Raznolikost populacije kvasovk moštov refošk in teran ob začetku fermentacije : diplomska naloga = Diversity of yeast population in Refosco and Teran must at the beginning of fermentation : graduation thesisPrinčič, MajaFermentacija moǴta v vino je yelo dinamiřen proces, katerega vodijo rayliřne vrste kvasovk. NaǴ namen je bil ugotoviti vrstno sestavo populacije kvasovk prisotnih v moǴtu refoǴka in terana takoj po ... stiskanju groydja. 30 iyolatov vinskih kvasovk smo analiyirali y metodo PCR ribotipiyacije in jih na osnovi restrikcijskih profilov uvrstili v osem skupin. Po pregledu morfologije vegetativnih celic in spor ter opravljenih biokemijskih in fiyioloǴkih testih smo naǴe skupine sevov identificirali. Pravilnost identifikacije smo preveriliy PCR ribotipiyacijo tipskih sevov. Reyultati so pokayali, da pri fermentaciji moǴta terana sodeluje veř rayliřnih vrst kvasovk, kot pri fermentaciji moǴta refoǴka. V kraǴkem vinorodnem okoliǴu najdemo vrste Torulaspora delbrueckii, Pichia guillermondii, Rhodotorula mucilaginosa in Hanseniaspora uvarum, katerih ne najdemo v koprskem vinorodnem okoliǴu. Na drugi strani pa vrste Metschnikowia pulcherrima, Pichia membranaefaciens in Issatschenkia occidentalis ne najdemo v kraǴkem vinorodnem okoliǴu. Y elektoforetsko kariotipiyacijo smo poskuǴali raylikovati kvasovke ynotraj vrste. Analiya kvasovk rodu Pichia je pokayala, de je CHEF metoda dobro obřutljiva, yanesljiva, ponovljiva ter raykriva raynolikost med sevi iste vrste.Type of material - undergraduate thesis ; adult, seriousPublication and manufacture - Ljubljana : [M.
