Abstract The objective of this work was to manufacture pizza dough, truffle, and cake using the paste of a by-product from the vinification of 'BRS Violeta' grape, as well as to determine some ...bromatological characteristics of these products. The by-product was pressed to remove excess must and crushed to obtain the paste. The paste, pasteurized at 80°C for 3 min and frozen at -18°C, was characterized for total phenolic compounds (TPC), total monomeric anthocyanins (TMA), and dietary fiber. The food products were characterized for the following parameters: moisture, energy value, and protein, lipid, ash, dietary fiber, total carbohydrates, and TPC contents. The contents found in the paste were: 326 mg GAE 100 g-1, for TPC; 185 mg mv35diglc 100g-1, for TMA; and 10 g 100 g-1, for dietary fibers. Based on the centesimal compositions of the food products, the pizza dough and truffle can be considered as a source of fiber and protein, respectively. The products show TPC contents between 51 and 63 mg GAE 100 g-1. It is possible to prepare food products of good nutritional quality, using grape by-product paste, to minimize waste in the field.
Resumo O objetivo deste trabalho foi elaborar massa de pizza, bombom tipo trufa e bolo, a partir da pasta de coproduto da vinificação da uva 'BRS Violeta', bem como determinar algumas características bromatológicas desses produtos. O coproduto foi prensado, para retirada do excesso de mosto, e triturado para obtenção da pasta. A pasta, pasteurizada a 80°C por 3 min e congelada a -18°C, foi caracterizada quanto aos compostos fenólicos totais (CFT), às antocianinas monoméricas totais (AMT) e à fibra alimentar. Os produtos alimentícios foram caracterizados quanto aos seguintes parâmetros: umidade, valor energético, e teores de proteínas, lipídios, cinzas, fibras alimentares, carboidratos totais e CFT. Os teores encontrados na pasta foram: o de CFT foi 326 mg GAE 100 g-1; o de AMT foi 185 mg mv35diglc 100 g-1; e o de fibra alimentar foi 10 g 100 g- 1. Com base nas composições centesimais dos produtos alimentícios, a massa de pizza e a trufa são consideradas fontes de fibras e proteínas, respectivamente. Os produtos apresentam teor de CFT entre 51 e 63 mg GAE 100 g-1. É possível preparar produtos alimentícios de boa qualidade nutricional a partir de pasta de coproduto de uva, para minimizar o desperdício no campo.
BRS Vitoria raisins were produced with a pre-treatment using a natural surfactant, i.e., extra-virgin olive oil (EVOO), to (i) better elucidate its action on the grape surface using scanning electron ...microscopy; (ii) evaluate its influence on the oleanolic and ursolic acid content of raisins through HPLC-DAD; (iii) assess raisins characteristics during 180-day storage at different temperatures by using physicochemical and microbiological analyses with multivariate-based chemometric methods (MASLT). Grapes which presented adequate physicochemical characteristics and high concentration of anthocyanins originated raisins similar to those reported in the literature. The pre-treatment accelerated the dehydration process (about 26%) mainly because of the non-uniform redistribution of the surface waxy components accompanied by the formation of microholes and cracks. The small amount of EVOO used did not affect the oleanolic acid content in raisins, yet this compound proved to resist drying, which means that there is no loss of wax during the pre-treatment. For both untreated (RW) and pre-treated raisins (RP), the main changes triggered over time were not related to microbiological characteristics. Most of the changes appeared to occur right during drying and not during storage for RW, whereas for RP the physicochemical characteristics that mostly correlated with the storage changes were total monomeric anthocyanins, total acidity, and total sugars; also, they tended to reach an equilibrium and equaled RW at the end of 180 days, especially at 35 °C. These parameters proved to be the main characteristics related to the changes triggered in raisins. For both raisins, sugar crystals were formed in the flesh, but they were not visible to the naked eye or perceived by consumers. The results show that it is highly desirable to have a high-quality product at the beginning of storage, which was possible thanks to the EVOO pre-treatment used.

