Analiza klavne kakovosti goved v klavnici Kmečke zadruge Sevnica : diplomsko delo : visokošolski strokovni študij = Beef carcass quality in slaughterhouse of farming cooperative in Sevnica : graduation thesis : higher professional studiesKozinc, VanjaV nalogi smo analizirali klavno kakovost goved, zaklanih v klavnici Kmečke zadruge Sevnica. V obdobju od januarja 1995 do junija 2003 smo analizirali gibanje povprečnih mas klavnih polovic po ... kategorijah, ocene za konformacijooziroma mesnatost in zamaščenost ter plačilne razrede. Na osnovi dveh statističnihmodelov smo ocenili vpliv leta in vpliv sezone zakola na analizirane lastnosti. Analiziranih je bilo 17 295 klavnih polovic. Povprečna masa klavnih polovic je znašala 257 kg. Povprečna ocena za konformacijo (mesnatost) je znašala 3,35, kar pomeni oceno med U in R razredom. Stopnja zamaščenosti je bila v povprečju 2,14, kar pomeni skoraj optimalno zamaščenost. Goveji trupi so bili največkrat razvrščeni v tretji in drugi plačilni razred, kar pomeni nadpovprečno kakovost. Kategorija živali in leto zakola sta statistično značilno vplivala na vse proučevane klavne lastnosti, vpliv sezone pa ni pomembno vplival na navedene lastnosti. Najboljšo klavno kakovost so v povprečju dosegli mladi biki (plačilni razred 2,35), sledili so jim starejši biki, voli in telice. Najslabša klavna kakovost je bila zabeležena pri mladih kravah (plačilni razred 4,22), sledile pa so jim starejše krave in teleta. Med leti se klavna kakovost ni bistveno spremenila, čeprav se v letih2002 in 2003 kaže negativen vpliv zaradi izrednega povečanja storitvenega zakola.Type of material - undergraduate thesisPublication and manufacture - Ljubljana : [V.
