BACKGROUND: Vaccinium meridionale presents fruits with a high content of phenolic compounds and anthocyanins and therefore a high antioxidant capacity.
OBJECTIVE: The aim was the production of ...vinegar from three treatments of berries alcohol beverage, to evaluate its antioxidant and cytotoxic activity.
METHODS: Vinegars were prepared by acetic fermentation from alcoholic beverages of Andean berries by three treatments: mechanical maceration, heating, and mixing. The titratable acidity and acetic acid content were evaluated in the vinegar; antioxidant potential (DPPH, FRAP, and ORAC); content of antioxidant metabolites (total polyphenols, total anthocyanins, and phenolic hydroxycinnamic acids) were evaluated in the juice, alcoholic beverages, and vinegar; the antiproliferative capacity in colon cancer cell SW480 was determined in vinegar.
RESULTS: Alcoholic beverages presented the main antioxidant activity. However, after the acetic fermentation, it was observed a fall in the antioxidant potential in all techniques evaluated in three treatments. The vinegar obtained by heated and mixed treatments were presented the highest values in antioxidant activity, phenols, and anthocyanins. Antiproliferative activity inhibitions of vinegars in cell viability were 6.2% (20 μg/mL) and 22.5% (200 μg/mL).
CONCLUSIONS: Production of acetic acid is independent of the treatment. The antioxidant activity is favored in alcoholic beverages with the treatment of hot maceration. Andean berry CAL vinegar has antiproliferative activity, inhibiting a colon carcinoma SW480 line although in a low amount compared with reports in the literature.

Honey farming is a young industry in Colombia, where it is gaining relevance as a source of jobs and food security, especially in post-conflict low-income communities that place bee colonies in ...native forests. Previous studies on the palynological composition of this honey are insufficient and the role of native plants for the production of honey is therefore unknown. Here we present a palynological analysis of honey produced by two bee species, the introduced Apis mellifera and the native Melipona eburnea, both commonly used by low-income communities in the eastern region of the Department of Antioquia, in the Central Cordillera of Colombia. We analyzed species richness and diversity of pollen, characterized some life history traits of those species preferred by bees, and estimated the interaction web between the bee and selected plant species. The overlap between the two species was very small. We found that the source of nectar for A. mellifera were plants with different growth habits, both native and introduced. Instead, M. eburnea used mostly native tree and shrub species, at a constant height level. Our results suggest that setting bee colonies of A. mellifera close to those of M. eburnea may not result in competition between them. However, it is key to evaluate whether this pattern is the same using other sources of food, such as pollen, or in other geographic regions.
Hydroponic technologies have increased the cultivated area under greenhouses covered with UV filter polyethylene film. However, there is a concern about the antioxidant contents of lettuces produced ...under these systems. In this study, it was compared to the antioxidant contents of green and red leaf lettuces produced in two hydroponic systems in a greenhouse, against the ones produced with the conventional cultivation system by Colombian farmers. The antioxidant analysis revealed significant statistical differences for DPPH and Anthocyanin analyses (P=0) versus all other culture systems. The best results were obtained in the conventional cultivation. Red lettuce obtained the highest value of FRAP (655.3±82.6 mgAAE 100g-1), ABTS (17.8±6.9 mmolTE 100g-1), total phenols (680.2±69.3 mgGAE 100g-1) and anthocyanin (126.2±6.9 mgC3G 100g-1). Green lettuce exhibited the most antioxidant activity of DPPH (20.7±5.6 mmolTE 100g-1). These results suggest a detrimental effect of the greenhouse covered with UV filter polyethylene film in the antioxidant production of lettuce. Finally, red leaf lettuce showed better antioxidant capacity independent of the cultivation system.
The increase in the demand for Hass avocado has brought a rise in the generation of inedible waste such as peel and seed, by-products that are rich in bioactive substances. In the present study, ...aqueous, ethanolic, and supercritical fluid extracts were obtained from fresh seed and dry seed, which were analyzed to determine the antioxidant capacity measured through 2,2-diphenyl-2-picrylhydrazyl free radical (DPPH); 2,2′-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid (ABTS), ferric reducing antioxidant power (FRAP) and oxygen radical absorbance capacity (ORAC) methods as well as the content of phenolic compounds. In addition, the antimicrobial activity of strains of food interest, such as Listeria monocytogenes, Salmonella enterica Typhimurium and Escherichia coli was evaluated. The ethanolic extract of fresh seed presented the highest antioxidant and antimicrobial activity. The aqueous extract of fresh seed registered a significant antioxidant capacity but an absence of antimicrobial activity. In contrast, the ethanolic extract of dry seed showed a representative antimicrobial activity on both S. enterica Typhimurium and L. monocytogenes, but low antioxidant activity. E. coli exhibited resistance against all the assessed extracts. The results from this work highlight the opportunity to consider the Hass avocado seed extracts as a novel alternative to replace or reduce the use of synthetic antioxidant and antimicrobial additives in food.

