    Lycopene is a red carotene pigment. Because of its structure with 11 conjugated and two unconjugated carbon-carbon double bonds, the later two at both ends of the molecule, pure lycopene is quite ... unstable. The all-trans lycopene that prevails in tomato fruits is prone to cis isomerization and oxidative degradation under the influence of light, heat, acids, oxygen from the air etc. Lycopene is reported as a strong antioxidant and an important biologically active compound. Interest in lycopene continues to grow following the publication of epidemiological and clinical studies associating high lycopene blood levels with reductions in cardiovascular disease incidenceand promising results in prevention and curing of some types of cancer disease (e.g. prostate cancer). Its daily consumption in normal nutrition is recommended to be about 10 mg (approximately one big cup of tomato juice or about 200 g of watermelon). Due to the growing evidence of it shealth benefits, food supplements containing lycopene in different formulations (tablets, capsules) recently appeared on the market. Analytical control of the lycopene content in such products is needed, but there is no standard method available. The aim of our work was to develop an HPLC method for the quantitative determination of lycopene in food supplements. Firstly, we studied miniaturization of the sample preparation and extraction efficiency. We optimized hydration of the sample and extraction with organic solvents. In the case of the sample containing proteins, protease was used to release lycopene. The isocratic separation was performed on a stainless-steel column Prontosil C30, (250 x 4.6 mm I.D.) with Phenomenex HPLC guard cartridgeC18 as a precolumn. PDA detector was used for quantitation with external standard of all-trans-lycopene and detection of cis isomers of lycopene. The published value of the molar coefficient of absorption was used for the calculation of the concentration of all-trans-lycopene in standard solutions.
