Mlečnokislinska fermentacija šampinjonov : diplomska naloga = Lactic acid fermentation of champignons : graduation thesisOmrzu, MojcaNamen raziskave je bil preučiti možnosti konzerviranja šampinjonov z mlečno kislinsko fermentacijo. Poskus je istočasno potekal v petih zaprtih šestlitrskih posodah. Šampinjoni so bili potopljeni v ... substrat, ki je bil sestavljen iz vode, sladkorja, bujona in soli. Proces fermentacije je bil voden z naslednjimi mlečnokislinskimi bakterijami: ▫{\sl Bifidobacterium bifidum, Lactobacillus acidophilus, Lactobacillus casei}▫ in dvema jogurt kulturama. Poskus je bil izveden trikrat. Prvič so bile uporabljene vse starter kulture, substrat je kot sladkor vseboval laktozo. V drugem je bila namesto laktoze uporabljena saharoza, v zadnjem v substrat ni bil dodan bujon in proces je potekal le z vrsto ▫{\sl Bifidobacterium bifidum}▫. Celoten potek fermentacije je bil zasledovan z merjenjem pH, količine titracijskih kislin ter kvalitativno in kvantitativno analizo organskih kislin s kratico HPLC metodo. Kakovost končnihizdelkov je bila ovrednotena senzorično. Na podlagi rezultatov lahko zaključimo, da fermentacijo šampinjonov saharoza bistveno bolj primeren ogljikov hidrat kot laktoza, da je izmed testiranih starter kultur za vodenje procesa najprimernejša vrsta ▫{\sl Bifidobacterium bifidum}▫ in da fermentacija pri optimalni temperaturi poteka en teden.Type of material - undergraduate thesis ; adult, seriousPublication and manufacture - Ljubljana : [M.
