Anthocyanin widely represents in plants, which was known for their structure complexity of glycosyl and acyl group. In addition, the aglycone reacts with small molecules, like ...ketone, aldehyde, acid and polyphenols. There are numerous derivative structures formed through cyclization, addition and condensation. A method for anthocyanin analysis using mass spectrometry (MS) coupled to high-performance liquid chromatography (HPLC) with ultraviolet-visible detection (UV-Vis) was developed. However, there are some limiting problems, like poor separation leading to co-elution and the low-resolution mass spectrometry providing less information about exact mass. It will cause complex and time consuming in indentation process, the ignore of less ingredients and the uncertainty of structure composition. To resolve the problems, this research utilize high-resolution orbitrap mass spectrometer to provide exact mass, and set up an anthocyanin database, related to the aglycone of anthocyanin. It’s su
