White cheese is one of the most consumed cheese products in Turkey. It is usually used after cut, chopped or sliced in breakfast and cafeterias. As demand for ready to foods is increased, the number of cut, chopped or sliced cheese products in market is increased. Because of the increasing demand for ready to eat cheese products, it is necessary to increase the shelf life of these products. Beyaz peynir, Türkiye'de en çok tüketilen peynir türlerindendir. Genellikle kahvaltıda veya kafeterya ve kantinlerde kesme, doğrama veya dilimleme işlemlerinin ardından kullanılmaktadır. Gün geçtikçe tüketime hazır gıdalara artan ilgi ile çeşitli peynirler de kesilmiş,ön dilimlenmiş veya rendelenmiş olarak piyasaya sunulmaya başlamıştır.
