Bu çalışmanın amacı, vegan ve vejetaryen restoran işletmecilerinin vegan ve vejetaryen yiyeceklere yönelik yaklaşımlarını ve uygulamaları incelemektir. Yöntem olarak Nitel araştırma yöntemi ...kullanılmıştır. Araştırmada Nitel araştırma yöntemlerinden, yarı yapılandırılmış görüşme tekniği kullanılarak veriler toplanılmıştır. Görüşmeler sonucunda 9 katılımcıdan oluşan bir örneklem oluşturulmuştur. Araştırmanın evreni Kuzey Kıbrıs Türk Cumhuriyeti’ndeki restoranlar olarak belirlenmiştir. Görüşmelerden elde edilen verilerin analizinde betimsel analiz yöntemi kullanılmış olup, içerik analizi yöntemi kullanılarak verilerin analizi yapılmıştır. Çalışmamızın sonuçları, vegan ve vejetaryen restoran işletmelerinde veganlık/vejetaryenliğe ve vegan/vejetaryen gıdalara karşı olumlu bir yaklaşım olduğunu göstermiştir. Bunlara ek olarak, vegan restoran işletmesi açarken ve vegan yiyecekleri menüye eklerken bazı zorluklarla karşılaşıldığı tespit edilmiştir. Ayrıca, işletmeler tarafından Kıbrıs mutfağına özgü yemeklerinin vegan beslenmeye uygun olduğu katılımcıların büyük çoğunluğu tarafından kabul edilmiş, fakat menülerinde yer verilmediği görülmüştür. Bu sebeple, çalışmamız 9 katılımcı ile sınırlandırılmıştır. Çalışmamızın sonuçları hem akademik literatüre hem de sektöre ilgi duyan işletmecilere ışık tutacak ve yol gösterecek niteliktedir.
This study aims to examine the local cuisine of Yenice district of Karabük province within the scope of "Vegan cuisine". In this study, in which the qualitative research method was adopted, 7women ...who lived in Yenice and had full knowledge of the local cuisine were interviewed and the data were analyzed using the descriptive analysis method. The study shows that the meals consumed in Yenice are vegan foods. In the diet of the people living in the region, herbs such as Nettle, Mallow, Tatala, Borage (Kabalak), vegetables such as black cabbage (mancar) and foods rich in carbohydrates such as broad beans and corn are also used. Within the scope of the study,the meals were cooked by the participants, standard recipes were prepared and photographed by the authors, thus local dishes were recorded. The study is important in terms of preserving the intangible cultural heritage and contribution to the sustainability of local cuisine.
Based on a survey carried out in France and Scotland, this article sheds light on how vegans make a commitment regarding their daily eating habits in the interests of animals. Becoming a vegan is not ...a matter of course but involves a process of personal development that addresses life’s pleasures and one’s health. Eating is a form of self-control: vegans embody a moral disgust for animal products and cultivate a taste for plant-based foods through technologies of the self. This moral labour may have negative consequences for a vegan’s sociality and health. Letting go and giving up are practices of self-preservation that contribute to reshaping one’s identity.
À partir d’une enquête en France et en Écosse, l’article met en lumière la manière dont les véganes engagent leur corps pour les animaux dans leur quotidien alimentaire. Devenir végane n’est pas un allant de soi, mais implique un travail de soi prenant comme objet ses plaisirs et sa santé. L’alimentation est un art de se gouverner par lequel les véganes incarnent un dégoût moral pour les nourritures animales et cultivent un goût pour les nourritures végétales par des techniques de soi. Par ailleurs, ce travail moral n’est pas sans conséquences négatives sur la socialité et la santé des véganes. Le relâchement et le renoncement sont des pratiques de préservation de soi, qui participent d’une re-composition identitaire.
Malazgirt Savaşı sonrasında ve Moğol istilası sırasında ve sonrasında Türkmen aşiretleriyle birlikte,
çeşitli tarikatlara mensup yüzlerce derviş Anadolu’ya gelip yerleşmiştir. Bunlar bir taraftan ...kendi
fikirlerini Türkmenler arasında yayarken, bir taraftan da kurdukları zaviyelerle Anadolu’nun iskânını
sağlamışlardır. Bu dervişlerden bazılarının hangi tarikata bağlı oldukları, inançları ve yaşam
tarzları gibi hususlar bugün artık iyice bilinmektedir. Fakat özellikle 13. ve 14. yüzyıllarda Anadolu’da
faaliyet gösteren tarikatların çeşitliğinin fazla olmasından dolayı, hepsiyle ilgili bilgilerimizin
yeterli olduğu söylenemez. Bunlardan biri de, Anadolu’nun Türkleşip İslamlaşmasında rol oynayan
Etyemezlerdir. Bu bağlamda Etyemez adı bir taraftan Türklerin eski dinleri arasında yer alan
Budizm ve Manihaizm’in etle ilgili inançlarını, diğer taraftan da Budizm ve Manihaizm de içinde
olduğu Hint-İran mistisizminden etkilenerek dünyayı umursamayan Kalenderîleri çağrıştırmaktadır.
