Analiza stabilnosti repičnega olja med cvrenjem : diplomska naloga = Analysis of stability of canola oil during frying : graduation thesisJeras, NatašaNamen naloge je bil spremljanje stabilnosti repiřnega olja med cvrenjem paniranih piǴřanřjih filejev. V poskusu so bili tri dni zaporedoma v istem repiřnem olju ocvrti predhodno pripravljeni panirani ... piǴřanřji fileji. V enem dnevu je bilo opravljenih 20 zaporednih cvrenj, olje pa je bilo nato Ǵe dodatno segrevano. Skupno je bilo 60 zaporednih cvrenj in 36 ur segevanja. V repiřnem olju so bile opravljene kemijske analize (kislinsko Ǵtevilo, peroksidno Ǵtevilo, anizidinsko Ǵtevilo, maǴřobno kislinska sestava, polarne in nepolarne spojine), fizikalne analize (tořka dimljenja, lomni koliřnik, barva olja z Lovibondom), senzoriřne analize ter hitri testi (F.O.S., Fritest,Oksifrit test). Ocvrtim in predpripravljenim piǴřanřjim filejem je bila dolořena maǴřobno kislinska sestava, vsebnost polarnih in nepolarnih spojin, vsebnost maǴřobe in senzoriřna kakovost (profil barve, arome, teksture). Rezultati kemijskih in fizikalnih analiz so pokazali, da se z veřkratnim cvrenjem Íivila v vzorcih repiřnega olja poslabǴajo vse analiziranelastnosti. Vendar je bilo olje po 60 zaporednih cvrenjih Ǵe uporabno. Senzoriřne lastnosti repiřnega olja so se poslabǴale Íe po 1. cvrenju, ocvrtim piǴřanřjim filejem pa so se poslabǴale po 41. cvrenju, pojavil se je vonj po ribah in neprijetne arome.Type of material - undergraduate thesis ; adult, seriousPublication and manufacture - Ljubljana : [BF, Oddelek za živilstvo] : [N.