ABSTRACT Background: Vaccinium meridionale produces fruits with a high content of anthocyanins and polyphenols with great antioxidant capacity. Objective: produce vinegar from V. meridionale ...alcoholic beverages and to determine the content of bioactive antioxidant compounds, antioxidant capacity, and cytotoxic activity on colorectal cancer cells. Methods: Wine and vinegar samples were obtained by fermentation of V. meridionale berries juice, using three extractive processes: mechanical maceration (MAC), preheating to 80 °C (CAL) and a combination of both (MIX). During acetic fermentation, titratable acidity and acetic acid content were evaluated. Fermentation progress was recorded and compared by measuring the antioxidant potential by DPPH, FRAP, and ORAC. Polyphenols, anthocyanins and hydroxycinnamic acids were quantified. Finally, the antiproliferative activity of vinegar was evaluated in SW480 colon cancer cells. Results: In acetic fermentation, yield and productivity were independent of extraction, indicating that they do not affect the biotransformation of alcohol into vinegar. The alcoholic beverages showed the highest antioxidant activity; after acetic fermentation, a decrease in antioxidant potential was observed in all three extractive processes evaluated. The different vinegar obtained by CAL and MIX, showed the highest values of antioxidant activity, polyphenols, and anthocyanins. The inhibition of the antiproliferative activity of vinegar was dose-dependent and showed an IC50 of 536 μg/mL. Conclusions: The vinegar prepared from V. meridionale berries presented an outstanding antioxidant and antiproliferative activity. The reason is the contents of bioactive compounds and their antioxidant power, which may contribute to chemoprevention in secondary cancer prevention.

Las tecnologías hidropónicas han incrementado el área cultivada bajo invernadero cubierto con películas de polietileno con filtro UV. Sin embargo, hay una preocupación acerca del contenido de ...antioxidantes de las lechugas producidas en estos sistemas. En este estudio se compararon los contenidos antioxidantes de las lechugas de hoja verde y roja producidas en dos sistemas hidropónicos bajo invernadero contra las producidas en el Sistema de cultivo convencional de los agricultores colombianos. El análisis antioxidante reveló diferencias estadísticamente significativas para las técnicas DPPH y antocianinas entre los tres sistemas de cultivo. Los mejores resultados fueron obtenidos en el cultivo convencional. La lechuga roja obtuvo el valor más alto en FRAP (655.3±82.6 mgEAA 100g-1), ABTS (17.8±6.9 mmolET 100g-1), fenoles totales (680.2±69.3 mg EAG 100g-1) y antocianinas (126.2±6.9 mgE3GC 100g-1). Las lechugas verdes mostraron la mayor actividad antioxidante para DPPH (20.7±5.6 mmolET 100g-1). Estos resultados sugieren un efecto nocivo de los invernaderos cubiertos con películas de polietileno con filtro UV en la producción de antioxidantes en lechugas. Finalmente, la lechuga de hoja roja mostró mayor capacidad antioxidante independiente del tipo de cultivo.
