Sekundarni metaboliti pri proizvodnji jabolčnega kisa : diplomska naloga = Secondary metabolits in cider vinegar production : graduation thesisBoscarol, MatejMed proizvodnjo jabolřnega kisa po klasiřnem postopku smo zasledovali tvorbo in razgradnjo nekaterih snovi, ki so prisotne v kisu. Ugotavljali smo dinamikonastanka sekundarnih metabolitov in kako je ... surovina odgovorna za nastanek le-teh. Proizvodnja jabolřnega kisa je bila izvedena v 50 litrskem steklenem balonu. Vzorce smo jemali 2-krat tedensko tekom celotne fermentacijein v njih s pomořjo plinske kromatografije dolořali koncentracijo acetaldehida, etil acetata, metanola, etanola, 1-propanola, izobutanola, izoamil alkohola, acetoina in 2-fenil etanola. S HPLC smo dolořali vsebnost jabolřne, jantarne, mleřne in ocetne kisline. Koncentracijo D-glukonske kisline smo dolořali z encimsko analizo. Spremljali smo Ǵtevilo mikroorganizmov med fermentacijo; skupno Ǵtevilo kvasovk in plesni, ocetno kislinske in mleřno kislinske bakterije. Kot stranski produkt ocetno kislinskefermentacije smo dolořili acetoin, viǴje alkohole, mleřno in jantarno kislino. Ostali morebitni sekundarni metaboliti so bili v premajhnih koncentracijah, da bi jih lahko zaznali z razpoloÍljivimi analitskimi tehnikami.Type of material - undergraduate thesis ; adult, seriousPublication and manufacture - Ljubljana : [BF, Oddelek za živilstvo] : [M.
