Produk pangan yang dikehendaki oleh masyarakat modern tidak hanya mempertimbangkan unsur pemenuhan gizi, akan tetapi juga harus praktis, cepat saji, tahan lama dan tidak memerlukan tempat atau ruang ...penyimpanan yang lebih besar. Perubahan gaya hidup yang serba cepat tersebut menuntut tersedianya sayuran instan seperti sayuran kering dengan kandungan gizi yang relatif tidak berubah dari bentuk segarnya. Hasil penelitian menunjukkan bahwa konsentrasi karagenan berpengaruh nyata (α = 0.05) terhadap kadar air, total karoten, rendemen, derajat kecerahan, derajat kemerahan, derajat kekuningan, tekstur dan daya rehidrasi wortel kering. Suhu pengeringan berpengaruh nyata (α = 0.05) terhadap kadar air, total karoten, rendemen, derajat kecerahan, derajat kemerahan, derajat kekuningan, tekstur dan daya rehidrasi wortel kering. Sedangkan perlakuan terbaik sesuai perhitungan metode multiple attribute wortel kering dengan perlakuan konsentrasi karagenan 1% dan suhu pengeringan 40ºC.
Calendula officinalis (pot marigold), a medicinal ornamental plant belonging to the Asteraceae family, has various medicinal activities such as anticancer, antimicrobial, antioxidant and antitumor. ...The retention time of quercetin (6.445 min), kaempferol (11.246 min), caffeic acid (2.333 min), beta carotene (9.614 min) standards, which were planned to be analyzed by HPLC, was determined. The HPLC conditions that are most suitable for these metabolites have been determined. The amounts of quercetin, kaempferol, caffeic acid and beta carotene in the seedling leaves of these two Calendula species on the 0., 15., 30., 45., 60. days were compared. Caffeic acid and beta carotene have been detected in the leaves. However, quercetin and kaempferol compounds were not detected. It was determined that the caffeic acid and beta carotene amounts of C. officinalis species were higher than that of C. arvensis. The highest caffeic acid in both C. officinalis and C. arvensis seedlings (0.4042±0.0123 µg/g dry weight for C. officinalis, 0.1918±0.0437 µg / g dry weight for C. arvensis) and beta carotene amounts (0.8520±0.0692 µg/g dry weight for C. officinalis, 0.6389±0.0189 µg/g dry weight for C. arvensis) were determined on 60. day. In addition, it was determined that the amount of these metabolites differed according to the seedling development period.

Alkylpehnol polyethoxylates (APEOs) and the derivatives of APEOs such as nonylphenol (NP) are generally used as anti-oxidants in many organic compounds including detergents, herbicides and ...pesticides. In this study, NP effects on growth, egg production and hatching in Japanese quails were investigated. Also, NP effects on plasma vitamin levels and malondialdehyde (MDA) were determined. NP does not affect body weight gain (BWG), feed consumption (FC) and feed conversion ratio for growth (FCRG) in all experimental groups in growing chicks, while it cause a significant decrease in egg production (EP) (P< 0.01). Also, the present study showed that NP concentrations, 10, 100 and 500 μg NP in ethanol (ETOH)/kg-feed, exposure cause an increase in β-Carotene, Vitamin A and MDA levels (P< 0.01). There is also significant rise in Vitamin C level induced by NP in all experimental groups (P< 0.01). In conclusion, NP has dramatic effects on EP rate and anti-oxidant system in a concentration dependent manner in Japanese quails.
Alkilfenol polietoksilatlar (AFEO) bileşikleri ve nonilfenol (NF) gibi AFEO türevleri, deterjanlar, ot ve böcek ilaçlarını da içeren pek çok organik bileşikte, genellikle antioksidan olarak kullanılmaktadır. Bu çalışmada, Japon Bıldırcınlarında büyüme, yumurta üretimi ve kuluçka randımanı üzerine nonilfenol etkileri araştırıldı. Ayrıca, nonilfenolün plazma vitamin düzeyleri ve malondialdehit (MDA) üzerine etkileri belirlendi. NF büyüme dönemindeki tüm deney guruplarında canlı ağırlık artışı (BWG) ve yemden yararlanma oranını (FCRG) etkilemezken, yumurta üretiminde önemli bir azalmaya neden olmaktadır (P< 0.01). Ayrıca, bu çalışmada etanolde çözünen nonilfenolün 10, 100 ve 500 μg NP/kg-yem konsantrasyonları β-Karoten, Vitamin A ve MDA düzeylerinde bir artışa sebep olduğu (P< 0.01) gözlenmiştir. Tüm deney gruplarındaki NF, Vitamin C düzeyinde önemli bir artışa neden olmaktadır. Sonuç olarak, konsantrasyona bağlı olarak NF Japon bıldırcınlarında EP oranını ve antioksidan sistemi dramatik bir şekilde etkilemektedir.
