Food safety related incidents have increased consumers’ concern about food safety and quality and led to a distrust in the Chinese food market. This paper investigates how sociodemographic variables ...affect willingness to pay (WTP) both for safer and higher quality food by identify a specific user profile. Data were collected through a consumer survey conducted in Hangzhou, Zhejiang Province, administrating 1000 questionnaires, 757 of which resulted valid. Data showed that level of education, income, being married and the place of purchase significantly influences the WTP while the ages does not affect it. WTP is elicited by using a payment card method, and its estimation is performed with interval data regression model. Results also indicates that “food quality” and “food safety” have the same impact level on the WTP, indicating certain confusion about their significance. Other study results and implication on informative and educative policies are discussed.

This article analyses the cost of diarrhoea in lambs on dairy sheep farms located in Grosseto (Italy). Farmers’ profits have recently declined due to a stable product price but increasing production costs. Animal diseases have a cascade of effects on farm productivity. Lamb enteric disease outbreaks, which result in mortality in the herd and reduced weight gain, can drastically compromise the income of farmers. An economic analysis of the impact of an outbreak of diarrhoea in lambs was thus performed, evaluating the cost of disease based on the main visible production losses (such as mortality, reduced weight gain and variation in milk production). A sensitivity analysis was also conducted by applying different observed ranges of prevalence and mortality associated with the disease. Finally, an economic scenario analysis was performed, considering different in-farm management options for delivering lambs to the abattoir, i.e. early, standard and late delivery. The results showed that a dairy sheep farm with around 300 lambs that delivers them to the abattoir at 30 days of age would experience a loss of between 50 and 1200 Euro during an outbreak of diarrhoea with a prevalence of 34.21 (23.54–44.88)% and a mortality of 15.69 (9.98–21.4)%.
Globalization in agriculture, the growth of diversification and of the complexity of the agri-food system ask for a strong investment in long life learning in agriculture. Aim of the paper is to ...analyze the evolution in some agri-food "chains" in Tuscany and in agri-tourism activities. In the first part, the focus of the paper is on the methodology used, on its weakness and the strength points. A participatory approach was used with focus groups for each "chain" and activity considered. In the second part, the authors explain the main results obtained for each "chain" and activities. The characteristics of each field and the new knowledge are taken into account.
La globalisation et une demande alimentaire toujours plus diversifiée et complète nous rendent plus conscients de la nécessité d'activer un processus de formation continue dans les différentes activités du secteur agricole. Ce travail analyse les caractéristiques de ce processus dans certaines filières agro-alimentaires et de l'agritourisme en Toscane. La première partie du travail a pour but la recherche des limites et des avantages de la méthodologie utilisée (la gestion de groupes à travers lesquels analyser la demande de formation) et la deuxième partie la connaissance des typologies d'actions formatives qui doivent être assurées par rapport aux caractéristiques de chaque filière agro-alimentaire et de l'agritourisme.
La filière de la viande bovine a été l'objet ces dernières années d'une crise profonde dérivant soit de tendances de longue durée concernant le changement dans les modes de consommation, avec une ...attention croissante au lien entre l'alimentation et la santé et donc une pénalisation conséquente pour la viande, soit d'évènements imprévisibles comme une série de scandales alimentaires. Pour freiner cette tendance, récupérer la confiance du consommateur et augmenter en même temps les potentiels de succès dans un marché toujours plus concurrentiel et global, un intérêt progressif vis à vis de la qualité s'est produit au sein de la filière. Face à une telle situation, le rapport suivant essaie de mettre en évidence la façon selon laquelle les entreprises peuvent entreprendre un parcours de qualité et montrer les modalités de passage d'une stratégie individuelle à une stratégie collective, exigeant la participation de tous les acteurs de la filière, dans une logique de qualification du produit-processus réalisé
In a deeply changed agro-zootechnical system, in which the quality of human resources and, above all, the ability to anticipate changes constitute the critical factors of development, a lively debate ...on the necessity to create a professional training system able to respond to the territorial needs has set out in the last years. All this asks for the elaboration of training proposals adherent to specific local demands and connected to the projectuality in being. The aim of the present work is to develop a methodology available to the goals of the formative planning, a methodology that allows a connection between analysis of training requirements and definition of coherent training actions. This work is an operational proposal and also a tool for all the different subjects involved in professional training. Particularly, the work proposes: the phases of the methodological model for the construction of training requests; the participative methodological tools to be used inside the model; the criterions to be followed for identification of the formative pathways. To make the proposed model more operational and to favour its application, it has been tested in a research applied to individualize the training request and formative pathways to be activated in the contest of the valuation and marketing of typical food products of the rural district of Maremma
