The aim of this study was to investigate the influence of raw chicken meat content on the rheological properties and 3D printability of minced meat mixtures using different concentrations of raw and ...cooked chicken meat. The meat mass contained yolk, crushed ice, lean raw meat and cooked meat with a high concentration of connective tissue. The concentrations of raw meat added to cooked meat as a percentage of the total weight of meat were 0; 30; 40; 50; 60; 70 and 100. To determine the rheological properties, amplitude sweep and frequency sweep were carried out with a Rheostress RS 300 (Thermo Fisher Scientific Inc.). Cubes were printed, and the printability and optical impression were evaluated using grades from 1-5. The results showed that rheological properties had a strong influence on the printability of meat mass and it is necessary for G' (storage modulus) at the LVR (linear viscoelastic region) to be higher than 7000 Pa. The complex viscosity |η*| should be higher than 170 Pa, at a shear stress τ = 10 Pa, and a frequency f = 10 Hz used to guarantee sufficient solidity.
In Pakistan, groundwater resources are depleting at an alarming rate due to intensive pumping, shifting of cropping patterns, and climate change vulnerability. The present study is aimed at ...investigating groundwater stress in the command area of Lower Chenab Canal (LCC) and associated branch canals. Groundwater stress is determined by considering the cropping patterns, surface water availability, groundwater levels, climatic variation, and crop water requirement (CWR) in the LCC command area. The climatic data is obtained from the Pakistan Meteorological Department (PMD) from 1990 to 2020. The records of temporal variation in cropping patterns are obtained from the Crop Reporting Service (CRS), Directorate of Agriculture, Lahore for the 1995–2020 period and classified according to Rabi season (November to April) and Kharif season (May to October). The LCC surface water flows data and groundwater levels are collected from the Punjab Irrigation Department (PID) Lahore from 2003 to 2018 and from 1995 to 2016, respectively. The CWR is estimated using the Cropwat 8.0 model and groundwater levels are estimated using the Inverse Distance Weighted (IDW) tool of ArcGIS software. It has been determined that Faisalabad, Sheikhupura, and Toba Tek Singh are highly groundwater stress cities having an average drawdown rate of 0.58 m/year. The surface water availability is also decreased from 7.75 to 4.81 billion cubic meters (Bm3) for the Kharif season whilst 4.17 to 2.63 Bm3 for the Rabi season. This study concluded that due to severe conditions in highly stressed areas, policy planners, decision-makers, and stakeholders should sincerely take some steps for maintaining groundwater levels either by capacity building workshops for the farmers or limiting the number of tubewells.
The state-of-the-art technique to control slug pests in agriculture is the spreading of slug pellets. This method has some downsides, because slug pellets also harm beneficials and often fail because ...their efficiency depends on the prevailing weather conditions. This study is part of a research project which is developing a pest control robot to monitor the field, detect slugs, and eliminate them. Robots represent a promising alternative to slug pellets. They work independent of weather conditions and can distinguish between pests and beneficials. As a prerequisite, a robot must be able to reliably identify slugs irrespective of the characteristics of the surrounding conditions. In this context, the utilization of computer vision and image analysis methods are challenging, because slugs look very similar to the soil, particularly in color images. Therefore, the goal of this study was to develop an optical filter-based system that distinguishes between slugs and soil. In this context, the spectral characteristics of both slugs and soil in the visible and visible near-infrared (VNIR) wavebands were measured. Conspicuous maxima followed by conspicuous local minima were found for the reflection spectra of slugs in the near infrared range from 850 nm to 990 nm. Thus, this enabled differentiation between slugs and soils; soils showed a monotonic increase in the intensity of the relative reflection for this wavelength. The extrema determined in the reflection spectra of slugs were used to develop and set up a slug detector device consisting of a monochromatic camera, a filter changer and two narrow bandpass filters with nominal wavelengths of 925 nm and 975 nm. The developed optical system takes two photographs of the target area at night. By subtracting the pixel values of the images, the slugs are highlighted, and the soil is removed in the image due to the properties of the reflection spectra of soils and slugs. In the resulting image, the pixels of slugs were, on average, 12.4 times brighter than pixels of soil. This enabled the detection of slugs by a threshold method.
