This study was focused on development of a rapid and sensitive method for histamine determination in fish based on Surface Enhanced Raman Spectroscopy (SERS) using simple and widely available silver colloid SERS substrate. Extraction of histamine with 0.4M perchloric acid and purification with 1-butanol significantly shortened sample preparation (30min) and provided clear SERS spectra with characteristic Raman bands of histamine. Principal component analysis effectively distinguished SERS spectra of fish samples with different histamine content. Partial least square (PLS) regression models confirmed reliability of detection and spectral analysis of histamine with SERS. In histamine concentration range 0–200mgkg−1, significant in legislative and fish quality control aspects, PLS regression model based on spectral range 1139.9–1643.7cm−1 showed linear trend with R2pred=0.962, RPD=7.250. Presented protocol for histamine extraction and purification followed by SERS analysis coupled with chemometric approach, enabled development of rapid and inexpensive method for histamine determination in fish.

Chokeberry juice was subjected to cold atmospheric gas phase plasma and changes in hydroxycinnamic acids, flavonols and anthocyanins were monitored. Plasma treatments were carried out under different treatment times and juice volumes under constant gas flow (0.75dm3min−1). The results were compared against control (untreated) and pasteurized chokeberry juice (80°C/2min). During pasteurization, the most unstable were hydroxycinnamic acids with losses of up to 59%, while flavonols and anthocyanins increased by 5% and 9%, respectively. On the contrary, plasma treated chokeberry juice showed higher concentrations of hydroxycinnamic acids and 23% loss of anthocyanins in comparison to untreated juice. In order to obtain the optimal cold plasma treatment parameters principal component and sensitivity analysis were used. Such parameters can be potentially used for pasteurization in terms of phenolic stability of chokeberry juice. Optimal treatment was at 4.1min and sample volume of 3cm3.

The use of mathematical modeling and optimization in nutrition with the help of artificial intelligence is indeed a trendy and promising approach to data processing. With the ever-increasing amount ...of data being generated in the field of nutrition, it has become necessary to develop new tools and techniques to help process and analyze these data. The paper presents a study on the development of a neural-networks-based model to investigate parameters related to obesity and predict participants’ health outcomes. Improvement techniques of model performances are made (classification performance by reducing overfitting, capturing non-linear relationships, and optimizing the learning process). Predictions are also made with the random forest model to compare the performance of accuracy and prediction scores of two different models. The dataset contains data relating to the obesity of 200 participants in a weight loss program. Information is collected on their basic anthropometric data, as well as biochemical data, which are significant parameters closely related to obesity. It is important to note that weight loss is not always linear and can vary based on individual factors; so, a prediction is made on supervised learning based on patient data (before the diet regime, during the regime, and reaching the desired weight). The dataset is trained on individuals features such as age; gender; body mass index; and biochemical attributes such as MCHC (Mean Corpuscular Hemoglobin Concentration), cholesterol, glucose, platelets, leukocytes, ALT (alanine aminotransferase), triglycerides, TSH (thyroid stimulating hormone), and magnesium. The results of the developed neural network model show high accuracy, low loss in training, high-precision predictions during evaluation of the model, and improved performance over other machine learning models. Calculations are conducted in Anaconda/Python. Overall, the combination of mathematical modeling, optimization, and AI offers a powerful set of tools for analyzing and processing nutrition data. As our understanding of the relationship between diet and health continues to evolve, these techniques will become increasingly important for developing personalized dietary recommendations and optimizing population-level dietary guidelines.
Rosemary (
L.) is a Mediterranean medicinal and aromatic plant widely used due to valuable bioactive compounds (BACs) and aromas. The aim of the study was to evaluate the extraction of intracellular ...compounds from rosemary combining experimental procedure by means of high voltage electrical discharge (HVED), with a theoretical approach using two computational simulation methods: conductor-like screening model for real solvents and Hansen solubility parameters. The optimal HVED parameters were as follows: frequency 100 Hz, pulse width 400 ns, gap between electrodes 15 mm, liquid to solid ratio 50 mL/g, voltage 15 and 20 kV for argon, and 20 and 25 kV for nitrogen gas. Green solvents were used, water and ethanol (25% and 50%). The comparison was done with modified conventional extraction (CE) extracted by magnetic stirring and physicochemical analyses of obtained extracts were done. Results showed that HVED extracts in average 2.13-times higher total phenol content compared to CE. Furthermore, nitrogen, longer treatment time and higher voltage enhanced higher yields in HVED extraction. HVED was confirmed to have a high potential for extraction of BACs from rosemary. The computational stimulation methods were confirmed by experimental study, ethanol had higher potential of solubility of BACs and aromas from rosemary compared to water.

