Red beetroot (Beta vulgaris rubra) is an important raw material of plant origin with proven positive effects on the human body. They can be eaten raw, boiled, steamed and roasted. Red beetrooot is a ...rich source of minerals substances (manganese, sodium, potassium, magnesium, iron, copper). Beetroot contains a lot of antioxidants, vitamins (A, C, B), fiber and natural dyes. Red beetroot is also rich in phenol compounds, which have antioxidant properties. These colorful root vegetables help protect against heart disease and certain cancers (colon cancer). In this work we evaluated content of total polyphenols and antioxidant activity in red beetroot. Samples of plant material were collected at full maturity stages from areas of Zohor, Sihelné, and Sliač. Zohor, Sihelné, and Sliač are areas without negative influences and emission sources. Samples of fresh red beetroot were homogenized and were prepared as an extract: 50 g cut beetroot extracted by 100 ml 80% ethanol for sixteen hours. These extracts were used for analyses. The content of the total polyphenols was determined by using the Folin-Ciocalteu reagent (FCR). The absorbance was measured at 765 nm of wavelength against blank. Antioxidant activity was measured using a compound DPPH˙ (2.2-diphenyl-1-picrylhydrazyl) at 515.6 nm in the spectrophotometer. In the present experiment it was detected, that total polyphenols content in samples ranges from 820.10 mg/kg to 1280.56 mg/kg. Statistically significant highest value of total polyphenols was recorded in beetroot in variety of Renova from locality of Sliač (1280.56 ±28.78 mg/kg). Statistically significant the lowest content of total polyphenols was recorded in beetroot in variety of Renova from the village Sihelné (820.10 ±37.57 mg/kg). In this experiment the antioxidant activity in beetroot was evaluated and compared. The values of antioxidant activity were in interval from 19.63% to 29.82%.
Carrot (Daucus carota L. s sp. sativus (Hoffm.) Arcang.) is a significant source of vitamins (A, B, C) and beta carotene. Further it contains vitamins B, C, E, H, folic acid and pantothenic acid. ...Carrot is an important source of trace elements (K, Na, Ca, Mg, P, S, Mn, Fe, Cu and Zn). Consumption of carrot improves eyesight, lowers cholesterol and improves digestion. In this work we evaluated and compared content of total polyphenols, ß-caroteneand antioxidant activity in five varieties of carrot (’Jitka’, Kardila’, Katlen , Rubína’ and Koloseum) Samples of carrot were collected at full maturity stages from area of Bardejov. Samples of fresh carrot were homogenized (25 g) in 50 ml 80 % ethanol and analysed after sixteen hours. The content of the total polyphenols was determined by using the Folin-Ciocalteu reagent (FCR). The content of ß-carotene was determined spectrophotometricaly at 450 nm. Antioxidant activity was measured using a compound DPPH (2.2-diphenyl-1-picrylhydrazyl) at 515.6 nm using spectrophotometer. Total polyphenols content in samples ranged from 81.25 ± 13.11 mg/kg to 113.69 ± 11.57 mg/kg and content of ß-carotenes ranged from 24.58 ± 2.38 mg/kg to 124.28 ± 3.54 mg/kg. We also evaluated and compared the antioxidant activity in selected varieties of ca rrot, which varied from 6.88 ± 0.92 % to 9.83 ± 0.62 %. Statistically si gnificant the highest value of total polyphenols was recorded in variety of Koloseum (113.69 ± 11.57 mg/kg). This variety is also character ized by the highest content of ß- carotene (124.28 ± 3.54 mg/kg) as well as the highest value of antioxidant activity (9.83 ± 0.62 %).
Onion, leek and garlic as onion family are a great source of freely available health-promoting and chemoprotective compounds (polyphenols, flavonoids, fructooligosaccharides, thiosulfinates and other ...sulfur compounds, vitamins). Chemoprotective compounds belong between natural components. Onion, garlic and leek have high nutritional value. They are an important component of our human diet and we used them as a preventive factor for many diseases of civilization (cancer, coronary heart diseases, and atherosclerosis). In this work we watched and evaluated content of total polyphenols and antioxidant activity in onion, garlic and leek. Samples of plant material (onion, garlic and leek) we collected at the stage of full maturity in the area of Pružina. Pružina is area without negative influences and emission sources. Samples of fresh onion, garlic and leek were homogenized and were prepared an extract: 25 g cut onion, garlic and leek extracted by 50 ml 80% ethanol accourding sixteen hours. These extracts were used for analyses. The content of the total polyphenols was determined by using the Folin-Ciocalteu reagent (FCR). Antioxidant activity was measured by using a compound DPPH (2.2-diphenyl-1-picrylhydrazyl). In the present experiment it was detected, that total polyphenols content in samples ranges from 210.67 mg/kg (leek) - 429.58 mg/kg (onion). Statistically significant highest value of total polyphenols was recorded in onion (389.64 to 429.58 mg/kg). Statistically significant the lowest content of total polyphenols was recorded in leek (210.67 - 254.80 mg/kg). Another indicator that has been evaluated and compared was the antioxidant activity of onion, garlic and leek. Statistically significant highest value of antioxidant activity was recorded in onion (20.22 - 25.76%). Statistically significant the lowest value of antioxidant activity was recorded in garlic (4.05 - 5.07%). Based on the measured values of AOA in onion, garlic and leek samples can be classified as follows: onion (20.22 - 25.76%) > leek (8.55 - 12.92%) > garlic (4.05 - 5.07%).
