  • Reološke lastnosti vina : doktorska disertacija = The rheological properties of wine : dissertation thesis
    Košmerl, Tatjana
Forty samples of red and white bottled wines from three winegrowing regions of Slovenia were characterised by chemical analysis. Some physico-chemical parameters, i.e. density, viscosity, electrical ... conductivity, refractive indexand osmolality were measured. Density as well as viscosity of wine decreases non-linearly with increasing temperature in the temperature range from 293 K to 323 K. From the density data the expansibility coefficients at 298 K and their temperature dependence were calculated. It was found that a modified Andrade equation satisfactorily describes the temperature dependence of viscosity of wine. Some correlation between wine density or wine viscosity at 293 K and the sum of the concentration of ethanol, reducing sugar and sugar- free extract were found. Correlations between activation energy of viscous flow, calculated by means of the Arrhenius relation, and the concentration of some solutes were also significant. The relation between refractive index measured at 293 K and viscosity or the concentration of reducing sugar was statistically significant. Electrical conductivity was correlated with pH value, total titratable acidity and the sum of individual concentrations of minerals. The concentration of ash was calculated from the electrical conductivity at 293 K and the concentration of total extract. A linear simple correlation between the osmolality and viscosity of wine was found for all wines investigated. The statistically insignificant correlation between osmolality and electrical conductivity proves that osmolality depends mainly on the concentration of non-electrolyte solutes.
