  • Determination of minimal time for kefir grains activation - methodology using experimental ph profiles

    During innovative and efficient experimental predictive kefir grains growth curve modeling, optimally active and viable kefir grains as inoculum have to be used. Therefore, the main objective of this ... study was experimental optimization of classic kefir grains activation procedure. For this purpose sonic laboratory experiments were performed in computer-controlled laboratory RC1 reaction calorimeter provided data of dynamic pH profiles during batch propagation of differently activated kefir grains. Experimental data were mathematically analyzed and using special methodology of minimizing the absolute deviation of pH(t) profiles the minimal time for kefir grains activation was determined. Summarily, we established that optimal activity and viability of inoculum could be ensured only by the kefir grains which were previously activated at least over eleven successive days.
