  • Extraction phenolic compounds from berries and evaluation of antioxidant properties of extracts [Elektronski vir]

    The increasing interest in the powerful biological activity of plant phenolics outlined the necessity of determining their content in differed natural sources. Berries are known to accumulate ... bioactive compounds and for this reason berries were chosen for our study. The content of total phenols (according to the Folin-Ciocalteu procedure), tannins, total monomeric anthocyanins and total flavonoids in blueberry, lingo berry, raspberry and strawberry were determinate by UV spectrophotometrie method. The study showed that content of active compounds in berries extracts is dependent on the extraction technique. The results showed that the largest amount of bioactive compounds was extracted from blueberries (total phenols - 49.18 mg/g extract; tannins - 31.11 mg/g extract; total anthocyanins - 28.50 mg/g extract and 5.20mg/g extract). The strongest antioxidative activity was determined in lingonberry extract obtained with SFE (60.94 %) and raspberry juice (58.51 %). The ability to scavenge the free radical DPPH was very high in fresh (more than 75 % inhibition).