Biodiesel is derived from renewable sources and can be considered as an energy alternative to partially replace diesel. However, it contains unsaturated organic molecules in its composition, which increases its tendency towards oxidative degradation when exposed to oxygen in the air and metallic ions. Consequently, this leads to alterations in the physicochemical properties of biodiesel. To inhibit or delay the oxidative process and increase the induction period, natural extracts with antioxidant properties from gabiroba leaves (Campomanesia Xanthocarpa), jabuticaba peels (Myrciaria Cauliflora), and hibiscus flowers (Malvaviscus arboreus) were added. The samples’ oxidative stability was evaluated in the presence or absence of extracts, as well as Fe2+, Fe3+, and Cu2+ ions at temperatures of 110, 115, 120, and 125 °C, obtaining the induction period values. By extrapolating the experimental data of the logarithm of the IP values at different temperatures, the storage time at room temperature was estimated without altering the values determined during the experimental assays. The use of inedible products such as peels, leaves, and flowers, with antioxidant properties, not only aligns with the recommendations and legislation of several countries but also proves to be a viable alternative to synthetic substances for delaying the oxidation reaction of biodiesel.
Abstract This study aimed to investigate the impact of porphyrin complexes with Cr 3+ on the oxidative stability of biodiesel. Specifically, it focused on assessing the induction period as well as ...the fluorescence and FTIR spectroscopy, kinetic and thermodynamic parameters of oxidation under varying temperature conditions. The concentration of the metal added in the biodiesel samples, with and without protoporphyrin IX (PPIX), was established based on previous literature. Oxidative stability tests were carried out at 105, 110, 115, and 120°C. The Cr 3+ transition metal ion exhibited low catalytic activity in biodiesel oxidation reactions, and the tests without PPIX showed lower induction period values for all temperatures. PPIX exhibited antioxidant action, delaying both the initiation and propagation stages of chain reactions responsible for the formation of free radicals, thereby enhancing the stability of the biofuel even in the presence of Cr 3+ , when compared to the same test without the addition of the compound. The fluorescence intensity of PPIX decreased as a function of the contact time with the metal ion, and the FTIR analysis of the biodiesel with PPIX presented the most significant variations in the spectra. The tests containing PPIX at all temperatures presented lower values of reaction rate than the control samples, while the test without PPIX with Cr 3+ ion resulted in higher k in comparison to control. The activation energy values ranged from 43.36 to 106.37 kJ mol −1 . The results of thermodynamic parameters indicated greater stability for biodiesel containing PPIX, with enthalpy activation (Δ H ‡ ) and entropy activation (Δ S ‡ ) values of 103.16 kJ mol −1 and ‐52.61 J.K −1 .mol −1 , respectively.

Natural polysaccharides have emerged as an important class of bioactive compounds due their beneficial biological effects. Here we investigated the protective and healing effects of ...rhamnogalacturonan (RGal) isolated from Acmella oleracea (L.) R.K. Jansen leaves in an experimental model of intestinal inflammation in mice and in heterogeneous human epithelial colorectal adenocarcinoma cells (Caco-2). The findings demonstrated that RGal treatment for 7 days reduced the severity of DSS-induced colitis by protecting mice from weight loss, macroscopic damage and reduction of colon length. When compared to the DSS group, RGal also protected the colon epithelium and promoted the maintenance of mucosal enterocytes and mucus secreting goblet cells, in addition to conserving collagen homeostasis and increasing cell proliferation. In an in vitro barrier function assay, RGal reduced the cellular permeability after exposure to IL-1β, while decreasing IL-8 secretion and claudin-1 expression and preserving the distribution of occludin. Furthermore, we also observed that RGal accelerated the wound healing in Caco-2 epithelial cell line. In conclusion, RGal ameliorates intestinal barrier function in vivo and in vitro and may represent an attractive and promising molecule for the therapeutic management of ulcerative colitis.

Soluble TNF receptors (sTNFR1 and sTNFR2) are natural endogenous inhibitors of TNF and are elevated in inflammatory, autoimmune, and chronic degenerative diseases. In Chagas disease, pleiotropic cytokine TNF is considered key in immunopathology. Thus, we aimed to evaluate the levels of TNF, sTNFR1, and sTNFR2 in the serum of patients with chronic Chagas disease. TNF and its soluble receptors were quantified using Cytometric Bead Array in the serum of 132 patients, of which 51 had the indeterminate form (IND), 39 the mild cardiac form (CARD 1), 42 the severe cardiac form (CARD 2), and 20 non-infected individuals (NI). The results indicate that the soluble receptors may regulate TNF in Chagas disease, as their leves were higher in T. cruzi-infected individuals when compared to non-infected individuals. We found a moderate negative correlation between sTNFR1 and TNF in individuals with the IND form, suggesting a relationship with non-progression to more severe forms, such as heart disease. sTNFR1 and sTNFR2 were increased in all clinical forms, but with a moderate positive correlation in more severe patients (r = 0.50 and p = 0.0005). TNF levels showed no statistical differences in the groups of patients. These findings suggest the importance of the endogenous balance of the levels of soluble TNF receptors in the protection and balance in patients with chronic Chagas disease, besides revealing the immunological complexity in chronic T. cruzi-infected individuals.