Endoparazitler evcil hayvanlarda önemli ekonomik kayıplara ve sağlık problemlerine neden olmaktadır. Bu çalışma, Dictyocaulus viviparus ile enfekte sığırlardan alınan akciğer dokusunda lipit ...peroksidasyonu ve bunun zararlı etkilerini ortadan kaldıran antioksidan sistemlerin durumunu araştırmak için planlandı. Bu parazit ile enfekte 20 ve 10 sağlıklı sığırdan alınan akciğer dokusunda malondialdehid (MDA), katalaz (CAT), süperoksit dismutaz (Cu, Zn- SOD), glutatyon (GSH), vitamin C ve β-karoten analizleri yapıldı. MDA miktarlarının parazitli grupta önemli oranda (p< 0.001) arttığı, buna karşılık Cu, Zn-SOD ve CAT aktiviteleri ile GSH, vitamin C ve β-karoten düzeylerinin ise parazitli grupta kontrol grubuna göre önemli oranda (Cu, Zn-SOD, CAT, GSH, vitamin C p< 0.001 ve β-karoten p< 0.05) azaldığı görüldü. Sonuç olarak söz konusu parazitin oksidatif strese ve dolayısı ile lipit peroksidasyonuna neden olduğu, bunun yıkıcı etkilerini önleyen antioksidan sistemlerin aktivitelerinin ve konsantrasyonlarının azaldığı saptandı.
Endoparasites cause significant economic losses and health problems in domestic animals. In this study, lipid peroxidation and the antioxidant status were investigated in the lung tissue taken from twenty cattle infected with Dictyocaulus viviparus and ten healthy cattle. Malondialdehyde superoxide dismutase, catalase, glutathione, vitamin C and β-carotene were measured. In comparison to the control group, the concentration of MDA was high (p< 0.001), but the activities of Cu-Zn-SOD and CAT, and the concentration of GSH, vitamin C and β-carotene were low (Cu-Zn-SOD, CAT, GSH, vitamin C, p< 0.001 and β-carotene p< 0.05) in the parasite infected group. These results suggested that endoparasitic infection is among the major causes of oxidative stress. Lipid peroxidation was observed and the activities and concentrations of antioxidants systems were decreased in the lungs of cattle infected with Dictyocaulus viviparus.
The effects of dietary antioxidants (vitamin E (VE), vitamin C (VC), vitamin A (VA), astaxhantin (ASX), β-carotene (βC)) on the arginase activity and nitric oxide (NO) level of the hepatopancreas, ...muscle, ovarian and gills of freshwater crayfish (Astacus leptodactylus) were investigated. In the investigation, 150 mg kg-1 VE, 200 mg kg-1 VC, 240 mg kg-1 VA, 200 mg kg-1 ASX and 200 mg kg-1 βC were added to experimental diets. The study was carried out for 144 days. The arginase activity in the hepatopancreas were significantly higher in the VE, VC and VA diet groups in the comparison to control (P< 0.001), but NO level was lower in all diet groups compared to the control (P< 0.001). Arginase activity and NO level in the muscle were significantly higher in the some diets groups (arginase; VE, VA, ASX, βC, NO; VC, ASX) according to control (P< 0.001). The arginase activity and NO levels in the ovarian were significantly lower in the all diet groups in the comparison to control (P< 0.001). However, no significant differences in the arginase activity and NO level in the gill were observed among diets. The arginase activity and NO level in the hepatopancreas, muscle and ovarian were changed by dietary supplement of the antioxidants.
Tatlısu istakozu (Astacus leptodactylus) rasyonuna antioksidan (vitamin E (VE), vitamin C (VC), vitamin A (VA), astaksantin (ASX), β-caroten (βC)) ilavesinin hepatopankreas, kas, ovaryum ve solungaç arginaz aktivitesi ve nitrik oksit seviyesi üzerine etkisi araştırılmıştır. Deneysel rasyonların hazırlanması için gruplara 150 mg kg-1 VE, 200 mg kg-1 VC, 240 mg kg-1 VA, 200 mg kg-1 ASX ve 200 mg kg-1 βC ilave edildi. Çalışma 144 gün sürdürüldü. Hepatopankreasdaki arginaz aktivitesi kontrol ile karşılaştırıldığında VE, VC ve VA rasyon gruplarında önemli derecede daha yüksekti (P< 0.001), fakat NO seviyesi kontrol ile karşılaştırılan bütün rasyon gruplarında daha düşüktü (P< 0.001). Kasdaki arginaz aktivitesi ve NO seviyesi bazı rasyon gruplarında (arginaz; VE, VA, ASX, βC, NO; VC, ASX) önemli derecede daha yüksekti (P< 0.001). Ovaryumdaki arginaz aktivitesi ve NO seviyesi kontrol ile karşılaştırıldığında bütün rasyon gruplarında önemli derecede daha düşüktü (P< 0.001). Ayrıca solungaçlardaki arginaz aktivitesi ve NO seviyesinde rasyonlar arasında hiçbir farklılık görülmedi. Hepatopankreas, kas ve ovaryumdaki arginaz aktivitesi ve NO seviyesi antioksidanların rasyona ilave edilmesi ile değişti.
