Coalho cheese is a dairy product typical of the Northeast region of Brazil and widely consumed by the population; however, the poor quality of the raw material used in association with the absence of ...standardization in the manufacturing process makes it susceptible to microbial contamination, mainly by Staphylococcus aureus. The objective of this study was to evaluate the influence of chitosan as a coating and incorporated in coalho cheese on S. aureus viability and the sensorial acceptance of the cheese. For this, coalho cheeses were made with chitosan in the coating or added to the curds at 5 mg mL-1, 10 mg mL-1 and 15 mg mL-1 and 1 mg g-1, 2 mg g-1 and 4 mg g-1, respectively. Products without chitosan (C) and 1% acetic acid (CA) were used as controls. The bacterial inhibition of chitosan in the artificially contaminated samples was assessed by comparing the viable cell count of S. aureus (ATCC 6538) in each treatment over five time intervals (0, 4, 8, 12 and 16 d storage). Product C was evaluated for moisture and fat content. The sensorial and shelf stability analyses were performed with the control and chitosan treated samples at the most efficient antibacterial concentrations. The sensorial analyses were performed with 100 consumers. Chitosan antimicrobial activity was observed in all treatments; however, the highest concentrations of chitosan added as a coating and to the cheese, 15 mg mL-1 and 4 mg g-1, respectively, inhibited S. aureus. The moisture and fat contents met the standards established by the Brazilian legislation. Regarding stability, the samples complied with the regulatory microbiological limits and presented acceptable pH, acidity and water activity values. As far as sensorial acceptance was concerned, the scores corresponded to hedonic concepts between "I liked it slightly" and "I liked it a lot", with an improvement in the texture of the products when chitosan was incorporated. Acceptability values were higher than 70%, except for the taste the products with chitosan covering them, which was 68.3%. It can be inferred from the results that the use of chitosan as a coating and incorporated in coalho cheese is a favourable alternative for the preservation of this product and has potential commercial applicability.

Thirty-day-old male Wistar rats were randomly distributed into two groups: a control (C) group fed a standard rat chow and an obese (Ob) group alternately fed one of four palatable high-fat diets. Each diet was changed daily, and the rats were maintained on their respective diets for 15 (C15 and Ob15) and 30 (C30 and Ob30) consecutive weeks. Obesity was determined by adiposity index.
The Ob15 group was similar to the C15 group regarding the expression of myocardial collagen type I; however, expression in the Ob30 group was less than C30 group. The time of exposure to obesity was associated with a reduction in collagen type I in Ob30 when compared with Ob15. Obesity did not affect collagen type III expression.
This study showed that the time of exposure to obesity for 30 weeks induced by unsaturated high-fat diet caused a reduction in myocardial collagen type I expression in the obese rats. However, no effect was seen on myocardial collagen type III expression.
Background: Obesity is defined by excessive accumulation of body fat relative to lean tissue. Studies during the last few years indicate that cardiac function in obese animals may be preserved, ...increased or diminished. Objective: Study the energy balance of the myocardium with the hypothesis that the increase in fatty acid oxidation and reduced glucose leads to cardiac dysfunction in obesity. Methods: 30-day-old male Wistar rats were fed standard and hypercaloric diet for 30 weeks. Cardiac function and morphology were assessed. In this paper was viewed the general characteristics and comorbities associated to obesity. The structure cardiac was determined by weights of the heart and left ventricle (LV). Myocardial function was evaluated by studying isolated papillary muscles from the LV, under the baseline condition and after inotropic and lusitropic maneuvers: myocardial stiffness; postrest contraction; increase in extracellular Ca2+ concentration; change in heart rate and inhibitor of glycolytic pathway. Results: Compared with control group, the obese rats had increased body fat and co-morbities associated with obesity. Functional assessment after blocking iodoacetate shows no difference in the linear regression of DT, however, the RT showed a statistically significant difference in behavior between the control and the obese group, most notable being the slope in group C. Conclusion: The energy imbalance on obesity did not cause cardiac dysfunction. On the contrary, the prioritization of fatty acids utilization provides protection to cardiac muscle during the inhibition of glycolysis, suggesting that this pathway is fewer used by obese cardiac muscle.
Abstract Changes in eating habits generated a demand for processed foods. The use of bovine liver in processed foods provides nutritional enrichment; the use of oatmeal promotes moisture and fat ...substitution. This study evaluated hamburger-type products derived from bovine liver. Three formulations were prepared using bovine liver and containing 0%, 5%, and 10% oatmeal. The products were evaluated for moisture, protein, carbohydrates, lipids, and ash contents and presence of thermotolerant coliforms, coagulase positive staphylococci, Salmonella sp., Bacillus cereus, and Clostridium sulfite reducers. Yield percentage, sensory acceptance, and purchase intent were evaluated through child and adult sensory panels. The products with oatmeal presented lower lipid content and higher carbohydrate content than products without oatmeal. The microbiological analysis showed products with counts < 10 CFU/g for thermo-tolerant coliforms and coagulase positive staphylococci, and absence of Salmonella sp., Bacillus cereus, and Clostridium sulfite reducers. The child sensory panel classified the products using hedonic terms; this group demonstrated interest in consuming the products. The adult sensory panel classified the 5% oatmeal product with the best acceptability indexes. This group demonstrated satisfactory purchase intent. It is concluded that the use of bovine liver as a raw material for the production of hamburger-type products is feasible.