Bu ekole mensup şeyhler, diğer heterodoks dervişler gibi, konar-göçerlerle birlikte hareket ederek
onlar arasında görüşlerini yaymışlardır. Kayseri’ye bağlı İncesu kasabasında tespit edilen Etyemezli
cemaati bu hususa dair güzel bir örnektir. Ayrıca kurdukları zaviyelerin çevreleri zamanla göç alarak
köylere ve mahallelere dönüşmüştür. Balkanlar ve Anadolu’da tespit edilen zaviyelerin yanı sıra
Bozok, Ankara, Kastamonu, Kütahya, Sivas/Kangal, Samsun/Bafra ve Samsun/Terme’de kurulmuş
köyler bu cümledendir. İşte bu makalede, arşiv belgeleri ve menakıbnâmeler gibi bazı kaynaklardan
hareketle, Etyemez isminden başlamak üzere, bunların kökenleri, inanç özellikleri, Anadolu’daki
faaliyetleri ve dağıldıkları sahalar, ayrıca Alevî ve Bektaşî grupları ile temaslarına dair bazı tespit ve
değerlendirmeler yapılacaktır.

L’objectif de l’étude est de mettre en évidence l’existence d’un lien entre alimentation et identité. Les participants ont été recrutés par le biais de groupes Facebook portant sur le végétarisme, ...végétalisme et véganisme, une fois l’accord des administrateurs obtenu. Six entretiens ont été réalisés, retranscrits et analysés via le logiciel TROPES. L’usage majeur des verbes d’état et d’identité (être, devenir, « je ») ainsi que du pronom personnel « on », renvoie à une construction identitaire à la fois individuelle et collective autour de l’alimentation. Et, bien que la motivation principalement rapportée soit éthique, les participants ont spontanément abordé la question du poids et du corps. Quelle que soit l’histoire alimentaire des participants, des identifications aux troubles liés à l’image corporelle ou aux catégories de poids ont précédé l’identification à une alimentation spécifique. Or, l’adoption du végétarisme (au sens large) semble associée à une amélioration de l’estime de soi et de la perception de soi.
These last years have been marked by an evolution as to how people feed themselves, highlighting a growing interest for vegetarian food. Vegetarianism at large refers to several types of food that are characterized by the partial or total exclusion of animal foods. This study aims at relating various elements associated to vegetarianism, such as eating motives, behaviors, self-perception and others’ perception, in relation with the notion of identity.
Participants were recruited via vegetarian and vegan (for food and for lifestyle) groups on Facebook, once their agreement was obtained. Six interviews were conducted by a clinical psychologist around the notion of being and identity related to food, as well as the food history of the individual and his/her family. The use of retrospective investigation makes possible to establish a continuity between the past and the current eating behavior. These interviews, once manually transcribed, were the subject of a complex semantic analysis via TROPES software (version 8.4).
The results showed a major use of state's and identity's verbs (being, becoming, “I”) and the personal pronoun “we”, referring to a construction of both individual and collective identity around the diet. The commitment to vegetarian/vegan diet has been primarily motivated by ethical concern. And, positive feelings have emerged following the adoption of this type of diet, such as pride, inner purity and a sense of being healthy and holy. Despite the fact that their diet is ethically focused, participants spontaneously addressed the issue of weight and body image.
Whatever the food's history of participants, identifications to disorders related to body image or identifications to weight categories have preceded the identification to a specific diet. And the following of a vegetarian/vegan diet appears at the base of positive feelings toward oneself and a better self-esteem. So, we can assume that adopting a vegetarian/vegan diet could improve self-perception. Otherwise, the ethical choice mentioned by the participants, may be an acceptable sociable justification to control more or less the fate of their body (inside and outside). More research is needed to better understand the underlying mechanisms of vegetarian/vegan diet, to explore the personality profiles of individuals and their relation to the body.
