Per- and polyfluoroalkyl substances (PFAS) are a group of water-soluble chemical compounds with an important number of applications, which have been widely used during the last 60 years. Two of them, ...perfluorooctane sulfonate (PFOS) and perfluorooctanoic acid (PFOA), are the most known and well investigated. As for many other organic substances that are of environmental concern, the diet is the main route of human exposure to PFAS. However, in certain cases drinking water may also mean a significant contribution to human exposure, and to a lesser extent, dust and air (indoor exposure). In recent years, the environmental persistence of PFAS, their biomagnification in food webs, as well as their potential accumulation and toxicity, have generated a notable interest, which has been evidenced by the considerable number of publications in this regard. Recently, we carried out a wide revision on the levels of PFAS in food and human dietary intake. In the current review, we have summarized the recent information (last 10 years) published in the scientific literature (Scopus and PubMed) on the concentrations of PFAS in drinking water and the human health risks derived from the regular water consumption, when available. A large amount of data belongs to PFOS and PFOA and corresponds to studies mainly conducted in countries of the European Union, USA and China, although no information is available for most countries over the world. According to the toxicological information about PFAS that is so far available, the current health risks for the regular consumers of municipal/tap water do not seem to be of concern according to the levels considered as acceptable for various regulatory institutions.

Because of the important environmental presence and the potential human toxicity of per- and polyfluorinated alkyl substances (PFASs), in recent years the social and scientific interest in these ...compounds has notably increased. Special attention has been paid to perfluorooctanesulfonate (PFOS) and perfluorooctanoic acid (PFOA), the most extensively investigated PFASs. Although human exposure to PFASs may occur through different pathways, dietary intake seems to be the main route of exposure to these compounds. In 2012, we published a wide revision on the state of the science regarding the concentrations of PFASs in foodstuffs, the human dietary exposure to these compounds, and their health risks. In the present review, we have updated the information recently (2011-2016) published in the scientific literature. As in our previous review, we have also observed considerable differences in the PFASs detected-and their concentrations-in the food items analyzed in samples from a number of regions and countries. However, fish and other seafood seem to be the food group in which more PFASs are detected and where the concentrations of these compounds are higher. On the basis of the recommendations of the EFSA on the maximum dietary intakes of PFOS and PFOA, human health risks would not be of concern for nonoccupationally exposed populations, at least in the very limited countries for which recent data are available.
Polycyclic aromatic hydrocarbons (PAHs) are a group of over 200 different organic compounds that are mainly formed as the result of pyrolytic processes. For the general population, a number of ...studies have shown that, as for other environmental organic contaminants, the major route of exposure to PAHs is through food consumption. In this paper, the scientific literature concerning the concentrations of PAHs in food and the human dietary intake of these compounds, is reviewed. Unexpectedly, we have detected a considerable lack of scientific papers for countries such as Australia, Canada, Germany, or Japan, among many others, which seems rather unusual given the important scientific and social interest on the knowledge of the health risks of human exposure to environmental pollutants. The data from countries for which the human dietary intake of PAHs is available, show important differences among them, which would be explained by a number of factors, being probably the most important, the different methodologies used in the respective surveys. Regarding the influence of cooking on the levels of PAHs in foodstuffs, and the consequent intake, we conclude that it depends, not only on the particular cooking process, but even more on the specific characteristics of the respective food items.

