La disminución del valor comercial del frijol por almacenamiento, se debe a la disminución de la calidad culinaria y al oscurecimiento de la testa. El objetivo de este trabajo fue estudiar los ...cambios en el color de la testa y en la calidad culinaria promovidos por el almacenamiento prolongado en dos períodos de tiempo, en contraste con el cambio bajo envejecimiento acelerado en cinco variedades de frijol. El color del grano se cuantificó por espectrofotometría de reflectancia y la calidad culinaria por el tiempo y los sólidos en el caldo de cocción. El envejecimiento acelerado propició “dureza a la cocción”, pero no testa dura, por el contrario el almacenamiento prolongado a temperatura ambiente, si bien no promovió dureza a la cocción, una de las cinco variedades mostró testa dura. El oscurecimiento de la testa mostró una correlación positiva entre todas las condiciones de almacenamiento. La correlación para L* entre el envejecimiento acelerado y el almacenado por cuatro años fue de r= 0.84**, en tanto que la relación del primero, con dos años de almacenamiento fue de r= 0.65*. Estos resultados indican que el envejecimiento acelerado del frijol, es un método adecuado para seleccionar materiales con menor propensión al envejecimiento porque permite anticipar el cambio de color que podría ocurrir durante el almacenamiento prolongado.

To understand the biochemical events that control the generation of superoxide, the effect of inhibiting the respiratory complexes III and IV (C-III and C-IV) and alternative oxidase (AOX) on the ...rate of superoxide production was analyzed in mitochondria from maize seedlings. To increase superoxide production, it was required to inhibit C-III or C-IV by at least 30% or 50%, respectively. Below this inhibition threshold, AOX exerted the highest degree of control on superoxide production, whereas above it, the highest degree of control was exerted by C-IV. The contribution of C-III to control superoxide production became significant when AOX activity was modulated.

The shape of seed mortality curves in dry storage, and the dynamics of seed ageing are discussed as they help to define the rate-controlling processes. Emphasis is placed on distinguishing between ...two types of survival curves: those which show an initial period of relative stability preceding a dynamic rate of cumulative mortality, and those in which an initial period of relative stability is lacking. The fact that the survival curves had to be modelled separately for the initial plateu phase and for the sigmoid phase, support the contention that there are two phases of seed ageing. The factors operating in these two sectors are discussed and the glassy state in seeds is suggested to serve as a stabilizer, particularly as it may contribute to the period of relative stability. The rapid progress of deterioration during the dynamic period may represent a weakening of the glassy state, combined with a facile hydrolysis of sugar components and the unleashing of an array of oxidative processes. A recognition of the distinction between the period of relative stability and the period of dynamic deterioration may provide new insights about seed longevity and deterioration.
En nuestro país, gran parte de la población particularmente en las zonas rurales padece desnutrición, una alternativa para disminuir el elevado índice se desnutrición es mejorar el valor nutrimental ...de los alimentos tradicionales aprovechando los productos vegetales que brindan proteína de bajo costo. El pinole, es un alimento tradicional de México, generalmente elaborado de harina de maíz tostado a veces endulzada y mezclada con cacao, canela o anís. Debido a su ingrediente principal, los pinoles tradicionalmente muestran deficiencia en aminoácidos esenciales, lo que limita su calidad proteínica. Con la finalidad de obtener un pinole de alta calidad proteínica, se elaboraron combinaciones de cereales y leguminosas que incluyeron maíz (Zea mays L.), amaranto (Amaranthus hypochondriacus L.), arroz (Oriza sativa L.), cebada desnuda (Hordeum vulgare L.), frijol (Phaseolus vulgaris L.), garbanzo (Cicer arietinum L.), haba (Vicia faba L.), lenteja (Lens esculenta Moench). Mediante evaluaciones sensoriales se seleccionaron las combinaciones más aceptables. Se realizó un análisis químico proximal de las harinas tostadas, y se determinó el perfil de aminoácidos esenciales, inhibidores de tripsina y digestibilidad in vitro de la proteína. Los pinoles de alta calidad proteínica, de composición: 35-20-40-5 (maíz-amaranto-garbanzo-haba); 35-20-40-5 y 30-20-40-10 (maíz-amaranto-garbanzo-lenteja), sobresalieron en aspectos importantes tales como: mayor cantidad, calidad y digestibilidad de su proteína, así como mayor o similar aceptabilidad en comparación con el pinole de maíz. Este producto es una excelente fuente de proteína, viable para incluirse en la dieta de la población mexicana y posiblemente de otras regiones de Latinoamérica.
