Prehranska in senzorična kakovost jedi v slow food ponudbi : diplomska nalogaUle, MatjažKakovost hrane, način prehranjevanja in vedenje ob hranjenju so značilnosti prehranskih navad posameznika ali skupine. Namen naloge je bil preučiti in predstaviti kulturo slow food in pripraviti ta ... kulinarični dogodek z dodatno animacijo. S senzoričnim ocenjevanjem pripravljenih jedi v kombinaciji z vinoms pomočjo gostov v vili Rakar na Dolenjskem je bila speljana slow food ponudba. Izračunana je energijska vrednost jedi kot izhodišče za prehransko vrednost obroka. Med 200 pokušalci iz Slovenije je bila opravljena anketa o prehranskih navadah in uživanju hrane. Rezultati senzoričnega ocenjevanja jedislow food ponudbe so pokazali, da je bila prepoznavnost jedi dobra, senzorične lastnosti jedi in skladnost z vinom dobro ocenjene. Izračuni energijske vrednosti so pokazali visoke vrednosti, kar je skladno s kulinaričnimi sestavinami jedi. Rezultati ankete so pokazali, da anketirani delno poznajo slow food ponudbo, udeležujejo se je zaradi pestrosti jedi in druženja. Med anketiranimi polovica uživa tudi hitro hrano, dnevni obroki so na osnovi mešane prehrane. Občasno se največ anketiranih prehranjuje v gostilnah in restavracijah. Preučevane so bile prehranske navade 200 potrošnikov. Izkazalo se je, da so prehrambene navade anketirancev slabe. Več kot polovica jih uživa hitro pripravljeno hrano - fast food, prav tako pa ni ustrezna časovna razporeditev obrokov, saj jih zajtrkuje manj kot polovica. Informiranost o slow food ponudbi je na izredno nizki ravni. Te ponudbe ne pozna več kot polovica anketiranih, tisti pa, ki to ponudbo poznajo, so dobiliosnovne informacije preko elektronskih medijev. Na slow food večerji sogosti senzorično ocenjevali izbrane jedi in vina. Senzorične lastnosti večine jedi so bile zelo dobro ocenjene.
