    The interest in gastronomy identity of particular EU countries has become more and more prominent in the contemporary world. The notion of gastronomy heritage which includes national, local, ... regional, traditional and ethnic food has become very noticable.The importance given to regional and local cuisines as a reflection of gastronomic identity and heritage is the reaction to the process of globalization. Regional and local cuisines, formerly national cuisines, enable the display of differences, typicality and uniqueness. The cuisine reflects the everyday life, holidays and the life style in certain periods of history or nowadays. Particular dishes taken together help us form an image of a region regarding its history, location and social factors. The paper deals with gastronomic identity in Europe and the world, i.e. the trend of rediscovering traditional dishes, along with the discovery of Slovenian gastronomy and culinary heritage.