A CSM-CERES-Beet pest damage routine was modified to simulate the impact of Cercospora leaf spot disease effects on sugar beet yield. Foliar disease effects on sugar beet growth and yield were ...incorporated as daily damage to leaf area and photosynthesis, which was linked to daily crop growth and biomass accumulation. An experiment was conducted in Southwest Germany (2016–2018) with different levels of disease infection. Data collected included time-series leaf area index, top weight, storage root weight and Cercospora leaf spot disease progress. The model was calibrated using statistical and visual fit for one treatment and evaluated for eight treatments over three years. Model performance of the calibration treatment for all three variables resulted in R2 values higher than 0.82 and d-statistics higher than 0.94. Evaluation treatments for all three observation groups resulted in high R2 and d-statistics with few exceptions mainly caused by weather extremes. Root mean square error values for calibration and evaluation treatments were satisfactory. Model statistics indicate that the approach can be used as a suitable decision support system to simulate the impact of observed Cercospora leaf spot damage on accumulated above-ground biomass and storage root yield on a plot/site-specific scale.
Anchote (
) is an indigenous tuber crop of the Ethiopian Highlands. It is popular in the western Oromia Region of the country. Apart from food, the crop is also used in traditional medicine. Anchote ...tubers possess two variations in its tissue colour, red and white. In this study, a small market survey and a nutritional comparison of red and white anchote were conducted. White tissue anchote seems to be more popular, due to its soft texture and ease of cooking. However, the red variant was considered for flour making (by dehydration), for use in porridge and soups for various medicinal and supplementary food applications. Red anchote tubers contained significantly higher protein content (16.85 mg/100 g dry matter basis) than the white variant. However, apart from the marginally higher protein content compared to other tropical root and tuber crops, anchote seems to remain a primary source of carbohydrates. In macro minerals, white anchote proves to be a more important source of Ca with 81 mg/100 g edible portion; however, on dry matter basis, the content was similar to the red variant (316 and 309 mg/100 g dry matter, white and red respectively). Further research on vitamin content (especially vitamin A in the red variant) would be useful to understand the full nutrition potential of the crop.
Complementary foods in Ethiopia have nutritional and sensory limitations which can be attributed to cereal‐dominated ingredients and lack of appropriate processing techniques. This study aimed to ...optimize the nutritional and sensory quality of complementary food product through compositing and extrusion of various local ingredients. A constrained D‐optimal mixture experiment with 13 runs was designed. Accordingly, 55–65 g/100 g oats, 11–23 g/100 g soybean and 6–11 g/100 g linseed, and a premix of 9.9 g/100 g sugar, 0.6 g/100 g table salt, three g/100 g moringa and 1.5 g/100 g fenugreek were blended and extruded using a co‐rotating twin screw extruder with set parameters. Statistical model evaluation and optimization were done using Minitab version 16 software package. There is a statistically significant (p < 0.05) association between the blend of oats and soybean, oats and linseed, soybean and linseed, and the protein, fat, carbohydrate, fiber, ash, β‐carotene content as well as aroma, taste, and consistency. On the contrary, there is a no statistically significant (p < 0.05) association between the blends and moisture, energy, and zinc content together with appearance and overall acceptability. The optimal blending ratio was 55.0 g/100 g oats, 21.0 g/100 g soybean, and 9.0 g/100 g linseed plus 15.0 g/100 g premix. Evidence‐based selection of locally grown plant‐based ingredients, an optimal mixture of these ingredients and optimal processing, can result in a complementary food product with an improved dietary quality for children in low‐income settings.
Optimal blending and extrusion of selected plant‐based ingredients could help in developing nutritious complementary foods. Such optimized products can be an alternative to the more expensive, branded complementary foods available in the market. Blending ratio is significantly associated with the product's nutritional and sensory qualities.