Ketogenic diet is often used as diet therapy for certain diseases, among other things, its positive effect related to weight loss is highlighted. Precisely because of the suggestion that KD can help ...with weight loss, visceral obesity, and appetite control, 100 respondents joined the weight loss program (of which 31% were men and 69% were women). The aforementioned respondents were interviewed in order to determine their eating habits, the amount of food consumed, and the time when they consume meals. Basic anthropometric data (body height, body mass, chest, waist, hips, biceps, and thigh circumferences) were also collected, in order to be able to monitor their progress during the different phases of the ketogenic diet. Important information is the expected body mass during the time frame of a certain keto diet phase. This information is important for the nutritionist, medical doctor, as well as for the participant in the reduced diet program; therefore, the model was developed that modified the original equation according to Wishnofsky. The results show that women lost an average of 22.7 kg (average number of days in the program 79.5), and for men the average weight loss was slightly higher, 29.7 kg (with an average of 76.8 days in the program). The prediction of expected body mass by the modified Wishnofsky's equation was extremely well aligned with the experimental values, as shown by the Bland-Altman graph (bias for women 0.021 kg and -0.697 kg for men) and the coefficient of determination of 0.9903. The modification of the Wishnofsky equation further shed light on the importance of controlled energy reduction during the dietetic options of the ketogenic diet.
The foam mat drying process is a simple and economical alternative to spray and freeze drying. It is considerably cheaper due to rapid drying at low temperatures, preservation of nutritional quality ...and easy reconstitution. Basic principle of the process is conversion of a liquid or a semi-liquid foodstuff to foam and thin layer drying of the foam. This study explores the possibility of the foam mat drying for production of instant cocoa powder enriched with lavender (Lavandula × hybrida L.) extracts. The aqueous extraction of lavender was optimized using Taguchi orthogonal array design. Extracts obtained under optimal conditions were added to a mixture of egg white, cocoa powder, sugar and gelatine. Mixtures were blended for 4 min to obtain stable foam which was dried at three different temperatures (t=50, 60 and 70 °C) and milled into a powdered product. Drying rates were obtained from the experimental data using nonlinear model estimation. Flow properties, bulk density, particle size distribution, reconstitution and sensory properties of the final product were also assessed. Based on the obtained data, the drying process was best described by Page’s drying model. Samples dried at lower temperature (t=50 °C) exhibited the best powder flow and reconstitution properties. Sensory analysis resulted in similar findings: powder samples dried at lower temperatures had better appearance, colour and taste. The obtained data confirm the suitability of the foam mat drying for the production of instant cocoa powder enriched with lavender extract.

Antioxidants derived from plants are widely used in dietary supplements and have been investigated for the prevention of diseases such as cancer, coronary heart disease and altitude sickness. In order to obtain the highest possible amount of bioactive compounds from plant material, effective extraction procedures are required. One of the most widely used extraction techniques which requires no toxic chemicals is solid-liquid extraction. Mathematical modelling of solid–liquid extraction processes is an important engineering tool in the design process in order to reduce energy, time and chemical reagents consumption. In agreement with that, the aim of this paper was determination of the best suited kinetic model for description of the solid-liquid extraction of bioactive compounds from Asteraceae family plants. In this study, four most common representatives of Asteraceae family were chosen as subjects: camomile (Matricaria recutita L.), dandelion (Taraxacum officinale Web.), marigold (Calendula officinalis) and yarrow (Achillea millefolium L.). Initial extraction rate, extraction capacity, activation energy, Gibbs energy, enthalpy and entropy were determined for all of the four analysed plants. The highest extraction efficiency of total polyphenols content, antioxidants and extraction yield were achieved at the highest extraction temperature of T=80°C for all four plants used in this study. Obtained results for activation enthalpies indicated that the extraction processes were endothermic and Gibbs free energy of activation indicated that they were endergonic and not spontaneous.