Les données nutritionnelles et relatives à la sécurité sanitaire concernant les algues sont encourageantes dans l’optique d’une intégration à une alimentation équilibrée, comme source non ...conventionnelle de protéines. Alors que la consommation de viande transformée et la surconsommation de viande rouge sont néfastes pour la santé et l’environnement, et que certains pays en développement pourraient être confrontés à une pénurie alimentaire, ces nouveaux aliments semblent constituer un élément de réponse.
Nutritional and food safety data on algae are encouraging from the perspective of integration into a balanced diet as an unconventional source of protein. At a time when consumption of processed meat and over-consumption of red meat are harmful to health and the environment, and some developing countries may face food shortages, these new foods appear to be part of the answer.
La viticulture biologique française est une filière dynamique. Si certaines évolutions de la demande de bio sont similaires à celles observées pour le vin conventionnel (rosé, Bag-in-box, …), ...d'autres comme la demande de vins sans sulfites ou de vins « vegan » interpellent plus spécifiquement ce segment. La filière des vins bio se trouve à la fois devoir respecter la règlementation viticole et celle de la production en bio, que ce soit par le cahier des charges de production de la matière première « raisin » que de sa transformation en vin. Elle doit satisfaire des consommateurs exigeants et fédérer des producteurs passionnés parfois jusqu'à l'excès. Face à cette forte dynamique de développement soutenue par une demande qui contourne partiellement les circuits classiques de distribution, la filière française des vins bio (France Vins Bio) a souhaité mener un exercice de prospective conduit par FranceAgriMer et Montpellier SupAgro. La présente communication va présenter, après un rappel des grands principes et de la méthode de prospective utilisée, les thématiques explorées, les principales hypothèses combinées et l'essentiel des scénarios sur lesquels elles débouchent. The French organic viticulture is a dynamic sector. If certain evolutions of the request for organic are similar to that are observed for the conventional wine (rosé, Bag-in-box, …), others, as the demand for wines without sulphites or vegan wines challenge this segment more specifically. The sector of the organic wines is supposed, at the same time, to respect the wine regulation and organic regulation like an agricultural product but also as a processed product. It must satisfy the demanding consumers and federate producers impassioned sometimes until excess. Vis-a-vis this strong dynamics of development supported by a request which partially circumvents the classical circuits of distribution, the French sector of the organic wines (Organic France Wines) wished to carry out an exercise of futurology led by FranceAgriMer and Montpellier SupAgro. The present communication will present, after a recall of the great principles and method of futurology used, the various topics examined, the principal combined assumptions and the main part of the scenarios to which they lead.
İnsanoğlunun doğup büyüdüğü coğrafya, içinde bulunduğu kültürel ortam, ailesi, yakın
çevresi, mesleği vb. birçok faktör sahip olduğu yaşam biçimini etkilemektedir. Söz konusu
yaşam biçimi içerisinde ...de beslenme alışkanlıkları önemli bir yere sahiptir. Toplum
genelinde kabul edilen yaygın beslenme alışkanlıklarının dışında toplumsal azınlık
denebilecek farklı gruplar tarafından tercih edilen vegan ve vejetaryen yaşam biçimleri
ise son yıllarda oldukça ilgi görmektedir (Tunçay Son, 2016). Bu çalışmanın amacı 2000-
2018 yılları arasında yayımlanmış gazete haberlerinde veganlığın ve vejetaryenliğin nasıl
betimlendiğini ortaya koymaktır. Çalışma kapsamında 2000-2018 yıllarında yayımlanmış
toplam 2161 haber metnine PRNet medya takip sistemi üzerinden ulaşılmıştır. Ulaşılan
haberlere içerik analizi uygulanması amacıyla kodlama cetveli oluşturulmuş ve veriler
SPSS paket programına girilerek içerik analizi uygulanmıştır. Araştırmada elde edilen
bulgulara göre, 2000-2018 yılları arasında vegan ve vejetaryen konulu haberlerin
sayısında önemli bir artış yaşandığı görülmektedir. Ancak yaygın medyada önemli bir
yeri bulunan ulusal gazetelerdeki vegan ve vejetaryenlikle ilgili haberlere çoğunlukla
haber ajansları ve köşe yazarlarının kaynaklık ettiği tespit edilmiştir. Konuyla ilgili yetkili
ve uzman kişilerin görüşleri ise haberlerde çok az yer bulabilmiştir. Ayrıca gazetelerde
haberler için ayrılan boyutların da küçük ve yetersiz olduğu saptanmıştır. Haber
metinlerde veganlık ve vejetaryenliğin sürdürülebilir bir yaşam biçiminden ziyade daha
çok alternatif beslenme ve bir diyet biçimi olarak çerçevelendiği görülmüştür.
