The effect of caponization on the mechanical properties of Polbar chicken bones was the subject of investigation. The biomechanical strength of bones and the risk of their deformation or fracture ...were determined on the basis of their geometric, structural, material, and densitometric properties. Eight-week-old cockerels of Polbar breed were surgically castrated and then fattened until the 24th week of life. It was observed that caponization did not influence the weight and length of either of the long bones. It did however significantly reduce their ash content and the Ca and P contents in their femur, and P content in their tibia. Dual energy x-ray absorptiometry densitometry revealed that bone mineral content of the mid-diaphyseal part of both bones were reduced. Similarly, the bone tissue density of bones decreased. Caponization influenced the bone's geometric structure increasing the internal and external diameters of the bones. The bone cross-sectional area was greater in capons, and, consequently, the cross-sectional moment of inertia and the radius of gyration significantly increased. However, the relative wall thickness and cortical index were not altered. The three-point bending tests revealed the negative effect of caponization on the mechanical endurance of bones. Yield strength, Young modulus, and yield stress, characterizing the strength of the bone's material, decreased in capons. That suggests a higher risk of permanent deformation as capon bones become less elastic. Concluding, caponization negatively influenced the quality characteristics of Polbar chicken long bones.
The paper aimed to analyse the safety of drinking coffee by adult Poles in terms of Pb and Cd content. The degree to which Cd and Pb passed from coffee grounds into the coffee infusion was also ...examined. Twenty-three samples of natural coffee were examined. The content of metals was determined using the ICP method. On average, dry coffee contained ca. 0.004 μg Cd and 0.05 μg Pb per 1 g, and 95.5% Cd and 94% Pb passed into the infusion. Drinking coffee supplies these metals in the amount of less than 2% TWI (tolerable weekly intake) for Cd and BMDL (benchmark dose lower confidence limit) for Pb. In the presented studies, the values of CDI (chronic daily intake), THQ (target hazard quotient) and HI (hazard index) indicators were lower than 1, which means that the risk of developing diseases connected with chronic exposure to Cd and Pb consumed with coffee must be evaluated as very low. The content of Cd and Pb in the analysed coffee infusions was very low, so drinking coffee does not pose a risk for consumers in terms of the content of these metals. However, it must be remembered that no threshold limits for toxic metal consumption exist because these metals accumulate in the body for a long time. The studies presented here also showed a low (

= 0.26) but still a positive correlation between the content of Pb in coffee and the degree (%) to which Pb passed into the infusion. This problem should be thoroughly investigated.
The degree of accumulation and distribution of Cd and Pb in the organs of young animals compared to the amount taken in with water or feed have not been thoroughly investigated yet. The experiment ...aimed to verify whether the source of toxic metals (feed, drinking water) administered to growing rats orally has an influence on the degree of accumulation of Cd and Pb in the organs (brain, spleen, lungs, heart, liver and kidneys). The rats received Cd and/or Pb respectively in the amount of 7 mg and/or 50 mg per 1 kg of feed or per 1 L of distilled water. The rats’ organs accumulated in total about 0.5 % Cd and about 0.71 % Pb consumed with water and about 0.46 % Cd and about 0.63 % Pb taken in with feed. More than 60 % of Cd and more than 70 % of Pb absorbed by the studied organs was accumulated in the liver, and more than 30 % of Cd and 26–29 % of Pb in the kidneys and less than 1 % in other organs. The relationship between the distribution percentage of Cd in the studied organs can be presented as: liver > kidneys > brain > lungs > heart > spleen. The relationship between the distribution percentage of Pb can be presented as: liver > kidneys > brain > spleen > heart > lungs. Significantly (P < 0.05), more Cd and Pb were accumulated in total in the organs of rats receiving the metals in drinking water.
Depressive disorders can affect up to 350 million people worldwide, and in developed countries, the percentage of patients with depressive disorders may be as high as 10%. During depression, ...activation of pro-inflammatory pathways, mitochondrial dysfunction, increased markers of oxidative stress, and a reduction in the antioxidant effectiveness of the body are observed. It is estimated that approximately 30% of depressed patients do not respond to traditional pharmacological treatments. However, more and more attention is being paid to the influence of active ingredients in food on the course and risk of neurological disorders, including depression. The possibility of using foods containing polyphenols as an element of diet therapy in depression was analyzed in the review. The possibility of whether the consumption of products such as polyphenols could alleviate the course of depression or prevent the progression of it was also considered. Results from preclinical studies demonstrate the potential of phenolic compounds have the potential to reduce depressive behaviors by regulating factors related to oxidative stress, neuroinflammation, and modulation of the intestinal microbiota.