Meat consumption has been increasing since the 1960s, but especially from the 1980s decade to today. Although meat means an important source of nutrients, it is also evident that a great consumption of this source of proteins has also a negative environmental impact. Livestock production does not only have a negative influence on GHG emissions, but also on the water footprint, water pollution, and water scarcity. With respect to human health, in 2015 the International Agency for Research on Cancer (IARC) stated that red meat was a probable carcinogen to humans (Group 2A), while consumption of processed meat was carcinogenic to humans (Group 1). Most environmental contaminants (PCDD/Fs, PCBs, PBDEs, PCNs, etc.) that are frequently found in meats are highly soluble in fats. Therefore, avoiding ingesting fats from red meats and meat products, doubtless would help in the prevention, not only of the well-known cardiovascular diseases derived of fats consumption, but also of certain kinds of cancers, mainly colorectal cancer. On the other hand, consumption of meat – especially wild meat – is related to virus infections, as many viruses have been found in wild meat trade markets. Based on the scientific literature here reviewed, we have noted that the results of the investigations conducted after the statement of the IARC, have corroborated the recommendation of reducing significantly the consumption of red meats and meat products. In turn, the reduction of meat consumption should contribute to the reduction of GHG emissions and their considerable impact on global warming and climate change. It seems evident that human dietary habits regarding meat consumption in general, and red meats and wild meats in particular, should be significantly modified downward, as much and as soon as possible.
In October 2015, the International Agency for Research on Cancer (IARC) issued a press release on the results of the evaluation of the carcinogenicity of red and processed meat. Based on the ...accumulated scientific literature, the consumption of red meat was classified as “probably carcinogenic to humans” and processed meat as “carcinogenic to humans”. Given the importance of this topic, this review was aimed at revising the current state-of-the-art on the carcinogenicity of red and processed meat, some time after the IARC decision. Some new epidemiological studies and new reviews clearly supporting the IARC decision have been published during these months. However, a number of gaps still exist. It is basic to establish the mechanisms leading to the increased risk of colorectal cancer (CRC) and other cancers arising from red and processed meat consumption. Another important pending issue is to establish the role of known/suspected carcinogens contained in uncooked or unprocessed meats, as well as the influence of cooking. Finally, it would be highly recommended to conduct new epidemiological studies to elucidate whether the consumption of white meat, such as pork and/or poultry, are -positively or inversely-associated with an increased risk of CRC and other types of cancer.

Perfluoroalkyl substances (PFASs) are environmental pollutants with an important bioaccumulation potential. However, their metabolism and distribution in humans are not well studied. In this study, ...the concentrations of 21 PFASs were analyzed in 99 samples of autopsy tissues (brain, liver, lung, bone, and kidney) from subjects who had been living in Tarragona (Catalonia, Spain). The samples were analyzed by solvent extraction and online purification by turbulent flow and liquid chromatography coupled to tandem mass spectrometry. The occurrence of PFASs was confirmed in all human tissues. Although PFASs accumulation followed particular trends depending on the specific tissue, some similarities were found. In kidney and lung, perfluorobutanoic acid was the most frequent compound, and at highest concentrations (median values: 263 and 807ng/g in kidney and lung, respectively). In liver and brain, perfluorohexanoic acid showed the maximum levels (median: 68.3 and 141ng/g, respectively), while perfluorooctanoic acid was the most contributively in bone (median: 20.9ng/g). Lung tissues accumulated the highest concentration of PFASs. However, perfluorooctane sulfonic acid and perfluorooctanoic acid were more prevalent in liver and bone, respectively. To the best of our knowledge, the accumulation of different PFASs in samples of various human tissues from the same subjects is here reported for the very first time. The current results may be of high importance for the validation of physiologically based pharmacokinetic models, which are being developed for humans. However, further studies on the distribution of the same compounds in the human body are still required.

The present literature review was aimed at assessing whether living in the vicinity of petrochemical industries complexes – including oil refineries – is associated with a higher incidence of adverse ...health effects other than cancer. The available scientific literature on this potential association was reviewed by means of PubMed and Scopus databases. It is known that air pollutants such as sulfur oxides, nitrogen oxides, carbon monoxide and dioxide, volatile organic compounds, polycyclic aromatic hydrocarbons and various metals are commonly detected in the surroundings of these complexes. Most of the reviewed studies report increases in the prevalence of asthma and other respiratory problems for children and adults living in the surroundings of the petrochemical complexes, as well as reproductive outcomes in pregnant women. Based on this, as well as on similar conclusions also found for cancer incidence and mortality, we do recommend to conduct all the necessary studies for each specific complex in order -if necessary- to take the appropriate measurements to significantly reduce the levels of air pollutants can be achieved.