Cooking time is an important trait in the breeding of common beans (Phaseolus vulgaris L.), especially in Mexico where 96% of beans consumed are prepared in the household. Because of the ...characteristics of the cooking time trait, a method of indirect selection would increase selection efficiency. The objective of this study was to identify random amplified polymorphic DNA (RAPD) markers associated with the trait and estimate genetic parameters of cooking time. For that purpose, 104 recombinant inbred lines (RILs), derived from contrasting cooking time bean cultivars were evaluated for three consecutive generations (F5 to F8). In each generation, cooking time was determined and plants in the F7 generation were genotyped. One marker was associated with cooking time. The polymorphic UNAM-16 of 310 base pairs (bp) explained 23% of the variation in cooking time of the lines studied. Narrow sense heritability (h2) was estimated for cooking time, as was the number of genes involved in the trait. A high value of h2 (0.74) was estimated for cooking time. Also, it was estimated that two genes control the cooking time trait.
México cuenta con un vasto acervo de germoplasma nativo de frijol; sin embargo, para poder utilizarlo se requiere conocer los atributos de los genotipos, tanto agronómicos, como de calidad comercial ...y nutrimental del grano. El objetivo de este estudio fue caracterizar, con base a la calidad culinaria y de proteína, a 65 genotipos nativos de frijol. Se determinó el color, brillo, forma y tamaño, y se evaluó la calidad culinaria, contenido y digestibilidad in vitro de la proteína del grano. Por el color de la testa se identificaron 16 grupos, llamados "tipos", la mayoría con testa brillante. En los genotipos predominó la forma arriñonada del grano. Se observó gran diversidad de tamaño (volumen de grano), directamente relacionado con el peso (r= 0.96**). Los genotipos presentaron tiempos de cocción entre 43 a 81 min, lo cual se cual se considera de rápida cocción. Se advirtieron diferencias significativas en el espesor del caldo, con un intervalo entre 0.22% y 0.5 8 %. El genotipo de mayor tamaño y que también mostró mayor tiempo de cocción y caldo más espeso fue Cacahuate. El contenido de proteína varió desde 16.0% (tipo Ojo de Cabra) hasta 26.9% (tipo Negro). En promedio la digestibilidad in vitro de la proteína, fue superior a 84%. No se observó asociación entre el contenido y la digestibilidad in vitro de la proteína. El germoplasma estudiado mostró amplias diferencias en los parámetros de calidad, lo cual permitió afirmar que se puede aprovecharlo para obtener mejores variedades.
With the aim of determining the level at which ageing exerts its effect on the expression of α-amylase, GA3 regulation of α-amylase production was studied in isolated aleurone layers from aged wheat ...seeds. GA3-induced α-amylase activity was lower in the tissue from aged seeds than in controls. However, the proportion of 35S-methionine incorporated into α-amylase was higher in the aged than in control tissue. The pattern of α-amylase isoforms was resolved by isoelectric focusing and showed that two isogroups were present with the activity of the high-pl isogroup being higher in the control than in the aged lot. These apparently contradictory results may be explained in terms of differences in isozyme expression. Studies on the expression of α-amylase genes indicated a reduction in the level of high-pl mRNA in aged tissue. Doseresponse curves showed lower GA3-responsiveness of aleurone layers from aged seeds as compared to the controls. From these results, it is proposed that the diminished capacity of α-amylase production in aleurone from aged seeds is apparently due to a decrease in the expression of the high-pl α-amylase genes, and this reduction is associated with a decrease in the response to GA3.
