Cultured cells induced from Perilla frutescens leaves were cultured in a 100l jar fermentor, then the Perilla pigment was extracted from the cell cultures as food colors, and examined for their color ...tone, heat and light stabilities and safety. These properties and safety of the pigment from cultured cells were almost similar to those of the pigment from Perilla leaves. Dessert jelly and beverage colored with the pigment suggest that the pigment from cultured cells may be allowed to be used as food colors. However, for practical application of the pigment as food colors, there are still problems to be solved, such as stable productivity of the pigment, residual synthetic phytohormones, metals and salts, and safety.