Nel quadro di un sistema agricolo-zootecnico profondamente mutato, nel quale la qualità delle risorse umane e, soprattutto, la capacità di anticipare i cambiamenti costituiscono i fattori critici di sviluppo, si è avviato negli ultimi anni un dibattito sulla necessità della creazione di un sistema della formazione professionale capace di fornire risposte adeguate alle istanze territoriali. Tutto ciò richiede l'elaborazione di proposte formative aderenti alle specifiche esigenze locali e collegate alle progettualità in essere. Scopo del presente lavoro è di mettere a disposizione una metodologia utilizzabile ai fini della progettazione formativa, che consenta un collegamento fra analisi dei fabbisogni formativi e definizione di azioni formative coerenti con tali fabbisogni. Il lavoro si presenta come una proposta operativa e uno strumento di lavoro per i diversi soggetti coinvolti nella formazione professionale. In particolare, il lavoro propone: le fasi del modello metodologico da realizzare per la costruzione delle esigenze di formazione; gli strumenti metodologici di tipo partecipativo da utilizzare all'interno del modello; i criteri da seguire per l'identificazione dei percorsi formativi. Per rendere maggiormente operativo e favorirne l'applicazione, il modello proposto è stato testato in un lavoro di ricerca volto a individuare le esigenze di formazione e i percorsi formativi da attivare nell'ambito della valorizzazione e commercializzazione di prodotti agro-alimentari tipici presenti sul territorio del distretto rurale della Maremma
The analysis of the training needs is just the starting point of the planning process regarding the supply of training actions. A process that should contribute to achieve the following goals: ...identify, as regards training, the professional figures required, on the basis of the already existing or new ones; recognize the clusters of skills (knowledge, attitudes and capabilities) as regards the new professional figures and the already employed staff; ease the information exchange between labour market and training world. In recent years, regular investments were made to analyse the vocational training needs of local systems, in order to readdress the balance of development dynamics in the different areas so that the new action strategies can answer to any bottom up planning approach. Therefore, vocational training is more and more pivotal as regards the increase of the social work force employability. At the same time, planning vocational training activities allows the employment of useful means to order the actions that will be implemented in a context that has, for the most part, limited resources. The Trade On Line project has the objective to inquire the employment potentialities as regards the rural and agricultural fields, in order to define a vocational training action to guarantee a sustainable balanced development of the local system
L´analisi dei fabbisogni costituisce il momento iniziale del processo di elaborazione dell´offerta formativa, il quale deve contribuire al raggiungimento di una serie di obiettivi: identificare in chiave formativa le richieste di professionalità riconducibili a determinate figure già definite o di nuova costituzione; individuare aggregati di competenze (in termini di conoscenze, attitudini e capacità) per le figure innovative e per quelle già operanti nel mondo del lavoro; agevolare la trasmissione di informazioni tra mondo del lavoro e della formazione. Negli ultimi anni sono stati fatti notevoli investimenti per individuare i fabbisogni di formazione nei contesti locali, anche in funzione di un riequilibrio delle dinamiche di sviluppo fra i diversi contesti territoriali, così da individuare strategie di intervento che possano rispondere a qualsiasi esperienza di concertazione dal basso. Questo modo di procedere consente di considerare sempre di più la formazione come fattore decisivo nell´ampliamento dei livelli di occupabilità della forza lavoro sociale. Allo stesso tempo, il creare un´offerta formativa programmata permette di utilizzare uno strumento che ordini gli interventi da realizzare operando in un contesto che nella maggior parte dei casi si presenta a risorse limitate. Sono proprio queste le finalità che si è posto il progetto Trade On Line, che ha avuto come obiettivo quello di indagare le potenzialità occupazionali in aree agricolo-rurali, al fine di programmare un´offerta formativa che potesse contribuire allo sviluppo di queste aree e realizzare supporti didattici multimediali da associare a tale offerta
Recently, the European experience of upgrading biological product quality has been boosted through public and private instruments of valorization, like collective trademarks. The trademark management ...gives a new identity and good quality standards to biological products. It becomes a sign, whose special characters make it susceptible to clearly distinguish products in order to realize specific relationships with the customers and to increase the appreciation for the product. This paper aims at providing a picture of organic products in Tuscany and to analyze the opportunity to realize a collective trademark in this region. Such a choice is made in order to identify the role that could be played by this kind of instrument of valorization: it is supposed to be not only an instrument of communication but also a resource for the development of regional organic products. Collective trademarks realised in Europe for organic products have been also studied to compare public and private instruments of valorization and to identify the criteria for the choice of the most useful instrument according to the Tuscany situation. The results obtained in this paper have been discussed with the Associazione Produttori Biologici of Tuscany