The number of studies published on COVID-19 in recent months is certainly impressive. However, there are still important gaps to know a great number of characteristics of this disease. Among these, ...some potential ways of transmission of the SARS-CoV-2 and the different reasons for the severity of the disease in different people. Various studies have suggested that certain air pollutants could be increasing the transmission of the coronavirus, as well as the risks of COVID-19 incidence and mortality. In the present preliminary case-study conducted in Tarragona Province (Catalonia, Spain), we studied the potential association of COVID-19 with PM10, NO2 and O3, as well as the differences in the incidence and lethality of this disease. This Province is divided into two “health regions”: Camp de Tarragona, with an important industrial complex, and Terres de l’Ebre, with a great agricultural component. In spite of the notable limitations of the current study, our preliminary findings indicate that the industrialized/urban areas of Tarragona Province show a higher incidence and mortality of COVID-19 than the agricultural/rural zones. These – and previous – results would highlight the importance of conducting specific investigations focused on directly assessing whether air pollutants such as particulate matter can act as carriers of the SARS-CoV-2. If confirmed, the recommendation on keeping the “social distance” (1.5–2 m) might need to be adapted to this situation.

Since 1999, a hazardous waste incinerator (HWI) is operating in Constantí (Tarragona County, Catalonia, Spain). In 1996–1998, when the facility was being built, we started a monitoring program aimed ...at evaluating the impact of the emissions of polychlorinated dibenzo-p-dioxins and dibenzofurans (PCDD/Fs) by the HWI on the environment and the human health. This study aimed at determining the current concentrations of PCDD/Fs in breast milk samples of women living nearby the HWI and at comparing these levels and profiles with those obtained in the baseline (1996–1998) and previous surveys (2002, 2007 and 2012). Furthermore, the association between the dietary intake of PCDD/Fs and the congener profiles in breast milk was also explored. Twenty milk samples were collected from women living in Tarragona downtown and near the industrial area where the HWI is placed. The content of PCDD/Fs was analyzed by following a procedure derived from the US EPA methods 1613 and 8290A. The mean concentration of PCDD/Fs was 2.26 pg WHO-TEQ/g fat. No significant differences were found between women living in industrial and urban areas (1.67 pg vs. 2.48 pg WHO-TEQ/g fat). Interestingly, a notable significant reduction (81%) was observed with respect to the concentrations found in the baseline study. The profiles of PCDD/Fs in breast milk were similar independently on the area and period of collection, being mainly influenced by the intake of fish, meat, oils and fats. The decreasing trend of PCDD/Fs in human milk agrees with the reduction observed in the dietary intake of these pollutants. It was also concluded that the current levels of PCDD/Fs in human milk levels are not influenced by the HWI stack emissions.

Chemical industries and oil refineries are known emission sources of environmental contaminants, such as metals/metalloids, polycyclic aromatic hydrocarbons (PAHs), volatile organic compounds (VOCs) ...and polychlorinated dibenzo-p-dioxins and dibenzofurans (PCDD/Fs), among others. Based on the toxicological potential of these pollutants, harmful health effects can be expected for the population living near these facilities. One of the largest chemical/petrochemical complexes in Europe is located in Tarragona County (Catalonia, Spain). In the last two decades, a number of investigations aimed at assessing the environmental impact of air pollutants potentially emitted by this industrial complex have been carried out. The present paper is a review of the available scientific information on the levels of air pollutants related with the activities of this chemical/petrochemical complex. Although there are currently some data on the environmental burdens of metals/metalloids, PAHs, VOCs and PCDD/Fs, there is an evident lack of specific biological monitoring studies on human health. Taking into account the amount of chemicals released to air and their toxicity, it is essential to perform an in-depth analysis of the current health status of the population living in Tarragona County.