In addition, this study verified whether the decrease in mRNA expression was caused by a reduction in thyroid hormone.
Thirty-day-old male Wistar rats were distributed in two groups: control (C) and obese (Ob). The C group was fed a standard diet and the Ob was fed with high-fat diets for 15, 30 and 45 weeks. Obesity was defined by adiposity index. The gene expression was assessed by quantitative real-time PCR.
The adiposity index was higher in the Ob compared to the C after all periods. While obesity at 15 and 45 weeks resulted in a reduction in mRNA of sarcoplasmic reticulum Ca2+- ATPase (SERCA2a), Na+/Ca2+ exchanger (NCX), and calsequestrin (CSQ), L-type Ca2+ channels, ryanodine receptor, SERCA2a, phospholamban (PLB), NCX, and CSQ expression were increased compared to the C after 30 weeks. There was no significant association between T3 levels and mRNA expression.
Our data indicate that obesity over the short and long periods of time may promote alteration in gene expression of Ca2+ homeostasis regulatory proteins without influence by thyroid hormone.
Biomphalaria glabrata snails constitute the main vector of schistosomiasis in Brazil, and Bauhinia monandra Kurz, the leaves of which contain BmoLL lectin with biocidal action, is a plant widely ...found on continents in which the disease is endemic. This work describes the composition of B. monandra preparations and the effect on embryos and adult snails, their reproduction parameters and hemocytes. We also describe the results of a comet assay after B. glabrata exposure to sublethal concentrations of the preparations. Additionally, the effects of the preparations on S. mansoni cercariae and environmental monitoring with Artemia salina are described. In the chemical evaluation, cinnamic, flavonoid and saponin derivatives were detected in the two preparations assessed, namely the saline extract and the fraction. Both preparations were toxic to embryos in the blastula, gastrula, trochophore, veliger and hippo stages (LC50 of 0.042 and 0.0478; 0.0417 and 0.0419; 0.0897 and 0.1582; 0.3734 and 0.0974; 0.397 and 0.0970 mg/mL, respectively) and to adult snails (LC50 of 6.6 and 0.87 mg/mL, respectively), which were reproductively affected with decreased egg deposition. In blood cell analysis, characteristic cells for apoptosis, micronucleus and binucleation were detected, while for comet analysis, different degrees of nuclear damage were detected. The fraction was able to cause total mortality of the cercariae and did not present environmental toxicity. Therefore, B. monandra preparations are promising in combating schistosomiasis since they can control both the intermediate host and eliminate the infectious agent, besides being safe to the environment.

Considerando que um rótulo apresente mais clareza e legibilidade nas informações nutricionais dos produtos alimentícios foram estabelecidas a RDC nº 429 e a Instrução Normativa nº 75 em 8 de outubro de 2020. Nas novas normas regulamentadoras, dentre as modificações da rotulagem incluem-se, a utilização de rotulagem nutricional frontal nas embalagens, fornecendo informações acerca dos nutrientes que são considerados relevantes para a saúde do consumidor e a tabela nutricional que deve apresentar as informações sobre determinados nutrientes. Essas modificações no rótulo nutricional, contribuem para que o consumidor possa realizar escolhas alimentares mais adequadas e saudáveis.

A Hipertensão Arterial Sistêmica (HAS) é uma Doença Crônica Não Transmissível (DCNT) que pode ser causada por fatores de risco não modificáveis e modificáveis. Dentre os minerais, o potássio tem ...demonstrado uma função importante no controle da pressão arterial. Diante disso, o objetivo do estudo foi realizar uma revisão narrativa de literatura acerca da importância do potássio na dieta sobre a regulação da pressão arterial. Para tanto, foram utilizadas para a pesquisa, as bases de dados Periódicos Capes e livro do período entre 2004 e 2022. Dentre os principais achados científicos, foi evidenciado que, o aumento da ingestão de potássio através do consumo de frutas, legumes e verduras que são os alimentos com maiores concentrações desse mineral contribui para a prevenção e o tratamento da HAS, pois, uma ingestão de potássio de 3,5 g/dia a 4,7 g/dia demonstra ter efeitos diretos na diminuição da pressão arterial.
