This paper will try to sketch the conceptual transformations of the Mediterranean diet from the second half of the 20th century to the present. This undoubtedly popular food model, which combines ...various food cultures of the Mediterranean, was initially recognized due to its health benefits, contributing to the prevention of cardiovascular diseases. The initial impulse for the global popularity of the Mediterranean food culture, which came from medical and nutrition sciences, has helped simplify, in the long run, the complex food systems of the Mediterranean, which have been recognized as a homogeneous culinary and cultural pattern since the 2000s. After the Mediterranean diet was inscribed on the UNESCO Representative List of the Intangible Cultural Heritage of Humanity in 2010, the understanding of this food culture changed. Today, the Mediterranean diet is being examined within the context of sustainable development policies and the protection of biodiversity and ecosystems with the aim of developing new long-term political and economic models within the necessary transformations of present food systems towards greener and more sustainable solutions.
Ovaj rad nastoji opisati i kontekstualizirati dio kulinarskih praksi muškaraca starije generacije na otoku Hvaru koje se ne realiziraju u okviru svakodnevice kućanskih poslova, nego kao dio ...društvenih praksi slobodnog vremena. Nasuprot rutinizirana i svakodnevna ženskog kuhanja koje se promatra unutar koncepta brižnog rada, ovakve muške kulinarske prakse pripadaju dokolici, no raspon značenja koja muškarci pridaju privatnom kuhanju velik je i višeznačan. Ne istražujući pomnije implikacije rodnih uloga u kuhinji, ovaj će rad nastojati osvijetliti muške kulinarske prakse i rituale, osobito one povezane s društvenim životom, a čiji se identitetski potencijal i važnost te značenje u prijenosu kulinarskog znanja sasvim previđaju.

The practices are not realized as everyday housework, but as part of social practices of free time. In contrast to the routinized everyday female cooking typically described through the concept of caring labor, male culinary practices belong to leisure. Still, the range of meanings that men attribute to private cooking is wide and varied. Without going in detail into the implications of gender roles, this article is an attempt to shed light on male culinary practices and rituals, particularly those related to social life. Their identity potential and importance, as well as significance in the transfer of culinary knowledge, is frequently completely overlooked.

Prostate tumors make metabolic adaptations to ensure adequate energy and amplify cell cycle regulators, such as centrosomes, to sustain their proliferative capacity. It is not known whether ...cancer-associated fibroblasts (CAFs) undergo metabolic re-programming. We postulated that CAFs augment lipid storage and amplify centrosomal or non-centrosomal microtubule-organizing centers (MTOCs) through a pigment epithelium-derived factor (PEDF)-dependent lipid-MTOC signaling axis. Primary human normal prostate fibroblasts (NFs) and CAFs were evaluated for lipid content, triacylglycerol-regulating proteins, MTOC number and distribution. CAFs were found to store more neutral lipids than NFs. Adipose triglyceride lipase (ATGL) and PEDF were strongly expressed in NFs, whereas CAFs had minimal to undetectable levels of PEDF or ATGL protein. At baseline, CAFs demonstrated MTOC amplification when compared to 1-2 perinuclear MTOCs consistently observed in NFs. Treatment with PEDF or blockade of lipogenesis suppressed lipid content and MTOC number. In summary, our data support that CAFs have acquired a tumor-like phenotype by re-programming lipid metabolism and amplifying MTOCs. Normalization of MTOCs by restoring PEDF or by blocking lipogenesis highlights a previously unrecognized plasticity in centrosomes, which is regulated through a new lipid-MTOC axis.This article has an associated First Person interview with the first author of the paper.

Suurednica je zbornika Mediterranean Food: Concepts and Trends (2006), koji donosi radove s 15. skupa Med strok signunarodnog povjerenstva za etnološko istraživanje prehrane održanog u Dubrovniku 2004. godine, te zbornika Turist kao gost: prilozi kulinarskom turizmu (2009). Nives Rittig Beljak bila je članica etnoloških udruženja International Society for Ethnology and Folklore, International Commisson for Ethnological Food Research, Hrvatskog etnološkog društva te članica drugog mandata u Savjetu za nacionalne manjine Republike Hrvatske.
This paper gives an overview of the relevant research in the fields of cultural anthropology, ethnology, sociology and history of food that had an impact of the development of food studies, a ...platform that brings together research in food culture from the viewpoint of a variety of scholarly disciplines and subdisciplines. The paper also highlights the growing impossibility of writing about food from a single disciplinary perspective, thus underlining the need for interdisciplinary research of food in different context.
