Comminuted meat products are highly susceptible to safety and quality degradation partly because of their large interfacial area in the emulsion. The food industry extensively uses synthetic chemical ...preservatives to delay that degradation which is caused by microbial growth, enzyme activities and oxidation reactions. However, due to the potential health damage (e.g., cardiovascular diseases, neurodegenerative diseases, cancers among others) synthetic preservatives in meat may cause, consumers are becoming skeptical to buy meat products containing such additives. In the meat industry, the interest of finding natural food preservatives is intensifying. Polyphenolic-rich plants used as natural food preservatives offer the best alternative for a partial or a complete replacement of their synthetic counterparts. They can be extracted from natural sources such as olives, fruits, grapes, vegetables, spices, herbs, and algae, and among others. The common feature of these phenolic compounds is that they have one or more aromatic rings with one or more -OH group which are essential for their antimicrobial and antioxidant properties. This review article is intended to provide an overview of the plant-based phenolic molecules used as natural food preservative, their antimicrobial and antioxidant mechanism of action, and their potential application in comminuted meat.
Raw beef patties were treated with either 450 ppm of Sodium metabisulphite (SMB), or Kakadu plum powder (KPP) (0.2%, 0.4%, 0.6%, 0.8%) or no additive (negative control) and stored under Modified ...Atmosphere Packaging at 4 ± 1 °C for 20 days. Lipid oxidation, microbial growth rate, pH, instrumental color, and surface myoglobin were studied. Total phenolic compounds (TPC) and vitamin C of the KPP were also measured. The TPC was 13.9 g GAE/ 100 g dry weight (DW) and for vitamin C, the L-AA (l-ascorbic acid) and DHAA (dehydroascorbic acid) were 12.05 g/100 g and 0.5 g/ 100 g DW, respectively. The experimental results indicated that lipid oxidation was significantly delayed throughout the storage period for KPP-treated samples compared to both the negative control and SMB-treated samples. KPP at levels of 0.2% and 0.4% in the raw beef patties were efficient in slowing down the microbial growth rate compared to the negative control; however, SMB had a higher antimicrobial activity. The pH, the redness as well as metmyoglobin formation in the raw beef patties were reduced by the inclusion of the KPP in treated samples. A correlation (r = −0.66) was noted between KPP treatments and lipid oxidation, but there was no correlation (r = −0.006) between KPP treatment and microbial growth. This study demonstrates that KPP could be used as natural preservative for shelf-life extension of raw beef patties.

This study evaluated the preserving effect of Davidson's plum (Davidsonia pruriens) fruit powder (DPP) in raw beef patties. Minced meat patties were treated with no additive (negative control), ...45 mg/hg of Sodium metabisulphite (SMB), or DPP (0.2, 0.4, 0.6 and 0.8 g/hg) and stored for 20 days at 4 ± 1 °C. Lipid oxidation, microbial growth rate, pH, instrumental color were studied. Bioactive compounds of the DPP were analysed using UHPLC–HRAM-Orbitrap-MS/MS. The results showed that DPP contained high concentration of both anthocyanins and non-anthocyanins compounds. Furthermore, the beef patties treated with DPP exhibited reduced lipid oxidation (p<0.05) in comparison to beef patties with no added preservative. Moreover, the addition of DPP at concentration equal to or greater than 0.2 g/hg slowed down microbial growth (p<0.05) compared to raw beef patties with no preservative added. However, SMB-treated samples had the greatest antimicrobial activities in comparison to all other treatments. The inclusion of DPP led to reduced redness and pH of treated raw beef patties. This study provides evidence that Davidson's plum fruit can be used as natural preservative in raw processed meat.

We present an integrated information system needed to address the climate-water-migration-conflict nexus in the Congo Basin. It is based on a rigorous and multidisciplinary methodological approach ...that consists of designing appropriate tools for field surveys and data collection campaigns, data analysis, creating a statistical database and creating a web interface with the aim to make this information system publicly available for users and stakeholders. The information system developed is a structured and organized set of quantitative and qualitative data on the climate-water-migration-conflict nexus and gender, consisting of primary data collected during field surveys. It contains 250 aggregated variables or 575 disaggregated variables, all grouped into 15 thematic areas, including identification; socio-demographic characteristics; access to resources; perception of climate change; perception of migration; financial inclusion (savings, access to credit and circulation of money); domination and control on water resources, land ownership and property rights, conflict resolution and community resilience; water uses; vulnerability to climate change; housing, household assets and household expenditure; food security; health, hygiene and sanitation; environmental risk management; women’s economic autonomy; and water transfer from the Congo Basin to Lake Chad. The information system can be used to model and understand the interface of human-environment interactions, and develop scenarios necessary to address the challenges of climate change and resilient development, while supporting key policy areas and strategies to foster effective stakeholder participation to ensure management and governance of climate and natural resources in the Congo Basin.
Les auteurs rapportent un cas d'hydrops fetalis diagnostiqué et pris en charge aux Cliniques Universitaires de Lubumbashi en République Démocratique du Congo. L'échographie réalisée avait ...diagnostiqué une mort fetale in utero avec anasarque foeto-placentaire et le bilan étiologique réalisé avait révélé la toxoplasmose maternelle. Ce cas clinique rappelle l'impact de la morbi-mortalité fetale de la toxoplasmose pendant la grossesse et plaide pour l'intégration de son dépistage systématique chez les femmes enceintes congolaises.
Ce numéro de Méditerranée interroge la diversité des relations actuelles entre les sociétés méditerranéennes et les différents milieux humides qui occupent un grand nombre d’espaces littoraux. Cette ...réflexion apparaît comme opportune à un moment où les enjeux de gestion entourant les zones humides littorales se trouvent à la croisée de changements écologiques, hydro-climatiques et géomorphologiques rapides et inédits liés aux activités anthropiques et de bouleversements géopolitiques régionaux récents. L’importance de ces écosystèmes est écologique, économique mais également historique et scientifique. Si les lagunes ont une forte valeur économique et tiennent une place notable dans l’histoire des rivages méditerranéens, les marais maritimes ont eux un intérêt pour la reconstitution des paléo-milieux grâce aux indicateurs qu’ils peuvent offrir pour la connaissance de l’évolution récente des rivages ainsi que pour les approches prospectives dans une conjoncture d’élévation du niveau marin. Les contributions rassemblées concernent principalement les pays du Maghreb, mais également une région plus rarement étudiée telle que le littoral Albanais. Les thèmes abordés sont relatifs à l’évolution des paléopaysages côtiers ainsi qu’aux impacts anthropiques actuels que subissent les zones humides littorales mais ils mettent aussi en évidence le rôle que peuvent jouer ces milieux dans les économies locales.