Spinach (Spinacia oleracea L.) is an important source of bioactive compounds. It is commonly consumed fresh or frozen products. Spinach is rich sources of polyphenols, it is a good source of vitamin ...C and has potential beneficial properties for human health. This study provides some knowledge about content of total polyphenols, and antioxidant activity in selected varieties of fresh and frozen spinach samples. Four spinach cultivars (̓Boa ̓, ̓ Hudson ̓, ̓Chica ̓, ̓Trombone ̓) were analysed. The content of the total polyphenols (TPC) was determined by the Folin-Ciocalteu reagent (FCR). Antioxidant activity (AA) was measured using a compound DPPH (2,2-diphenyl-1-picrylhydrazyl). The content of total polyhenols in fresh samples of spinach ranged from 975 ±97.15 mg.kg to 1493 ±50.42 mg.kg and values of antioxidant activity were in interval from 77.55 ±0.34% to 82.57 ±0.83%. The highest level of TP content in fresh spinach was recorded in variety Hudson (1493 mg.kg-1) and the lowest in variety Chica (975 mg.kg). Between these varieties statistically significant difference in the content of total polyphenols was found. The highest value of antioxidant activity in fresh spinach was recorded in variety Trombone (82.57%) and the lowest in variety Boa (78.59%). This difference was also statistically significant. The highest level of TP content in frozen spinach samples was found in variety Hudson (1749 mg.kg) and the lowest in variety Chica (855 mg.kg). The values of antioxidant activity in frozen spinach samples were in range from 45.86 ±7.84% to 79.67 ±0.88%. The highest value of antioxidant activity in frozen spinach was found in variety Hudson (79.67%) and the lowest in variety Chica (45.86%).
Onion (Allium cepa L.) is one of the most important vegetable crops widely consumed in the world. The bulb onion is grown as fresh shoots and as bulbs for consuming uncooked, cooked, and pickled or ...production of seed and sets. They can be eaten raw, boiled, steamed and roasted. Onion has high nutritional value. Onions are a good source of vitamins, minerals and major component like polyphenols, flavonoids, fructooligosaccharides, thiosulfinates and other sulfur compounds. Polyphenols belong to significant antioxidants in human diet. Antioxidant compounds (polyphenols, flavonoids) scavenge free radicals, inhibit the oxidative mechanisms that lead to degenerative diseases. Antioxidant compounds in food play an important role as a health protecting factor. Onions have a wide range of beneficial properties for human health, such as anti-cholesterolaemic, anti-mutagenic and antioxidant capacity. In this work we evaluated content of total polyphenols and antioxidant activity in selected varieties of onion. Samples of plant material we collected at the stage of full maturity in the locality of Pružina. Pružina is locality without negative influences and emission sources. Total polyphenols content and antioxidant activity were measured in six varieties of onion, namely in red variety (Red matté), in yellow varieties (Boston, Bingo, Sherpa) and white varieties of onion (Diamond, White dry). The content of the total polyphenols was determined by using the Folin-Ciocalteu reagent (FCR). Antioxidant activity was measured by using a compound DPPH˙. In the present experiment it was detected, that total polyphenols content in samples ranges from 142.01 mg.kg GAE (white variety of onion- White dry) to 1083.04 mg.kg GAE (red variety of onion- Red matté). Statistically significant highest value of total polyphenols (1083.04 mg.kg GAE) was recorded in variety Red matté. Another indicator that has been evaluated and compared was the antioxidant activity. The values of antioxidant activity were in interval from 7.74% to 41.67%. Based on the measured values of antioxidant activity in onion the samples can beclassified as follows: Red matté (41.67%) > Boston (25.77%) > Sherpa (24.34%) > Bingo (19.54%) > White dry (8.10%) > Diamond (7.74%).
Sulphur is one of the most important elements in plants. Sulphur also positive influences on growth functions (nitrogen metabolism, enzyme activity and protein and oil synthesis), yield and quality ...bulbs of onion. In this experiment was watched the progress of making the total polyphenols content in different levels of fertilizer sulphur in onion during vegetation. In the work we watched also the influence of sulphur fertilization on the antioxidant activity. Sulphur was added in amounts 7.3 mg.kg-1 S, 11 mg.kg-1 S and 14,6 mg.kg-1 S. Samples of fresh onion we collected at the beginning, in the middle and in the end of vegetation period and we prepared an extract: 50 g cut onion extracted by 100 ml 80% ethanol according sixteen hours. These extracts were used for experiment. The content of total polyphenols was estimated by using Folin-Ciocalteau reagent. The absorbance was measured at 765 nm of wave length against blank. Antioxidant activity was measured using a compound DPPH˙ (2.2-diphenyl-1-picrylhydrazyl) at 515.6 nm in the spectrophotometer. Our values of total polyphenolic content during vegetation period were in range from 508.16 ±27.59 mg.kg-1 to 638.2 ±12.84 mg.kg-1. The highest content of total polyphenolics was recorded at the end of the vegetation period (638.32 ±12.84 mg.kg-1) in III. sampling (incorporation of sulphur in quantity of 14.6 mg S.kg-1soil). This increase was statistically significant (P-value = 2.10-3). The lowest content of total polyphenols was measured in the middle of vegetation period (415.41 ±13.32 mg.kg-1) in II. sampling (incorporation of sulphur in quantity of 11 mg S.kg-1soil). Another indicator that has been evaluated and compared was the influence of sulphur fertilization on the antioxidant activity. The highest values of antioxidant activity were recorded at the end of vegetation period in all variants. The lowest value of antioxidant activity (25.41 ±7.67%) was measured in three sampling in II.variant.