The aim of this study was to determine the effect of addition of alfalfa protein concentrate (APC) at the dose of 15 g or 30 g per 1 kg on the chemical composition, fatty acid profile, dietary value, ...and antioxidant status in muscles and serum of Ross 308 chickens. The experiment involved 150 1-day-old Ross 308 broiler chickens allocated into 3 groups in 5 replications (10 birds per pen). A 1-way system with 2 levels of APC, 15 g or 30 g per 1 kg of a complete diet, was used. Group C receiving a standard feed mixture without APC was the control. The addition of 15 and 30 g APC increased the CP content in the breast muscle and in the thigh muscle, and reduction in the cholesterol and fat level was noted. Higher content of polyunsaturated fatty acids from the n-6 group was noted in the breast muscles of the 30-g APC–supplemented chickens. The thigh muscles with APC were characterized by more favorable values of the atherogenic index, thrombotic index, and hypocholesterol-to-hypercholesterol ratio.The supplementation with 30 g APC reduced the cholesterol and triacylglycerol levels, increased the high-density lipoprotein level, and decreased the low-density lipoprotein level and improved the antioxidant parameters in plasma (increase in superoxide dismutase and in glutathione peroxidase and reduction of malondialdehyde), compared with group C. The results of this study indicate that the supplementation with 30 g APC improved the metabolic functions of the organism, meat resistance to oxidative processes, and the composition and profile of fatty acids. Therefore, APC can be a potential alternative to synthetic feed additives and soya protein in production of healthier poultry meat.
The ability of poultry to withstand infectious disease caused by bacteria, viruses or protozoa depends upon the integrity of the immune system. Zinc is important for proper functioning of ...heterophils, mononuclear phagocytes and T lymphocytes. Numerous data indicate that the demand for zinc in poultry is not met in Poland due to its low content in feeds of vegetable origin. The aim of the study was to determine the effect of supplementation of inorganic (ZnSO4 and ZnSO4+ phytase enzyme), and organic forms of zinc (Zn with glycine and Zn with glycine and phytase enzyme) on selected parameters of the cellular and humoral immune response in broiler chickens by evaluating the percentage of CD3+CD4+, CD3+CD8+, CD25+, MHC Class II, and BU-1+ lymphocytes, the phagocytic activity of monocytes and heterophils, and the concentration of IL-2, IL-10 and TNF-α in the peripheral blood. Flow cytometry was used to determine selected cell-mediated immune response parameters. Phagocytic activity in whole blood was performed using the commercial Phagotest kit (ORPEGEN-Pharma, Immuniq, Poland). The results showed that supplementation with zinc chelates causes activation of the cellular and humoral immune response in poultry, helping to maintain the balance between the Th1 and Th2 response and enhancing resistance to infections. In contrast with chelates, the use of zinc in the form of sulphates has no immunomodulatory effect and may contribute to the development of local inflammatory processes in the digestive tract, increasing susceptibility to infection.

Zinc is required for normal bone development and cartilage formation. The purpose of this study was to assess the effect of with adding organic Zn (alone or phytase inclusion) at the reduced dose to ...growing male Ross 308 chickens on somatic axis and bone tissue metabolism. 200 one-day old broilers were divided into the negative control group fed diet without Zn or phytase inclusion, positive control group receiving Zn in the 100% of daily recommended dose from ZnO, and two experimental groups fed diet introduced Zn in 25% of daily recommendation as a glycine chelate (Zn-Gly) with or without phytase inclusion (500 FTU·kg-1). Supplemental organic Zn increased bone Zn and Mg content, serum IGF-1, growth hormone and leptin concentration. Additional phytase inclusion increased body weight gain, blood plasma Ca, Fe, Zn and osteocalcin concentration and tibia ash percentage when compared to the Zn-deprived control. Bone geometry, yield and ultimate strengths were enhanced in both organic Zn supplemented groups, and the overall mechanical strength parameters of bone were better in these groups than in the positive control group supplemented with standard dose of inorganic Zn. Also marked improvements in the thickness of articular and the growth plate cartilages as well as real bone volume and thickness of metaphyseal trabeculae were achieved in all broilers fed Zn-supplemented diet irrespective of phytase inclusion, however, the highest cancellous bone mass and the best trabecular structure were noted after ZnO supplementation. In concludion, although dietary organic Zn given to growing broilers in 25% of daily recommended dose improved general bone properties and mechanical strength, the obtained results do not allow to unambiguously state that organic Zn supplementation at this level, even after phytase inclusion, is sufficient for proper bone development.