Bu çalışmanın amacı siklik ve gebe ineklerde plazma β-karoten, vitamin A ve vitamin C seviyelerini ve bu değerler arasındaki ilişkiyi belirlemekti. Bu amaçla toplam 101 Holstein inek kullanıldı. ...Östrüs tespitinden 12 saat sonra ineklere suni tohumlama uygulandı. İnekler gebeliklerinin belirlenmesinden sonra gebe (n=81) ve gebe olmayan (n=20) olarak iki gruba ayrıldı. Progesteron seviyesi yalnız
21. günde gebe ineklerde gebe olmayan ineklerden yüksek bulundu (P<0.05). Gebe olmayan ineklerde ortalama vitamin C seviyesi östrüs siklusu boyunca değişmezken gebe olan ve olmayan ineklerde β-karoten ve vitamin A seviyelerinde siklus boyunca farklılık görüldü (P<0.05). Siklus sırasında gebe ineklerde plazma progesteron ve β-karoten (P<0.01) ve progesteron ve vitamin A (P<0.05) seviyeleri arasında negatif, gebe olan ve olmayan ineklerde ise plazma β-karoten ve vitamin A seviyeleri arasında pozitif ilişki saptandı (P<0.01). Sonuç olarak gebe ineklerde β-karoten, vitamin A ve vitamin C seviyelerinde, gebe olmayan ineklerde ise β-karoten ve vitamin A seviyelerinde östrüs siklusunun evresine göre farklılıklar tespit edildi. Buna ilave olarak, bu parametrelerin arasındaki ilişkiyi ve sığırlarda reprodüksiyon üzerine etkisini araştıran daha fazla çalışmaya ihtiyaç olduğu kanısına varıldı.
The aim of this study was to determine the plasma β-carotene, vitamin A and vitamin C levels and correlation between these parameters in cyclic and pregnant dairy cattle. A total of 101 Holstein cows used for this aim. Artificial inseminations (AI) were performed 12 h after determining the oestrus. The cows were allocated to two groups as pregnant (n=81) and nonpregnant (n=20) after the determination of pregnancy. Progesterone level was only higher on day 21 in pregnant cows than that in nonpregnant cows (P<0.05). There were variations in the mean levels of β-carotene and vitamin A in pregnant and nonpregnant cows (P<0.05) whereas vitamin C levels in nonpregnant cows did not differ during the oestrus cycle. There was a negative correlation between the plasma levels of progesterone and β-carotene (P<0.01) and progesterone and vitamin A (P<0.05) in pregnant cows, and a positive correlation between the plasma levels of β-carotene and vitamin A in both pregnant and nonpregnant cows (P<0.01), during the cycle. In conclusion, differences were determined in the levels of β-carotene, vitamin A and vitamin C in pregnant cows, and b-carotene and vitamin A in nonpregnant cows with the stages of the oestrus cycle in this study. In addition to this, more research is needed evaluating the relationship between these parameters and their effects on bovine reproduction.
We determined serum levels of alpha tocopherol, beta carotene, and ascorbic acid and lipid peroxidation products (thiobarbituric acid reactive substances--TBARS) in 14 children during an asthma ...attack and remission. Twelve healthy children served as controls. All antioxidant vitamins were significantly lower in asthmatics at remission compared to controls. Comparison of attack and remission periods in asthmatic patients failed to reveal any difference except in beta carotene (p = 0.03). The levels of all three vitamins correlated very significantly with each other (r = 0.89-0.95). TBARS levels were significantly higher at asthma attack compared to remission (p = 0.001). No correlation was observed between the antioxidant vitamins and lipid peroxidation products. This study shows that antioxidant vitamins are decreased in sera of asthmatic patients even during the asymptomatic periods of the disease, and that this decrease is not totally dependent on the increased oxidative stress as reflected by lipid peroxidation products. The role of antioxidant vitamins in prevention and/or treatment of asthma remains to be determined.
