El aguacate Hass es un fruto climatérico con un alto contenido de aceite y óptimas características organolépticas. Las condiciones de almacenamiento (temperatura y humedad relativa) durante el ...transporte y la maduración, son definitivas para garantizar que el fruto llegue al consumidor con las mejores características fisicoquímicas y adecuadas propiedades organolépticas. El objetivo del presente trabajo fue determinar el efecto de la temperatura de almacenamiento durante el transporte refrigerado y su posterior maduración acelerada sobre las propiedades fisicoquímicas del aguacate Hass de exportación del Valle del Cauca. Se utilizó un diseño factorial 32, en el cual los factores correspondieron a las temperaturas de refrigeración (5, 7 y 9°C) y de maduración (17, 20 y 23°C). En ambos casos, la humedad relativa fue de 90%. Los frutos se almacenaron durante 20 días para simular el proceso de exportación y las propiedades fisicoquímicas se midieron cada 5 días. Posteriormente se sometieron a una maduración acelerada a 17, 20 y 23°C hasta un grado de madurez 5, correspondiente a la madurez de consumo. Las mejores condiciones de manejo se lograron a una temperatura de almacenamiento de 7°C y maduración posterior a 20°C. El producto final presentó una maduración homogénea, sin defectos internos.

En este trabajo se evaluo el efecto de los principales macro-compuestos y de la presion transmembrana (PTM) sobre el desempeno del proceso con fluidos modelo. Las concentraciones de los fluidos modelo, variaron entre 0,25 y 0,75% para pectina y 0,04 y 0,08% para celulosa. Se utilizo el diseno Box-Behnken con tres replicas en el centro para estudiar la influencia de la presion transmembrana (PTM) y concentracion sobre las propiedades hidrodinamicas de la capa de colmatacion (K, C.sub.g), difusividad (D) y espesor de la capa lfmite (delta.sub.b). Se encontro que el proceso de MFT es eficiente y comercialmente factible cuando se trabaja a una PTM constante de 1,93 bar y a concentraciones de pectina y celulosa de 0,25% y 0,0513% respectivamente. Contexto: El alto consumo de piña a nivel mundial requiere que el mercado ofrezca diferentes alternativas de comercialización, incluyendo productos mínimamente procesados. Los cambios indeseables en ...el producto durante el almacenamiento pueden reducirse mediante las condiciones de procesamiento y empaque. El objetivo de este trabajo fue evaluar el efecto del tipo de empaque, el pretratamiento y el tipo de corte sobre parámetros de calidad de piña fresca cortada.
Método: La piña fue cortada en cubos de 2 cm de lado y en cuartos de rodaja de 1,5 cm de espesor. Las muestras se almacenaron en envases PET con o sin almohadilla absorbente. Se evaluó además el preenfriamiento de las muestras. Se evaluaron propiedades de calidad del producto durante 14 días de almacenamiento.
Resultados: Los cuartos de rodaja presentaron menor pérdida de peso, mantuvieron el color, el contenido de vitamina C, los polifenoles y la capacidad antioxidante, mientras el corte en cubos presentó mejor comportamiento en cuanto a la firmeza. El uso de almohadillas absorbentes aceleró la pérdida de peso, el preenfriamiento no mostró un efecto significativo en las variables de respuesta.
Conclusiones: Los resultados obtenidos sugieren que es posible mantener las propiedades de calidad de piña variedad MD2 mínimamente procesada cortada en cuartos de rodaja y empacada en envases PET conservando la vitamina C y los compuestos fenólicos.
