Lipolitično delovanje mikroorganizmov v konzumni smetani pri različnih načinih skladiščenja : magistrsko delo = Lipolytic action of microorganisms in commercial cream at different storage conditions : master of science thesisTrkov, MarijaAvtorica je proučevala vpliv rasti sevov Enterococcus faecalis ŽM 1 in Micrococcus varians ZIM BO13 na vsebnost prostih maščobnih kislin v UHT smetani, skladiščeni pri 20, 10 in 4°C za prvi sev, ... oziroma 20°C za drugi sev. Začetne velikosti populacij dodanih sevov so bile med 4.0*10 2 in 6.9*10 2 cfu/ml. Populacije seva Enterococcus faecalis ŽM 1 so takoj prešle v eksponencialno fazo rasti, tako pri 20 kot pri 10°C. Povprečni generacijski čas je bil pri 20°C 1.3 ure, pri 10°C pa 15.3 ur. Pri 4°C sta populaciji priraščali le prvih štirinajst dni, nato pa začeli odmirati. Populaciji seva Micrococcus varians ZIM BO13 sta prešli v eksponencialno fazo rasti po 24-ih urah, s povprečnim generacijskim časom 2.6 ure. Vsebnost prostih maščobnih kislin se je najbolj povečala ob prehodu eksponencialne faze rasti v stacionarno med rastjo seva Enterococcus faecalis ŽM 1 in zgodnjo stacionarno fazo med rastjo seva Micrococcus varians ZIM BO13. Med rastjo seva Enterococcus faecalis ŽM 1 pri 4°C in v vzorcih brez dodane bakterijske populacije pri 20, 10 ter 4°C, so bile spremembe vsebnosti prostih maščobnih kislin minimalne. Senzorične napake smetane so bile posledica aktivnosti celotnega encimskega sistema preiskovanih sevov in ne le lipaz.Type of material - master's thesis ; adult, seriousPublication and manufacture - Ljubljana : [M.
