Celem pracy było porównanie fizykochemicznych i sensorycznych cech jakości mięsa kogutów i kapłonów. Badaniami objęto 80 kogutków Sussex (S-66), które przydzielono losowo do dwóch grup po 40 sztuk w ...każdej. Grupę I stanowiły kogutki niekastrowane, natomiast grupę II ptaki, które w 9. tygodniu życia poddano kastracji. Ptaki żywiono ad libitum jednakowymi mieszankami paszowymi i utrzymywano na ściółce w optymalnych warunkach środowiskowych przy obsadzie 7 szt./m2. Po zakończeniu tuczu, tj. w 24. tygodniu życia z każdej grupy wybrano do uboju po 8 ptaków o masie ciała zbliżonej do średniej w grupie. Po uboju określono wydajność rzeźną ocenianych ptaków i parametry technologiczne mięsa, przeprowadzono ocenę chemiczną oraz sensoryczną mięśni piersiowych i mięśni nóg. Na podstawie uzyskanych wyników stwierdzono, że kapłony rasy Sussex (S-66) w porównaniu z kogutami niekastrowanymi wyróżniały się większą masą ciała i wydajnością rzeźną oraz większym umięśnieniem tuszki. Mięśnie piersiowe i mięśnie nóg kapłonów cechowały się większą kruchością oraz zdolnością do utrzymywania wody. Ponadto zabieg kastracji wpłynął pozytywnie na zawartość białka ogółem zarówno w mięśniach piersiowych, jak i w mięśniach nóg, które z kolei przy większej zawartości tłuszczu surowego wyróżniały się wyższymi notami w ocenie sensorycznej w porównaniu z kogutami niekastrowanymi. Mięso kapłonów S-66 stanowi produkt o specyficznej wyższej jakości, a kapłonowanie może przyczynić się do zagospodarowania kogutków, które stanowią odpad przy produkcji kur nieśnych.

The present article studies the place of the chicken within the changing ...environment of late-medieval England. First, it looks at the seigniorial sector of chicken farming, in terms of size of stocks, patterns of disposal and scale of consumption. It then explores the patchy data regarding the peasant sector. The study shows that overall patterns differed between the pre- and post-Black Death periods. After the pestilence, chicken husbandry started shifting from the demesne to the peasant sector of agriculture. The post-1350 changes reflect larger processes, which occurred in late-medieval society, economy and environment.
Vingt huit chapons et vingt coqs de la race Penedesenca Negra ont été élevés sur parcours et abattus à l'âge de 28 semaines. Le chaponnage des poulets a été réalisé à deux âges différents : 4 ou 8 ...semaines. Après l'abattage, les morceaux (aile, pilon, cuisse et filet) correspondant à la moitié gauche de la carcasse ont été prélevés et disséqués en séparant la peau, le tissu adipeux sous-cutané, le tissu adipeux intermusculaire, les muscles, les os et les tendons. Par comparaison avec les coqs abattus au même âge ou de même poids, les chapons présentent une quantité de gras abdominal sous-cutané et intermusculaire plus élevée. Le poids de leur filet est également supérieur. En revanche, leur rendement en carcasse est inférieur. L'âge au chaponnage n'a pas d'effet sur le rendement à la découpe, ni sur la composition tissulaire de la carcasse

A surgical procedure was developed for caponising turkey toms. This operation consisted of making a 3 cm-long incision on each side immediately caudal to the last rib; widening the incision with a ...Gelpi retractor, teasing the tough mesorchium from the testicle, removing the testicle with a Brown-Adison forceps and suturing the incision with catgut. A combination of ketamine and xylazine given intravenously produced a satisfactory level of anaesthesia. The principal surgical problem was the thin blood vessels adjacent to the testicles in the turkey which could be easily ruptured.
