Vnos akrilamida prek šolske malice in kosila : diplomsko delo

Namen našega diplomskega dela je bil oceniti tveganje za vnos akrilamida skozi šolsko malico in kosilo pri osnovnošolskem otroku. Akrilamid naj bi povzročal raka, škodljivo vplival na gensko zasnovo ...telesnih in zarodnih celic ter povzročal dedne poškodbe genov in kromosomov. Najbolj je nevaren za otroke zaradi njihove nizke telesne mase. Na osnovni šoli Zreče smo mesec dni tehtali živila, ki so možen vir akrilamida ter potem iz podatkov, ki smo jih dobili, izračunali dnevni vnos akrilamida za osnovnošolskega otroka na kilogram telesne mase. Iz rezultatov sklepamo, da so dnevni vnosni akrilamida na kilogram telesne mase v okviru povprečnih vrednosti, ki jih je podala Evropska agencija za varnost hrane v svoji raziskavi leta 2015.