This study was focused on analyzing the effects of dietary inclusion of raw chickpea seed as a replacement of soybean meal as a primary protein source on bone structure in broiler chickens. Broiler ...chickens (n = 160) received in their diet either soybean meal (SBM) or raw chickpea seeds (CPS) as a primary protein source throughout the whole rearing period (n = 80 in each group). On the 42th day randomly selected chickens from each group (n = 8) were slaughtered. Collected tibiotarsus were subjected to examination of the biomechanical characteristics of bone mid-diaphysis, microstructure of the growth plate and articular cartilages; the analysis of mineral content and crystallinity of mineral phase, and the measurements of thermal stability of collagen in hyaline cartilage were also carried out. The inclusion of chickpea seeds resulted in increase of bone osteometric parameters (weight, length and mid-diaphysis cross-sectional area) and mechanical endurance (yield load, ultimate load, stiffness, Young modulus). However, when loads were adjusted to bone shape (yield and ultimate stress) both groups did not differ. Mineral density determined by means of densitometric measurements did not differ between groups, however the detailed analysis revealed the differences in the macro- and microelements composition. The results of FT-IR and XRD analyses showed no effect of diet type on mineral phase crystallinity and hydroxyapatite nanocrystallites size. In trabecular bone, the increase of real bone volume (BV/TV) and number of trabeculae was observed in the CPS group. Total thickness of articular cartilage was the same in both groups, save the transitional zone, which was thicker in the SBM group. The total thickness of the growth plate cartilage was significantly increased in the CPS group. The area of the most intense presence of proteoglycans was wider in the SBM group. The structural analysis of fibrous components of bone revealed the increase of fraction of thin, immature collagen content in articular cartilage, trabeculae and compact bone in the CPS group. The dietary inclusion of CPS affected the thermal stability of collagen, as decrease of net denaturation enthalpy was observed. This study showed a beneficial effect of CPS on the skeletal development, improving the overall bone development and the microarchitecture of cancellous bone. It suggests that CPS can be a promising replacement for SBM in broilers feeding in the aspect of animal welfare related to the development of the skeletal system.
Endometrial cancer (EC) is second only to cervical carcinoma among the most commonly diagnosed malignant tumours of the female reproductive system. The available literature provides evidence for the ...involvement of 32 genes in the hereditary incidence of EC. The physiological markers of EC and coexisting diet-dependent maladies include antioxidative system disorders but also progressing inflammation; hence, the main forms of prophylaxis and pharmacotherapy ought to include a diet rich in substances aiding the organism’s response to this type of disorder, with a particular focus on ones suitable for lifelong consumption. Tea polyphenols satisfy those requirements due to their proven antioxidative, anti-inflammatory, anti-obesogenic, and antidiabetic properties. Practitioners ought to consider promoting tea consumption among individuals genetically predisposed for EC, particularly given its low cost, accessibility, confirmed health benefits, and above all, suitability for long-term consumption regardless of the patient’s age. The aim of this paper is to analyse the potential usability of tea as an element of prophylaxis and pharmacotherapy support in EC patients. The analysis is based on information available from worldwide literature published in the last 15 years.
The paper aimed to evaluate the degree of contamination of honey available on the Polish market with cadmium (Cd) and lead (Pb). The analyses involved 49 samples of honey: monofloral (
n
= 24): ...linden, raspberry, goldenrod, bean, dandelion, buckwheat and rapeseed honey, multifloral honey (
n
= 17) and coniferous honeydew honey (
n
= 8). The content of Cd and Pb was determined using Inductively Coupled Plasma-Optical Emission Spectrometers (ICP-OES). The content of Cd and Pb was confirmed in all the analysed honeys, but in 18% of samples the level of Cd was < LOQ. The analysed honeys contained from < LOQ to ca. 0.09 mg Cd per 1 kg, on average 0.025 mg kg
−1
. On average, they contained 0.193 mg Pb (range 0.014–1.007) per 1 kg of the raw product. The content of Cd and Pb can be presented as: honeydew honey > multifloral honey > monofloral honey. The content of Cd in monofloral honeys can be presented as follows: linden > other (raspberry, goldenrod, bean, linden + bean) > dandelion = buckwheat = rape, while the content of Pb as linden > other > rapeseed > buckwheat > dandelion honey. It should be emphasised that consuming 19 g of honey a week (mean honey consumption in Poland) is safe for human health, as it results in an intake of Cd at the level of 1.18E-04% PTWI and 0.553% PTWI for children and an intake of Pb at the level of 0.641% BMDL01 for adults and 5.916% BMDL for children. The obtained results lead to a conclusion that the risk of disorders related to chronic exposure to Cd and Pb ingested with honey is very low, which is demonstrated by the fact that both children and adults showed CDI, CR, THQ and HI that were lower than 1.
