    Mechanisms of activation of protein metabolism which appear in some tissues after legumes intake were studied. Compared chemical and biochemical analyses of three Slovene common beans: var.češnjevec, ... Semenarna 22 and Cipro and one French green lentil: var. Anicia in raw and cooked lzophilised seeds show characteristic composition of legumes, with higher amounts of crude fibre, crude proteins, starch, tannins and lower amounts of crude fat, minerals and sugars in the lentil than in the beans. Češnjevec bean and Anicia lentil were used as cooked, lzophilised and milled flour as the unique protein source (18%) in balanced diets fed ad-libitum in the semi liquid form to growing rats. The control groups were pair-fed with isoenergetic isonitrogenous balanced casein diet. Faecal nitrogen excretion, (measured for 5 consecutive days) was respectively 4.8 and 3.7 fold higher in the bean and in the lentil group, as compared to their controls. So, protein digestibility was lower (P< 0.05) in the legumes fed groups than in their controls. Biological value was not diverse in the bean group and in its control group. More over, no difference appeared in the average growth rates (measured for 15 days) so dry matter efficiency and protein efficiency were not found significantly different (P<0.05) in the 2 legumes groups and in their controls. After a total of 20 days on either diet, the rats were anesthesized and digestive contents and tissues were sampled. Considerable higher viscosity and butyric acid contents were found in digestive contents of the bean fed rats, as compared to their controls. Intestinal tissues were heavier in the legume fed groups, and higher amounts of protein, RNA and DNA were found in those tissues. No major modification of the protein, RNA and DNA contents appeared in the muscles. Protein synthesis rates, using the 13C valine large dose method, were calculated from the isotopical enrichment of free and protein bound valine. Increased FSR and ASR were found in intestinal tissues by feeding the legumes and differences were higher in the large intestine and when the cooked beans were fed. Protein synthesis in the muscles was the opposite, inhibited by legume feeding and the effect was higher in the bean group than in the lentil group for m. gastrocnemius.
