Po taksonomski razdelitvi pripadajo čiste kulture vinskih ... kvasovk vrsti ▫{\sl Saccharomyces cerevisiae}▫, vendar se posamezni sevi med seboj razlikujejo po svojih lastnostih pri proizvodnji vina. Flokulacija, ki so jo obsežno proučevali na pivskih kvasovkah, je le ena izmed značilnosti vinskih kvasovk, ki vpliva na proizvodnjo vina in končno kakovost. Proučevanje flokulacije je bilo usmerjeno na reakcije med površino celic in kationi v okolici. Vpliv šestih gojišč in rastnih pogojev smo spremljali z uporabo novega analitičnega sistema. Sposobnost flokulacije ▫{\sl in vivo}▫ med rastjo 151 izolatov vinskih kvasovk smo določili z uporabo dveh metod: a) z vizualno oceno in b) zdirektno dinamično sedimentacijsko metodo (DDS Floc Method). Zbrani rezultati različnih gojišč in rastnih pogojev kažejo podobnosti s pivskimi kvasovkami. Sposobnost flokulacije vinskih kvasovk, ki začnejo s spontano alkoholno fermentacijo, ni redkost, saj je bilo kar 5-27% izolatov ocenjenih kot flokulanti. Poleg tega smo proučili tudi dodatek kalcijevega iona ob koncukultivacije in njegov vpliv na flokulacijo. Sevi so pokazali tako različne stopnje flokulacije kakor tudi spremenljivo kinetiko flokulacije med rastjo. Ugotovili smo, da je bila flokulacija intenzivnejša in pogostejša v gojiščih s kompleksnejšo sestavo.Type of material - master's thesisPublication and manufacture - Ljubljana : [T.
