  • Economic importance of bovine carcass grading in Slovenia acording to "EUROP" system

    Data on veal calves and beef production of young cattle between 1985 and 1996 were analyzed in Slovenia. The number of slaughtered calves doubled, and decreased for 40% in that period of young ... cattle. In the meantime carcass weight of calves and young cattle as well, increased. So the production of veal more than doubled, and the production of beef decreased for 32%. The distribution of carcasses between market classes according to JUS standard was not normal and this was overcome with the introduction of new Slovenian bovine carcass grading standard. Most of the carcasses of young cattle (44%) were graded according to EUROP system into class 3, folllowed by class 2 (38%), and class 4 (12%). Into class 1 only 4% of carcasses were graded and into class 5 and 6 less than 1%. Heavier carcasses from calves, and young cattle as well, were better graded.