Stress effects of triazine herbicide on cumulating of important macroelements (phosphorus, potassium, calcium and magnesium) into the grain of barley variety Kompakt, as well as the elimination of ...its negative effect through the addition of regulators of polyamine synthesis (γ-aminobutyric acid and propylenediamine) were investigated in pot trial. These morphoregulators are degrading products of polyamines and hypothetically after foliar application they should support their biosynthesis which increased level act against stress in plants. Application of the herbicide alone in comparison to control variant reduced the contents of all mentioned macroelements in grain of barley and also in variants, where the mixtures of herbicide with regulators of polyamine biosynthesis were applied, also the values of contents of all macroelements (except of magnesium) in barley grain were reduced (in comparison to this variant). It could be summarized that the presence of regulators in mixtures with triazine herbicide in comparison to control variant had not positive effects on contents of these biogenic elements in grain. By the comparison of variant with the applied herbicide with variants, where also regulators of polyamine synthesis were applied, there was the most positive influence of these mixtures of morphoregulators on statistically non-significant accumulation of phosphorus into generative organs of spring barley and in the case of positive accumulation of magnesium into these plant tissues there was statistically significant relation only after application of mixtures of herbicide with propylenediamine. Positive influence on accumulation of calcium was evaluated only after using of mixtures of herbicide with propylenediamine (statistically significant relation was recorded at the dose 29.6 g.ha-1).
Phenolic compounds are the predominant antioxidants in nutrition and their study is currently being paid much attention. These antioxidants act synergistically; polyphenol compounds protect vitamin C ...and β-carotene, which in turn helps to increase the effect of vitamin E. Potatoes are very popular vegetables in Slovakia, not only in terms that they are easy to prepare, but also by the fact that they combine the wholesomeness of cereals and delicacy and characteristic chemical composition of vegetables. It is important that they find their place in our diet. Nutritional value of potatoes is determined by the content of nutrients such as protein, starch, fat, minerals, and absence of toxins, as well as by a significant content of bioactive components from the group of polyphenols. The study was performed in order to analyse 7 Slovak potato varieties from Spiš area, according to biologically active compounds: such as polyphenols. The content of total polyphenols was determined by the method of Lachman et al., (2003). The lowest determined content of total polyphenol (mg.kg-1 dry matter) in locality Spišský Štvrtok was measured in a variety Victoria (795.05 mg.kg-1 dry matter) and the highest content of total polyphenols in locality Spišský Štvrtok was measured in variety Laura (1238.42 mg.kg-1 dry matter). In the locality Odorín was determine the lowest content of total polyphenols in variety Red Anna (974.09 mg.kg-1 dry matter) and the highest content of total polyphenols was determined in variety Laura (978.95 mg.kg-1 dry matter). Between all varieties in locality Spišský Štvrtok was confirmed the statistically significant difference in the influence of the variety in the contents of total polyphenols (mg.kg-1 DM). This varietal dependence was not appear in samples taken in the locality Odorín. The total polyphenols content of the potatoes can be influenced by other factors, for example locality. In this case, there were statistically significant differences in the content of total polyphenols in variety Laura obtained from two different localities.
The work was aimed at assessment of quality of strawberry based on the contents of heavy metals as well as the possible correlations between selected heavy metals in soil and strawberries. The ...results revealed that from all observed metals in soil determined in aqua regia only in the case of cadmium the maximum permissible limit in comparison with the limit resulting from the Law No. 220/2004 as well as threshold values proposed by European Commission (EC) (2006) has been exceeded. In our paper the values of cadmium in the soil representing 1.86 to 2.41Â times higher values than limit valid in the Slovak Republic (0.7Â mg/kg) and 2.6 to 3.38Â times higher in comparison to EC (0.5Â mg/kg). In our study in 1Â M NH âNO â the values of lead ranged from 0.125 to 0.205Â mg/kg representing values exceeded the limit valid in Slovak Republic (0.1Â mg/kg) about 0.037â0.105Â mg/kg. Despite exceeded values of heavy metals in soil, no values above the limit directly in strawberries when compared to Food Codex of Slovak Republic as well as to Commission Regulation 1881/2006 were recorded. Among the varieties statistically significant differences (P < 0.05) in intake of heavy metals were found.
