Kako inozemski turisti doživljajo gastronomijo Slovenije = How foreign tourist to Slovenia are meeting its gastronomyLebe, Sonja Sibila ; Schiemann, KatarinaAnhold (2007) pravi, da so v današnjem globaliziranem svetu države prav dolžne prispevati v svetovno kulturno zakladnico, da ne bi prevladali samo kulturni vzori bogatih in močnih. Prav v ... gastronomiji pa lahko opazimo - primer sta Coca-cola in McDonald's - kako postaja svet uniformiran in tako revnejši, saj lahko povsod po svetu kupimo izdelke omenjenih podjetij, kar gre na račun ponudbe narodne gastronomije in s tem dediščine. Globalizacija prinaša za gastronomijo tudi izzive: mešanje kultur - tudi gastronomskih - in s tem med drugim nastanek dileme, ali so narodne kuhinje zato ogrožene? Se bodo med sabo spojile do nerazpoznavnosti in izginile v neki novi, pisani fusion cuisine? Razplet je zagotovo odvisen tudi od tega, kako bosta urejeni zaščita in promocija narodnih jedi - postati morajo torej razpoznavne. V Sloveniji je bil narejen prvi korak z izdelavo Strategije razvoja gastronomije Slovenije, ki jo je naročila 2006.
