Chemical investigation on the leaves of Michelia champaca L. (Magnoliaceae) led to the isolation of five previously undescribed phenylethanoid glycosides (PhGs), 4-O-β-d-glucopyranosyl-acteoside (1), ...4‴-O-(6-O-E-caffeoyl)-β-d-glucopyranosyl-acteoside (2), 4‴-O-(6-O-E-caffeoyl)-β-d-glucopyranosyl-isoacteoside (3), 6""-O-E-feruloyl-echinacoside (4), and 6""-O-p-E-coumaroyl-echinacoside (5), together with eighteen known PhGs. Their structures were determined by spectroscopic and chemical methods. All the known PhGs except acteoside (8) were not previously reported in the genus. Twenty-one PhGs exhibited more potent DPPH radical scavenging activity and FRAP than l-ascorbic acid (l-AA), and twenty-two PhGs showed better ABTS radical cation scavenging activity than l-AA. In addition, twelve PhGs displayed more potent cellular reactive oxygen species scavenging activity than curcumin. The results revealed that the leaves of M. champaca are a rich source of phenylethanoid glycosides and antioxidants.

Milk serves as an important dietary source of bioactive peptides, offering notable benefits to individuals. Among the antioxidant short peptides (di- and tripeptides) generated from gastrointestinal ...digestion are characterized by enhanced bioavailability and bioaccessibility, while assessing them individually presents a labor-intensive and expensive challenge. Based on 4 distinct types of amino acid descriptors (physicochemical, 3D structural, quantum, and topological attributes) and genetic algorithms for feature selection, 1 and 4 machine learning predicted models separately for di- and tripeptides with ABTS radical scavenging capacity exhibited excellent fitting and prediction ability with random forest regression as machine learning algorithm. Intriguingly, the electronic properties of N-terminal amino acid were considered as only factor affecting the antioxidant capacity of dipeptides containing both tyrosine and tryptophan. Four peptides from the potential di- and tripeptides exhibited highly predicted values by the constructed predicted models. Subsequently, a total of 45 dipeptides and 52 tripeptides were screened by a customized workflow in goat milk during in vitro simulated digestion. In addition to 5 known antioxidant dipeptides, 9 peptides were quantified during digestion, falling within the range of 0.04 to 1.78 mg L−1. Particularly noteworthy was the promising in vivo functionality of antioxidant dipeptides with N-terminal tyrosine, supported by in silico assays. Overall, this investigation explored crucial molecular properties influencing antioxidant short peptides and high-throughput screening potential peptides with antioxidant activity from goat milk aided by machine learning, thereby facilitating the identification of novel bioactive peptides from milk-derived proteins and paving the way for understanding their metabolites during digestion.
Polyphenols-rich rosemary extracts (RE) were successfully incorporated within cassava starch films in order to produce active food packaging with antioxidant properties. Films with similar ...thicknesses (about 200 μm) and water content (15–20%) were obtained (p > 0.05). The polyphenols content of the active films ranged between 4.4 and 13.6 mg of gallic acid equivalents per gram. As the polyphenols content increased, the films showed an increase in their antioxidant activity. Moreover, the films containing the greater extract concentration showed better barrier properties against UV light. Surface hydrophobicity of the films was affected by the extract presence; the active films showed about 40% higher contact angle values (about 51°) than the control ones (about 37°). Fourier transform infrared spectroscopy and thermogravimetric analysis suggested that RE presence inhibited the bonding between glycerol and starch molecules and as a result the water vapor permeability and mechanical properties of the active films were affected. Migration tests were carried out using water and ethanol 95% as food simulants for aqueous and fatty foods, respectively. After 7 days of film exposition, the total polyphenols content loaded in the films was migrated within the aqueous food simulant, while, only a negligible polyphenol amount was detected in the fatty food one. Finally, the bio-disintegration of the films was tested finding that as the RE content increased the integrity of the RE-containing films was better preserved along the composting.

Withnaia somnifera (L.) is a wonder herb with multiple medicinal properties. Its root is used in the preparation of many Ayurvedic medicines. Withanolides, steroidal lactones, present in the root are ...active chemical markers, however, phenolics, and flavonoids have also been reported in the root of this plant. In most of the herbal preparations, water extraction is carried out using the infusion or decoction preparation process. In the present study, extract yield, phytochemical constituents such as total phenol and withanolide content of water and water-alcohol extracts prepared using two most commonly used extraction techniques, also known as “Green Extraction” techniques, ultrasound and microwave assisted solvent extraction were compared with the conventional extraction method. Antioxidant activity of the extracts was also determined using DPPH and ABTS methods of antioxidant assay. Extract yield, chemical composition of the extracts (total phenol and withanolide content) and antioxidant activity of the extracts varied with the extraction process as well as solvent composition.

