Food waste is a serious problem worldwide. There is a lot of waste in the food sector, while we still have a significant percentage of people who do not have enough to have a food that can cure their ...hunger. These asymmetries generate many controversies around the world. This study aimed to map the amount of food waste generated in restaurants located in a medium-size city in the south of Brazil as soon as generate alternatives to increase the circularity of wasted food. A survey was carried out based on the database of companies registered in the city hall files, where 177 valid responses were obtained. The results show that the largest wasted volumes generated in the three stages of food production analyzed in this research are vegetables, carbohydrates, meat and bones. However, this order is reversed when we consider the loss of revenue caused by waste: meat and bones, followed by vegetables and carbohydrates. Considering a total of 177 establishments surveyed, there is an average waste of 339 kg/month (or 13 kg/day) per restaurant, with loss of revenue of R$ 2577.85/month/establishment. These results are significant indicators that justify investments to reduce these losses and also to identify new ways to take advantage of the surplus materials, so that they can generate a second use for some other productive segment or chain. The study contributes to this discussion by presenting ways to increase the circularity of wasted food. It represents an important contribution to rethink food waste and make it an alternative for efficient and optimized use.
Background: The purpose of this study is to analyze the adoption and implementation of technologies related to Industry 4.0 and the integration with circular economy (CE) to minimize the effects of ...resource scarcity in emergency situations. Method: The study was developed in two stages: The first consists of a systematic review of the literature for analytical categorization of the technologies of Industry 4.0 that can be useful for implementation in the circular economy. In the second step, empirical validation was carried out with 45 foodtech startups from the agribusiness value chain, farm to table, reuse, and waste management and disposal segments. Results: The contributions of the study show that: (i) The business models of startups in the food segment are closely aligned with the assumptions of circular economy. (ii) The technologies of industry 4.0 are supporting the implementation of circular economy in foodtech companies. (iii) Digitization, traceability, software as a service, traceability, digital solutions, and shared platforms occupy the leadership in the interface between CE and industry 4.0. (iv) Partnerships are strategic elements in the creation of innovative ecosystems for the success of foodtech startups. Conclusions: We conclude this paper with a diagnosis about companies involved in the foodtech segment in addition to the proposition of a business and sectorial agenda to consolidate the Industry 4.0 technologies in order to promote circular economy.
The objective of this work is to analyze the profile of Brazilian dissertations and theses that deal with circular economy and its alignment with the Sustainable Development Goals (SDGs). A ...systematic literature review was developed with a portfolio of 96 theses and dissertations published in the Brazilian Digital Library of Theses and Dissertations (BDTD). The results suggest that SDGs 9, 12 and 17 have a closer synergy with the circular economy in the bibliographic portfolio analyzed. Based on the existing gaps for engagement with the other 14 SDGs, a research agenda was prepared with 93 research opportunities and 6 exploratory theoretical propositions for future validation in theoretical-empirical studies.
Companies strive for superior results. Focusing on return, performance, and profitability is mainstream; this reasoning is constantly present in the decisions of the strategic operational management ...of companies. Based on this assumption, the objective of this work is to evaluate empirically whether the degree to which a company implements a combination of Just in Time (JIT) or Lean Manufacturing practices systematically affects the company's operational, financial, and/or organisational performance. For this, a meta-analysis was carried out; the final sample consisted of 28 articles, with 41 studies and 12,708 included subjects who provided the effects that explain the proposed relationship. The data were collected in the Web of Science, EBSCO, and Science Direct databases, with an open period, considering all works available until July 2020. Among the main findings, JIT practices and the company's operational performance present a positive, significant, medium effect. Lean manufacturing practices demonstrate a positive and significant relationship in operational, financial, and organisational performance, all with an average impact on the effect size. No direct relationship was found between the JIT variables and organisational performance (financial, operational, and environmental), based on the TBL. Additional research is needed regarding the relationship of JIT and Lean Manufacturing practices with the organisational performance (financial, operational, and environmental) based on the TBL, as well as an in-depth analysis of previous research related to green Lean practices and their relationship with organisational performance, based on the TBL.
