The origins of bread have long been associated with the emergence of agriculture and cereal domestication during the Neolithic in southwest Asia. In this study we analyze a total of 24 charred food ...remains from Shubayqa 1, a Natufian hunter-gatherer site located in northeastern Jordan and dated to 14.6–11.6 ka cal BP. Our finds provide empirical data to demonstrate that the preparation and consumption of bread-like products predated the emergence of agriculture by at least 4,000 years. The interdisciplinary analyses indicate the use of some of the “founder crops” of southwest Asian agriculture (e.g., Triticum boeoticum, wild einkorn) and root foods (e.g., Bolboschoenus glaucus, club-rush tubers) to produce flat bread-like products. The available archaeobotanical evidence for the Natufian period indicates that cereal exploitation was not common during this time, and it is most likely that cereal-based meals like bread become staples only when agriculture was firmly established.
Recent studies have broadened our knowledge regarding the origins of agriculture in southwest Asia by highlighting the multiregional and protracted nature of plant domestication. However, there have ...been few archaeobotanical data to examine whether the early adoption of wild cereal cultivation and the subsequent appearance of domesticated-type cereals occurred in parallel across southwest Asia, or if chronological differences existed between regions. The evaluation of the available archaeobotanical evidence indicates that during Pre-Pottery Neolithic A (PPNA) cultivation of wild cereal species was common in regions such as the southern-central Levant and the Upper Euphrates area, but the plant-based subsistence in the eastern Fertile Crescent (southeast Turkey, Iran, and Iraq) focused on the exploitation of plants such as legumes, goatgrass, fruits, and nuts. Around 10.7–10.2 ka Cal BP (early Pre-Pottery Neolithic B), the predominant exploitation of cereals continued in the southern-central Levant and is correlated with the appearance of significant proportions (∼30%) of domesticated-type cereal chaff in the archaeobotanical record. In the eastern Fertile Crescent exploitation of legumes, fruits, nuts, and grasses continued, and in the Euphrates legumes predominated. In these two regions domesticated-type cereal chaff (>10%) is not identified until themiddle and late Pre-Pottery Neolithic B (10.2–8.3 ka Cal BP). We propose that the cultivation of wild and domesticated cereals developed at different times across southwest Asia and was conditioned by the regionally diverse plant-based subsistence strategies adopted by Pre-Pottery Neolithic groups.

Here we report on the recent ...excavations at Asiab, Kermanshah province, Iran, and argue that the principal feature found during Robert Braidwood’s excavation at the site in 1960 should be interpreted as an example of a communal building. We discuss the results of the previous and recent excavations, highlight the key features of this building, and the implications for our understanding of the early Neolithic in the ‘eastern wing’ of the Fertile Crescent.

The identification is based on morphological analyses of modern and archaeological material from several grass species and was first achieved with well-preserved specimens from Early Neolithic Chogha Golan, Iran. We further examined the Triticoid-type grains from recently excavated samples from Early Neolithic Ganj Dareh, Iran, and archived samples from Late Chalcolithic and Late Bronze Age Tell Brak in northeast Syria, confirming their identification as
H. piliferum
. Based on the study of herbarium specimens at Royal Botanic Gardens Kew, London, we provide a detailed distribution map and review the species’ biology and ecological adaptations. Previous archaeobotanical research in Southwest Asia focused on the Neolithic ‘founder crops’. The Founders project revisits this concept and the economic role these species played in the development ...of agriculture. To achieve this aim, archaeological food remains are studied and culinary practices of the last hunter-gatherers and first farmers are evaluated.
Zohary and Hopf coined the term ‘founder crops’ to refer to a specific group of eight plants, namely three cereals (einkorn, emmer and barley), four legumes (lentil, pea, bitter vetch and chickpea), ...and a fibre/oil crop (flax), that founded early Neolithic agriculture in southwest Asia. Zohary considered these taxa as the first cultivated and domesticated species, as well as those that agricultural communities exploited and eventually spread to Europe and other regions. As a result, these eight species soon become the hallmark of the Neolithic plant-based subsistence. However, the ‘founder crops’ concept was defined at the end of the 1980s, when the development of agriculture was considered a rapid event, and therefore, terms like domestication, agriculture and plant cultivation were used interchangeably in the literature. The aim of this paper is thus to revisit concept of the ‘Neolithic founder crops’. Through a critical review of the archaeobotanical evidence gathered in the last 40 years, we evaluate the relative contribution of the ‘eight founder crop’ species to the plant-based subsistence across different periods of the southwest Asian Neolithic. We conclude that multiple groups of ‘founder’ species could be defined depending on whether one seeks to represent the most exploited plants of the Neolithic period, the first cultivated and domesticated crops, or the species that agricultural communities cultivated and eventually spread to Europe. Improved understanding of Neolithic plant-based subsistence in general, and agriculture in particular, will be attained by moving beyond conventional narratives and exploring the evolutionary history of plants other than the original ‘founder’ species.
