  • Nitrate and nitrite content in Slovenian fruit and vegetable
    Kmecl, Veronika ...
The article presents the results of studies of nitrate and nitrite content in Slovenian fruits and vegetables. The monitoring of NO3 and NO2 in various agricultural products was carried out in the ... period between 2001 and 2003. During this time 410 samples or 10 agricultural products (potato, lettuce, string beans, cauliflower, pepper, tomato, pears, strawberries, apples and grapes) were analysed. The samples were taken at the time of technological maturity directly from growing sites and they were analysed using segmented flow analyser (SFA). The average nitrate contents were the highest in lettuce (1116 mg kg-1), cauliflower (231 mg kg-1), string beans (229 mg kg-1), potato (199 mg kg-1) and they were moderately high in strawberries (94 mg kg-1) and pepper (69 mg kg-1). Low nitrate contents (below 5 mg kg-1) were found in fruit (apples, grapes, pears) and tomato. With the exception of strawberries (<2.0 mg kg-1), apples (1.1 mg kg-1), pears (1.0 mg kg-1), grapes (1.0 mg kg-1) and potato (1.0 mg kg-1) the content of nitrites did not exceed 0.5 mg kg-1.
