    Barley beta-glucans are soluble barley fibres, non-starch polysaccharides composed of glucose molecules in long linear polymers which are naturally occurring in barley and are measurable in foods by ... well established methods. Consumption of barley beta-glucan has been shown to reduce blood cholesterol which has been shown as a risk factor for coronary heart disease. Studies showthe cholesterol lowering effect of barley beta-glucans - particularly in hypercholesterolaemic subjects. Possible mechanisms for cholesterol-lowering effect of beta-glucans include increased viscosity in the gastrointestinal tract, delay in cholesterol absorption, and increased conversion of cholesterol into bile acids through increased fecal bile acid excretion after binding. Viscosity in the small intestine is determined by the concentration, molecular weight and solubility of beta-glucan. In the controlled human intervention trials the cholesterol lowering effect was observed when at least 3 g of minimally processed barley-beta glucans were consumed daily.