The goal of this study was to elucidate the characteristics and properties of polysaccharides from different parts of cultivated Hibiscus manihot L. (HM). Polysaccharides were extracted with hot-water from the flowers, leaves, roots, stems and epidermis of HM. Two purified fractions having high content, HMPS-F2 and HMPS-F4, were isolated from floral polysaccharides. The results showed that HMPS-F2 was a homopolysaccharide composed of glucose residues with an average molecular weight of 8.59 × 104 Da, which might have a backbone structure of →1)-α-d-Glcp (4→. HMPS-F4 was a natural acetylated heteropolysaccharide with a complex structure and an average molecular weight of 1.63 × 105 Da. It was mainly composed of Rha(rhamnose), GalA(galacturonic acid), and Gal(galactose) with a molar ratio of 3.06:1.00:1.62. The results of antioxidant experiments showed that HM polysaccharides (0.125–4.0 mg/L) had certain inhibitory effects on DPPH radicals, hydroxyl radicals and lipid peroxidation, among which the scavenging effect on hydroxyl radicals was the best. These results suggest that HM polysaccharide is a potent active ingredient that may play an active role in the medicinal activity of HM.
Impacts of ultrasound pretreatment on the formation of soy protein fibrils, interaction of soy protein fibrils and EGCG, rheological property and antioxidant activity of the complex, and ...bioaccessibility of EGCG were investigated in this study. Fourier-transform infrared (FTIR) spectroscopy, fluorescence spectroscopy, and surface hydrophobicity (H0) indicated that ultrasound caused the unfolding of soy protein structure and exposure of hydrophobic regions. Compared with the un-treated soy protein fibrils, there were greater Thioflavin T fluorescence intensity and β-sheet content in the ultrasound-treated protein fibrils. These results indicated that ultrasound pretreatment could be used for modifying soy protein to improve its fibrils formation. FTIR spectroscopy, fluorescence spectroscopy, X-ray diffraction, and H0 showed that protein fibrils mainly interacted with EGCG through hydrogen bonds and hydrophobic interactions. The stability, viscosity, and antioxidant activity of soy protein fibrils treated with ultrasound-assisted EGCG (U–F-EGCG) were greater than those of other samples. EGCG drove the formation of protein fibrils-EGCG hydrogels. In vitro bioaccessibility of EGCG was significantly improved after its formation of complex with protein fibrils. Hence, the soy protein fibril hydrogels system can extend the application as the delivery carriers of bioactive compounds.

Marine phospholipids (MPL) are attracting increasing attention due to their health benefits and good stability. Vitamin C (Vc) and β-carotene (Bc) were concurrently encapsulated in MPL nanoliposomes ...by thin-film evaporation as a mean to overcome the limitations precluding their utilization in food. Therefore, the physicochemical characteristics, antioxidant activities and storage stability of MPL nanoliposomes were assessed against those of traditional egg phospholipids (EPC). The mean size of nanoliposomes was 154.43–253.3 nm and zeta potential from – 55.58 to – 42.74 mV. The highest entrapment efficiency recorded for Vc was 63.33% and 87.8% for Bc. MPL nanoliposomes showed higher DPPH scavenging, hydroxyl radical and lipid peroxidation inhibition capacity as well as a superior stability at 4 °C for 42 days. Overall, MPL nanoliposomes encapsulating Vc and Bc displayed better results compared to EPC. As a result, MPL nanoliposomes could be used as promising carriers for simultaneous delivery of food bioactive compounds.

The protein-induced amyloid fibrils (AFs) are limited in food industry due to their poor antioxidant and antibacterial activities. However, polyphenol shows the potential functional modifications of ...AFs, and extend their application in food processing. In present study, tannic acid-binding ovalbumin-induced AFs (TA-OAFs) hydrogels were fabricated via different concentrations of TA and ovalbumin amyloid fibrils, and the rheological properties, thermal stability, and morphology of the hydrogels were investigated. Then, the physiochemical, antioxidant, and antibacterial of TA-OAFs hydrogels were further analyzed. The obtained results indicated that the addition of TA could increase the average diameter of nanofibrils with increased β-sheet contents, and showed a TA concentration-dependent tendency. Moreover, TA-OAFs hydrogels also possessed better thermal stability, antioxidant activity, and antibacterial capacity for both Gram-negative and Gram-positive bacteria. The present study might contribute to a better understanding of antimicrobial materials designing of protein-induced amyloid fibrils in the food field with beneficial properties.

The functional gelatin/curcumin composite film was prepared using an emulsifier, sodium dodecyl sulfate (SDS). The composite films were characterized using field emission scanning electron microscopy (FE-SEM) and Fourier transform infrared spectroscopy (FTIR). The FE-SEM test results showed that curcumin was evenly distributed in the gelatin polymer matrix to form a flexible composite film with a smooth surface. The addition of 1.5 % of curcumin improved the UV blocking effect by more than 99 % at a loss of 5.7 % of transparency compared to neat gelatin films. The addition of curcumin (up to 1 wt%) significantly improved mechanical and water vapor barrier properties. Also, the gelatin/curcumin composite films exhibited remarkable antimicrobial activity against foodborne pathogenic bacteria, E. coli and L. monocytogenes, and showed strong antioxidant activity comparable to ascorbic acid. Antibacterial and antioxidant gelatin/curcumin composite films with improved UV protection, water vapor barrier and mechanical properties have high potential in active food packaging applications.
