Ocena dnevnega vnosa prehranskih vlaknin z žiti in pristopi k večanju porabe polnozrnatih izdelkov [Elektronski vir] = Estimating the daily intake of dietary fibre from cereals and approaches to increasing the consumption of wholegrain productsSernc, Tilen ; Kovač, Boris, biotehnolog, 1964-Uvod: Polnozrnati izdelki so eden izmed pomembnejših virov prehranskih vlaknin. Namen študije je bil raziskati, koliko prehranskih vlaknin povprečen Slovenec dnevno zaužije s pšeničnimi izdelki, in ... predlagati ukrepe za povečanje vnosa vlaknin. Metode: S pomočjo podatkov mlinske industrije smo ugotovili razmerje prodaje različnih tipov mok za neposredno uporabo v gospodinjstvih in za predelavo v izdelke. Iz analitskih podatkov o vsebnosti vlaknin v standardiziranih tipih mok smo na podlagi deležev in podatka o povprečni letni porabi pšeničnih izdelkov izračunali povprečni dnevni vnos vlaknin na osebo. Rezultati: Med izdelki iz žit prevladujejo z 71,6-% deležem bele moke in izdelki iz belih mok, ki vsebuje med 2,9 in 3,1 % vlaknin na 100 g. Izdelki iz črnih in polnozrnatih mok predstavljajo le 12,4- % delež. Glede na deleže posameznih tipov in vsebnost vlaknin s pšeničnimi izdelki posledično zagotovimo le 5,8 g vlaknin dnevno, medtem ko je priporočeni dnevni vnos vlaknin vsaj 30 g na osebo. Diskusija in zaključek: Rezultati kažejo, da v Sloveniji na račun pšeničnih izdelkov zaužijemo v povprečju le 20 % potrebnih prehranskih vlaknin dnevno. Ker delež pšeničnih izdelkov predstavlja dobrih 80 % konzumacije vseh izdelkov iz žit, je smiselno na nacionalnem nivoju sprejeti ukrepe za reformulacijo s ciljem povečanja vnosa vlaknin.Source: Izobraževanje in vseživljenjsko učenje za razvoj zdravstvenih ved [Elektronski vir] : zbornik prispevkov z recenzijo : 15.
