This article raises the important question as to why cooking, a seemingly mundane practice, performs social and cultural functions that go much beyond cooking, cooking instructions, and food ...preparation, and specifically how it functions in a media context. By integrating theories about inquiry, discourse analysis, gender, and sociolinguistics, the article makes an important contribution to the growing literature on contemporary discourse in the media. The research was conducted on popular television cooking channels, the Food Network and the Cooking Channel, and involved close analyses of a sample of instructional cooking shows. The article is an exploration of social and communicative dynamics inherent in cooking, especially from the public discourse of contemporary cooking shows.

Television cooking shows provide a platform for discussion about food, with storytelling emerging as a way to share and interpret experiences. Within the last twenty years, interest in food has soared with television channels devoted exclusively to food and cooking, nationally and internationally, reaching millions of viewers. Entertaining and educating simultaneously, cooking show hosts weave storytelling in recipe telling, engaging the viewer and creating an “ordinary” persona. Drawing on Labov's narrative theory and Fairclough's synthetic personalization, the paper analyzes the formal structure of stories and the legitimation strategies of amateur celebrity chefs within the discursive framework of the cooking show event. Specifically, storytelling in instructional cooking shows from the Food Network provides a resource for cooking show hosts to construct themselves as authorities in cooking but at the same time as equals to the viewers.

From farmers’ markets to primetime television cooking shows, notions of ‘knowing where our food comes from’ and ‘reconnecting’ with the sources of our food are now central to a range of contemporary ...cultural movements and popular media texts. While these ideas have primarily been mobilized by those with activist commitments to ethical and sustainable food production, they are also increasingly appearing in the media and marketing strategies of large agribusiness and retailing corporations, including those of the major Australian supermarkets. This paper explores some of the techniques currently used by major supermarkets to respond to criticisms about their food ethics, market control and relationship with producers. , it will consider the textual practices of, and social media response to, Coles’ sponsorship and integrated advertising strategies of putting a ‘face’ to the farmers who produce the products found on supermarket shelves. By emphasizing to Coles customers that they, too, can ‘know where their food comes from’ and that their purchasing decisions support individual farmers and family farms rather than large conglomerates, these strategies help to locate Coles within a network of meanings that seek to both shift and contest negative perceptions of the supermarket chain’s corporate practices and food politics in ways that potentially complicate the activist discourses from which they draw.
The study of celebrity chefs is a vibrant area, as previous research has demonstrated, with findings focusing on audience participation, masculinity, and food criticism. However, despite the ubiquity ...of celebrity chefs in the media, there are limited data related to parasocial relationships, healthy eating, and the influence of Hispanic celebrity chefs in modern society. Due to this lack of scholarly research, this dissertation examines the potential of Hispanic celebrity chefs to become role models and promote a healthy lifestyle for Hispanics living in the United States. Based on survey analysis of the influence of celebrity chefs on individuals’ lifestyles, and interviews with eight Hispanic celebrity chefs living in the United States, results showed that Spanish-language celebrity chefs play a positive role and motivate Hispanic viewers to eat healthier foods. The research found that Hispanic viewers of television cooking shows perceive Spanish-language chefs as influencing their beliefs, cooking practices, and eating habits. Also, the study concluded that watching Hispanic celebrity chefs on television has helped Hispanic viewers to connect to their culture and better adjust to living in the United States. Study results illuminate how higher viewership of celebrity chef cooking shows will lead to greater parasocial relationships and stronger identification with the chefs hosting these programs. Understanding the implications of celebrity chefs as role models can further research on entertainment-education approaches and mass media-based health initiatives.