Frutos de maracuyá cosechados en Gigante, Huila (Colombia) fueron seleccionados y caracterizados fisicoquímicamente, el jugo fue ultrafiltrado en un sistema Pellicon 2® con membranas planas (10 kDa) ...y área 0.5 m2. Para la optimización se aplicó un diseño experimental tipo superficie de respuesta, estudiando el efecto de 3 factores (caudal jugo, caudal salmuera y temperatura) sobre el flux y sólidos solubles. El evaporador osmótico fue un módulo de fibras huecas hidrófobas (MD020CP2N®) con área 0.104 m2 y salmuera de CaCl2 45% p/v como solución extractora. El concentrado presentó excelentes características de calidad, la ultrafiltración fue efectiva en evitar la colmatación en la membrana de evaporación al disminuir la viscosidad y turbiedad del jugo. Se encontraron como condiciones optimas de operación: temperatura 31 (°C), caudal salmuera 242 (ml/min), caudal jugo 146 (ml/min), con las que se alcanzó una concentración final de 52.25 ± 0.36 °Brix y un flux de 0.52 (kg/m2h).

En este documento se presentan y analizan de forma sintética los fenómenos de transferencia de masa y calor del proceso y se describen los modelos usados para calcular parámetros de interés como flujos, temperaturas, coeficientes de transferencia y sus interrelaciones cuando se utilizan módulos de fibras huecas, con el fin de proveer una herramienta de consulta rápida y concreta.
Cholupa it's an exotic fruit that has excellent organoleptic characteristics but highly sensitive to thermal treatments. Fruit was harvested in commercial fields and for each process stage, the ...following physicochemical parameters were analyzed: soluble solids, pH, total solids, viscosity, and turbidity. Was used a Pellicon2® ultrafiltration system (10 kDa) with flat membranes and filtration area 0.5 m2, osmotic evaporator had a polypropylene hydrophobic hollow fiber module MD020CP2N® with area 0.104 m2. Prior to ultrafiltration, in order to obtain a higher permeate flow, juice was subjected to enzymatic treatment with commercial mixtures, found that doses of Maxoliva® (50 µl/100g) and Rapidase® (40 µl/100g) are best treatment, which had a significant effect (P<0.05) reducing the viscosity and increase soluble solids; in clarification process by ultrafiltration, permeate flux rate has a behavior that fulfills Darcy law, with 19.4 and 6.0 l m-2 h-1, as maximum and minimum, respectively. Finally, osmotic evaporation process produce a concentrate of 65.15±0.36 oBrix with homogeneous appearance, dark yellow color, which when it's reconstituted dissolves easily in water. The results show that ultrafiltration and osmotic evaporation proved to be effective and synergistic technologies to get a good quality concentrate, that preserve much original characteristics of juice. This is the first work reported about cholupa juice processing.
The effect of frying conditions on immersion on moisture loss and oil content were studied at different times in two yam varieties: Diamante 22 and Pico Botella. The experimental data adjusted itself ...to the first order exponential model for humidity transfer (r > 0.9) for both cultivars. The humidity diffusion coefficient for the two varieties of yam fried at 140°, 160° and 180°C for 1 to 9 minutes were 8.11±0.76, 8.2±0.81, and 8.62 ±0.71*10-9 m2/s for the Diamante 22 variety, respectively, and 8.32±0.82, 8.38±0.78, 8.54±0.84*10-9 m2/s for the Pico de Botella variety. Activation energy was 24.43 kJ/mol for the Diamante 22 variety and 21.27 kJ/mol for the Pico de Botella variety. The results showed that there was higher oil absorption after 180 s and at 140°C while taking into account 0.377 kg water / kg solid moisture loss for Diamond 22 and 0.410 kg water / kg solid Pico de Botella at 180°C for 540 s.
The greatest difficulty arising during cross-flow micro-filtration is the formation of a cake layer on the membrane surface (also called fouling), thereby affecting system performance. Fouling has ...been related to permeate flux decay resulting from changes in operating variables. Many articles have been published in an attempt to explain this phenomenon but it has not yet been fully understood because it depends on specific solution/membrane interactions and differing parameters. This work was aimed at presenting an analytical review of recently published mathematical models to explain fouling. Although the reviewed models can be adjusted to any type of application, a simple “concentration polarisation” model is advisable in the particular case of tropical fruit juices for describing the insoluble solids being deposited on membrane surface.