Negli ultimi anni si registrano in ambito europeo diverse esperienze di valorizzazione delle produzioni biologiche, esperienze volte a garantire la qualità delle produzioni attraverso l´impiego di marchi collettivi. L´apertura al marchio crea una nuova frontiera nell´evoluzione della concorrenza delle produzioni biologiche: la gestione di un tale strumento fornisce una nuova identità al prodotto, garantisce un adeguato livello qualitativo e offre nuove opportunità di comunicazione con il consumatore, ma anche con gli operatori commerciali lungo la filiera di produzione. La ricerca mira a studiare quelle variabili (endogene ed esogene) che sono ritenute capaci di favorire, ovvero ostacolare o ritardare, la creazione di un marchio collettivo nell´ambito del biologico toscano e a definire i possibili scenari di valorizzazione auspicabili in tale contesto territoriale. Allo scopo di effettuare un´analisi comparata delle diverse esperienze di valorizzazione, vengono analizzati i marchi europei, diversi fra loro per tipologia e garanzie offerte: il confronto tra questi marchi consente di individuare i possibili scenari di valorizzazione auspicabili per la situazione del biologico toscano. I risultati della ricerca, relativi alle linee strategiche da seguire per attuare un tale tipo di percorso e alle prime ipotesi di intervento da realizzare al fine di rendere operative le strategie definite, sono state discusse con l´Associazione Produttori Biologici della Toscana
Recently, the Italian experience of upgrading product quality has been boosted through EC measures aimed at ensuring the quality of local products by using National and European Community recognition ...systems. Specifically, the introduction of EC Council regulations n. 2081/92 and 2082/92 and Law n. 164/92 have laid the legal foundations for harmonized regulation of distinctive labels of collective use, falling under the categories of Protected Designation of Origin (PDO), Protected Geographic Indication (PGI), Guaranteed Traditional Specialities (GTS), Designation of Controlled Origin (DCO), and finally, Designation of Controlled and Guaranteed Origin (DCGO). Products that bear these distinguishing symbols represent products where quality, perceived as typical, must be guaranteed and certified. In other words, this quality must be guaranteed to the market (considered in its broadest significance, such as the entire socio-economic market where the goods are distributed) by proving the producer effective ability to meet minimum requirements. To do this, the regulations have provided for setting up a strictly, effectively and thoroughly managed control system that would lend credibility and ensure the consumer the quality of the entire production process and, consequentially, of the final product
Negli ultimi anni l´esperienza italiana di valorizzazione della qualità si è concentrata su attività volte a garantire la tipicità dei prodotti offerti, mediante l´impiego di strumenti di riconoscimento, sia nazionali, sia comunitari. In particolare, con l´emanazione dei Regolamenti CEE n. 2081/92 e n. 2082/92 e della Legge n. 164/92 sono state poste le basi giuridiche per una regolamentazione armonizzata dei segni distintivi a fruizione collettiva, rispondenti alle tipologie delle Denominazioni di Origine Protetta (DOP), delle Indicazioni Geografiche Protette (IGP), delle Specialità Tradizionali Garantite (STG), delle Denominazioni di Origine Controllata (DOC) e delle Denominazioni di Origine Controllata e Garantita (DOCG). La produzione che utilizza questi segni distintivi si configura come una produzione in cui la qualità, intesa come tipicità, deve essere garantita e certificata. In altre parole, tale qualità deve essere assicurata al mercato (considerato, nella sua accezione più ampia, come l´intero contesto socio-economico a cui è destinata) mediante dimostrazione della effettiva capacità di soddisfare i requisiti richiesti. Per fare questo, la normativa ha contemplato la presenza di un sistema di controllo da gestirsi nel modo più rigoroso, efficace ed esaustivo possibile, al fine di dare credibilità e garantire al consumatore la qualità dell´intero processo produttivo e, quindi, del prodotto finale

The research aims at studying the different cross-sectors of the complex Tuscan horse sector, through the identification of its phases and subjects and through the definition of the informative ...system, showing the sources of data that are useful for a precise characterization. Such research can be justified by the fact that, at the moment, even though a series of information is available, we still lack a real study that organizes such information. In fact, the material available focuses particularly on the primary phase, leaving aside the other phases which come afterwards. The information collected not only allows us to improve the picture of the horse industry, in relation to the typology of subjects involved and to the roles that such subjects play in the territorial context, but it can also make up a valid support to the planning and designing of initiatives that are to be taken up both at a territorial level and at the level of each area of horse industry. The results obtained have emphasized the complexity of the Tuscan horse sector, which consists of two main sub-sectors according to the use of horse (as consumer goods or as service provided), and the presence of numerous sources of data whose interrelation can lead to the making up of a wide and articulate informative system
La ricerca mira a studiare i diversi spaccati della complessa filiera ippica toscana, attraverso l´individuazione delle fasi e degli agenti che la compongono e la definizione del sistema informativo, illustrando le fonti di dati utili a una sua precisa caratterizzazione. Tale ricerca si giustifica con il fatto che attualmente, pur esistendo una serie di informazioni sulla filiera, manca un vero e proprio studio che organizzi queste informazioni. In effetti, il materiale disponibile concentra l´attenzione soprattutto sulla fase primaria, tralasciando le altre fasi poste più a valle della filiera stessa. Le informazioni raccolte non solo consentono di arricchire il quadro del settore ippico, in relazione alla tipologia di soggetti coinvolti e al ruolo che tali soggetti assumono nel contesto territoriale, ma possono costituire un valido supporto alla programmazione e progettazione di iniziative da intraprendere, sia a livello territoriale, sia di singolo comparto presente all´interno della filiera ippica toscana. I risultati ottenuti hanno evidenziato la complessità della filiera ippica toscana, che si articola in due principali sotto-filiere in relazione all´utilizzo del cavallo (come bene di consumo o come servizio fornito), e la presenza di molteplici fonti di dati la cui interrelazione può portare alla costruzione di un sistema informativo ampio ed articolato