The Late Epipalaeolithic Natufian (~14,600 - 11,500 cal BP) is a key period in the prehistory of southwest Asia. Often described as a complex hunting and gathering society with increased sedentism, ...intensive plant exploitation and associated with an increase in artistic and symbolic material culture, it is positioned between the earlier Upper- and Epi-Palaeolithic and the early Neolithic, when plant cultivation and subsequently animal domestication began. The Natufian has thus often been seen as a necessary pre-adaptation for the emergence of Neolithic economies in southwest Asia. Previous work has pointed to the Mediterranean woodland zone of the southern Levant as the 'core zone' of the Early Natufian. Here we present a new sequence of 27 AMS radiocarbon dates from the Natufian site Shubayqa 1 in northeast Jordan. The results suggest that the site was occupied intermittently between ~14,600 - 12,000 cal BP. The dates indicate the Natufian emerged just as early in eastern Jordan as it did in the Mediterranean woodland zone. This suggests that the origins and development of the Natufian were not tied to the ecological conditions of the Mediterranean woodlands, and that the evolution of this hunting and gathering society was more complex and heterogeneous than previously thought.
Shubayqa 1 is a newly identified early and late Natufian site in the harra desert of northeastern Jordan. In addition to buildings, and rich chipped stone, faunal, and botanical assemblages, the site ...has produced a large collection of ground stone tools. This paper presents the result of a preliminary study of the ground stone artefacts associated with the late Natufian phase. Results indicate that while the assemblage is overall very similar to other Natufian sites in the Mediterranean zone, there are also some notable differences. Although grinding rather than pounding tools appear to be more important at the site, many tools were seemingly involved in both grinding and pounding activities. We hypothesize that this dual function could be explained by the processing of rhizome tubers, which were found in abundance at the site, and which may have represented an important food source for the inhabitants. In addition, we argue that the relationship between ground stone tools and cereal processing has been overemphasized and the processing of other plant food resources, in this case tubers could have been equally significant. While the processing of plant foods was one function, many tools are also associated with pigment stains, suggesting that they were involved in the processing of non-vegetal matter.
The Natufian culture (c. 14.6–11.5 ka cal. BP) represents the last hunter-gatherer society that inhabited southwest Asia before the development of plant food production. It has long been suggested ...that Natufians based their economy on the exploitation of the wild ancestors of the Neolithic “founder crops”, and that these hunter-gatherers were therefore on the “threshold to agriculture”. In this work we review the available data on Natufian plant exploitation and we report new archaeobotanical evidence from Shubayqa 1, a Natufian site located in northeastern Jordan (14.6–11.5 ka cal. BP). Shubayqa 1 has produced an exceptionally large plant assemblage, including direct evidence for the continuous exploitation of club-rush tubers (often regarded as “missing foods”) and other wild plants, which were probably used as food, fuel and building materials. Taking together this data we evaluate the composition of archaeobotanical assemblages (plant macroremains) from the Natufian to the Early Pre-Pottery Neolithic B (EPPNB). Natufian assemblages comprise large proportions of non-founder plant species (>90% on average), amongst which sedges, small-seeded grasses and legumes, and fruits and nuts predominate. During the Pre-Pottery Neolithic, in particular the EPPNB, the presence of “founder crops” increases dramatically and constitute up to c. 42% of the archaeobotanical assemblages on average. Our results suggest that plant exploitation strategies during the Natufian were very different from those attested during subsequent Neolithic periods. We argue that historically driven interpretations of the archaeological record have over-emphasized the role of the wild ancestors of domesticated crops previous to the emergence of agriculture.
