  • The role of meat and meat products as functional food = Uloga mesa i proizvoda od mesa kao funkcionalne hrane

    This contribution is short review of some facts about functional properties ofmeat and meat products. The requirements for functional foods in general aredescriebd and discussed in terms of how they ... fit in between normal foods and drugs. Possible functional foods in meat area are considered - due to content of B-complex vitamins, vitamin E, minerals (Fe, Zn, Se), carnosine, anserine and glutathione as antioxidants. The content and the role of n-3 and n-6 fatty acids in meat and functional compounds (e. g. inulin) in meat products are described.
