.8 and
L 2.1 mg/dl) and muscle glycogen (
H 2.1 and
L 0.6 mg/g), while no differences were observed between diets regarding the time of arrival to exhaustion. Results from diets
C and
L differed minimally. It was concluded that feeding the hydrolyzed protein may result in nutritional advantage to the exercising rat.

Steatite or soapstone, is a soft metamorphic rock composed mainly of talc, dolomite and actinolite, which is abundantly found and used for the manufacture of cookware in south-east Brazil. The study ...estimates its usage for cookware among dwellers of Ouro Preto, and assesses the possible toxicological or nutritional impact on food preparation. Pans made of steatite were purchased both in the crude (n = 6) and 'cured' forms (n = 6). Migration of Ca, Fe, Mg, Mn, Co, Al, Cr, Ni, Pb and Cd was determined for 20 sequential cooking trials, using 3 and 5% acetic acid as a food simulant. Analytical determinations were carried out by inductively coupled plasma atomic-emission spectrometry and the data treated by an individual model of random effects, simple linear regression and Pearson's correlation. About 81% of Ouro Preto's native population own soapstone cookware and, of these, 79% use the pans regularly. Mineral migration followed the general solubility of the crystalline components of the rock. Therefore, Ca, Mg, Fe and Mn were, in that order, the elements that exhibited highest migration, whereas the remaining were seen in negligible levels, except for Ni in the crude pans. The 5% solution favoured migration, whereas curing tended to restrict migration and extend durability of the pan. It is concluded that while cured soapstone pans do not offer mineral toxicity, they may contribute to the mineral nutrition of human beings.

The use of blood and its products requires for the hospital personnel ...working at neonatal care units to be precise and up to date on the indications and complications of total blood, the globular package, albumin, plasma, the concentration of granulocytes, platelets and immunoglobulins for intravenous use. This review gathers, on the one hand, accumulated experiences by the members of the Commission of Blood and its Products from the Pediatric Hospital of the National Medical Center and on the other hand, a selection of the more important concepts which have been judged so by the authors and expressed in the current medical literature.
The prevalence of hypovitaminosis A among children of the peripheral districts of the city of Campinas, S o Paulo, Brazil, was estimated by determining serum retinol levels by High Performance Liquid ...Chromatography (HPLC) in a sample of 131 children aged between three and ten years, between April 1991 and February 1992. A prevalence of 17.6% and retinol concentrations in the range of 0.35 to 0.70 micromol/L were found (CI=11.1-24.1; 95%), indicating the existence of public health risk Ophthalmological examinations, however, failed to detect any cases of xerophthalmy. Additional characterization of the sample was obtained from 341 children. The per capita income of the average household was surprisingly high for low-income areas. According to FAO-WHO standards, food consumption was adequate only for protein (133.96%). Adequacy levels were low for energy (87.76%) and particularly for vitamin A (66.13%) and iron (42.14%). Height for-age and weight-for-height anthropometric indices revealed that many children were located below -1 standard deviation.
