    The increasing interest in powerful biological activity of plant phenolics and flavonoids outlined the necessary of determining their content in different natural sources. Family Apiaceae are known ... to accumulate bioactive compounds, for this reason parsley was chosen for our study. The content of total phenols (according to the Folin-Ciocalteu procedure) and total flavonoids was determinate by UV spectrophotometry method. The study showed that content of active compounds in parsley leaves extracts is dependent on the temperature of extraction and the applied solvent. The results showed that the largest amount of polyphenols was extracted with 35 % acetone and 60 % ethanol at solvent boiling temperature.