Beta-carotene is probably the best known of the group of carotenoids occurring in fruits and vegetables. Dietary β-carotene is recognized as the major precursor of vitamin A. It has been ...improved reproductive performance in both dairy heifers and lactating cows provided supplemental β-carotene. β-carotene protects against oxidative stress and stimulates immune system. Dietary deficiencies of β-carotene will decrease reproductive efficiency by directly or indirectly impairing ovarian function and the uterine environment, there by influencing oestrus, conception and pregnancy. In this paper, feeding studies made on the β-carotene used in nutrition of various animal species have been reviewed.
β-karoten sebze ve meyvelerde bulunan karotenoid grubu içinde belki de en iyi bilinenidir. Karma yemdeki β-karoten, vitamin A'nın ön maddesidir. β-karoten katkısı gerek düvelerin gerekse de ineklerin verim performansında bir iyileşme sağlamaktadır. β-karoten, aynı zamanda antioksidan olarak da görev yapmaktadır. β-karoten, oksidatif strese karşı koruyucu etki yapmakta, bağışıklık sistemini de uyarmaktadır. Yemdeki β-karoten yetersizliğinde direkt veya indirek olarak ovaryum fonksiyonları ve uterus ortamı değişerek östrus, gebe kalma ve gebelik gibi reprodüktif parametreler olumsuz yönde etkilenmektedir. Bu makalede, hayvan beslemede kullanılan β-karoten ile β-karoten konusunda çeşitli hayvanlar üzerinde yapılan besleme çalışmaları ele alınmıştır.

%39.80 nötral deterjan fiber ve %16.20 ham protein) rasyon ile beslendi. Karoten grubuna ilk GnRH enjeksiyonu
ile aynı zamanda tek doz (1 mg/kg) β-karoten kas içi uygulandı. Prostaglandin enjeksiyon zamanında serum
progesteron (P<0.01), β-karoten (P<0.05) ve vitamin A (P<0.01) düzeyleri ile birlikte en büyük follikül (P<0.05) ve
korpus luteum çapı (P<0.01) karoten grubunda daha yüksek belirlendi. İkinci GnRH enjeksiyon zamanında da en
büyük follikül çapı (P<0.01) ile serum östradiol (P<0.01), β-karoten (P<0.01), vitamin A (P<0.01) düzeyleri karoten
grubunda daha yüksek gözlendi. Tohumlama zamanında serum östradiol (P<0.01) ve β-karoten (P<0.05) düzeyinin
karoten grubunda yüksek olduğu tespit edildi. Grupların ilk ve 2.GnRH enjeksiyonları sonrasında ovulasyon
oranları benzer bulundu. Gebelik oranı kontrol grubunda %27.2, karoten grubunda %33.3 olacak şekilde
belirlendi, ancak farkın istatistiki önemde olmadığı gözlendi. Sonuç olarak, β-karotenin döl tutmayan ineklerde
folliküllerin çapını etkileyerek plazma östrojen düzeyini artırdığı, korpus luteum çapında artış oluşturarak plazma
progesteron düzeyini yükselttiği, ancak ovulasyon ve gebelik oranına etkisinin olmadığı kanısına varıldı.
This study was carried out to determine the effect of β-carotene on ovarian function and pregnancy rates in
repeat breeder cows. Twenty-six repeat breeder Holstein cows were randomly assigned into control (n=11) and
carotene (n=15) groups. Cows were fed with diet in the form of total mixed ration (39.80% neutral detergent fiber
and 16.20% crude protein of dry matter). Treatment cows received an intramuscular injection of β-carotene (1
mg/kg) simultaneously with the first GnRH injection. Largest follicle (P<0.05) and corpus luteum diameters (P<0.01)
together with serum progesterone (P<0.01), β-carotene (P<0.05) and vitamin A (P<0.01) levels were all significantly
higher in the carotene group on the day of PGF2α injection. At the second GnRH injection, largest follicle diameter
(P<0.01), serum estradiol (P<0.01), β-carotene (P<0.01), and vitamin A (P<0.01) levels were again higher in the
carotene group. Serum estradiol (P<0.01) and β-carotene (P<0.05) levels were still significantly higher in the
carotene group at the time of AI. Ovulation response did not differ between groups after both first and second
GnRH injection. The pregnancy rate was 27.2% in the control group, and 33.3% in the carotene group but this
difference was not statistically significant. In conclusion, it was suggested that β-carotene did not have any
significant effects on ovulation or pregnancy rates in ovsynch-treated repeat breeder cows; however it increased
serum estradiol and progesterone levels due to increased follicle size and corpus luteum functionality, respectively.