The aim of the study was to evaluate the effect of gas phase plasma on phenolic compounds in pomegranate juice. The potential of near infrared reflectance spectroscopy combined with partial least squares for monitoring the stability of phenolic compounds during plasma treatment was explored, too. Experiments are designed to investigate the effect of plasma operating conditions (treatment time 3, 5, 7min; sample volume 3, 4, 5cm3; gas flow 0.75, 1, 1.25dm3min−1) on phenolic compounds and compared to pasteurized and untreated pomegranate juice. Pasteurization and plasma treatment resulted in total phenolic content increasing by 29.55% and 33.03%, respectively. Principal component analysis and sensitivity analysis outputted the optimal treatment design with plasma that could match the pasteurized sample concerning the phenolic stability (5min/4cm3/0.75dm3min−1). Obtained results demonstrate the potential of near infrared reflectance spectroscopy that can be successfully used to evaluate the quality of pomegranate juice upon plasma treatment considering the phenolic compounds.

In the last twenty years, the application of microreactors in chemical and biochemical industrial processes has increased significantly. The use of microreactor systems ensures efficient process ...intensification due to the excellent heat and mass transfer within the microchannels. Monitoring the concentrations in the microchannels is critical for a better understanding of the physical and chemical processes occurring in micromixers and microreactors. Therefore, there is a growing interest in performing in-line and on-line analyses of chemical and/or biochemical processes. This creates tremendous opportunities for the incorporation of spectroscopic detection techniques into production and processing lines in various industries. In this work, an overview of current applications of ultraviolet–visible, infrared, Raman spectroscopy, NMR, MALDI-TOF-MS, and ESI-MS for monitoring (bio)catalytic processes in continuously operated microreactor systems is presented. The manuscript includes a description of the advantages and disadvantages of the analytical methods listed, with particular emphasis on the chemometric methods used for spectroscopic data analysis.

Obesity stands out as an ongoing pandemic today, and it is crucial to recognize the basic factors that influence it in the observed group and to intervene through lifestyle changes. Therefore, in ...this work, the k ketogenic diet (E = 6280 ± 210 kJ) was used in a weight loss program for two regionally different groups (including 200 participants) from southeastern European countries (Republic of North Macedonia (n = 100) and Kosovo (n = 100)). The applied data analysis revealed similarities and differences in (ii) the consumption of certain food groups (e.g., 0.5–1 kg Nuts/week; in region 1 is consumed by 11.3% of participants while in region 2 by 37.8%, respectively) and (ii) anthropometric indicators of excess body mass (body mass index and waist-to-hip ratio). Nutritional intervention with a ketogenic diet also reduces the intake of sweet and salty snacks that are rich in carbohydrates. The average expected time to reach the target body mass was 112 days, and the results of the progress of all participants were presented after 120 days. The results show regional differences, especially in women; in group 1, 73.91% achieved a body mass index in the healthy range (<25 kg/m2), while in group 2, the success rate was 81.69%. Understanding the different eating habits in the mentioned regions is key here, and it was shown that in region 2, over 40% of the participants consume 500–1000 g of seeds per week. The above indicates that the results of this study and regional differences can be considered when designing strategies and intervention programs in the lifestyle of overweight and obese people in similar environments. The study also shows that the ketogenic diet is one of the useful dietary intervention approaches used to change eating habits that will show results relatively quickly.