The European Union funded project SAMS (Smart Apiculture Management Services) enhances international cooperation of ICT (Information and Communication Technologies) and sustainable agriculture ...between EU and developing countries in pursuit of the EU commitment to the UN Sustainable Development Goal "End hunger, achieve food security and improved nutrition and promote sustainable agriculture". The project consortium comprises four partners from Europe (two from Germany, Austria, and Latvia) and two partners each from Ethiopia and Indonesia. Beekeeping with small-scale operations provides suitable innovation labs for the demonstration and dissemination of cost-effective and easy-to-use open source ICT applications in developing countries. SAMS allows active monitoring and remote sensing of bee colonies and beekeeping by developing an ICT solution supporting the management of bee health and bee productivity as well as a role model for effective international cooperation. By following the user centered design (UCD) approach, SAMS addresses requirements of end-user communities on beekeeping in developing countries, and includes findings in its technological improvements and adaptation as well as in innovative services and business creation based on advanced ICT and remote sensing technologies. SAMS enhances the production of bee products, creates jobs (particularly youths/women), triggers investments, and establishes knowledge exchange through networks and initiated partnerships.
Grain production is an important component of food security in Kenya but due to environmental conditions that favor rapid growth of insect populations, farmers and other agricultural stakeholders ...face ongoing and novel challenges from crop and stored product pest insects. To assist development of methods to reduce economic losses from stored product insect pests in Kenya, acoustic, visual, and pitfall trap surveys were conducted in five grain storage warehouses. Two commercially available acoustic systems successfully detected the pests of greatest economic importance,
(Motschulsky) and
(Horn). Other insects of lesser economic importance also were observed in the visual surveys, including
(Olivier) (Lepidoptera: Gelechiidae), and
(Herbst). This study demonstrated that the use of acoustic technology with visual surveys and pitfall traps can help managers to identify and target infestations within their warehouses, enabling them to reduce postharvest losses. With most warehouses being located in relatively noisy urban or peri-urban areas, background noise considerations are being incorporated into the design of future acoustic detectors for stored pest infestations. Kenya must import grain yearly to meet consumption needs; however, if the current yearly postharvest losses of 20-30% in warehouses decreased, import costs could be reduced considerably.
Cassava (
Manihot esculenta Crantz
) is one of the oldest root and tuber crops, used by humans to produce food, feed and beverages. Currently, cassava is produced in more than 100 countries and ...fulfils the daily caloric demands of millions of people living in tropical America, Africa, and Asia. Its importance as a food security crop is high in Western, Central and Eastern Africa due to its ability to produce reasonable yields (~10 t/ha) in poor soils and with minimal inputs. Traditionally a famine reserve and a subsistence crop, the status of cassava is now evolving fast as a cash crop and as raw material in the production of starch (and starch based products), energy (bio-ethanol) and livestock feed in the major producing countries. Cassava leaves, which are rich in protein and beta-carotenoids, are also used as a vegetable and forage (fresh or dehydrated meal) in various parts of the world. In recent years, some of the problems in the production of cassava have been increasing infection with cassava mosaic disease (CMD), cassava brown streak disease (CBSD) and cassava bacterial blight (CBB). Inherent post-harvest physiological disorder (PPD) and cyanogenic glycosides (CG) are some of the most prominent challenges for scientists, producers and consumers in the post-production systems. Collaborative research in participatory plant breeding is ongoing at leading international research institutes such as IITA and CIAT to improve crop resistance to virus diseases, reduce PPD and CG, and improve the overall nutritional characteristics. Further research should also focus on post-production systems by developing enhanced storage and transportation techniques, mechanisation (peeling, size reduction, drying and dewatering) and improved packaging. Moreover, a robust national policy, market development, and dissemination and extension program are required to realise the full potential of innovations and technologies in cassava production and processing.

The potential of Visual-NIR hyperspectral imaging (VNIR-HSI, 425–1700 nm) to predict celeriac quality attributes during the drying process was investigated. The HSI-Gaussian Process Regression (GPR) fusion method excellently predicted moisture content (MC, R2 ≈ 1.00, RMSE = 0.77 gw 100 gs-1) and water activity (aw, R2 = 0.98, RMSE = 0.04). Moreover, the rehydration ratio (RR, R2 = 0.89, RMSE = 0.04) and colour indices (R2 = 0.80–0.93, RMSE = 0.17–1.45) were reasonably predicted. However, antioxidant activity (AA) and total phenolic compounds (TPC) were poorly predicted. These results are potentially due to MC variations dominating the NIR region, masking phenolic compounds. Finally, the celeriac-based-trained model was assessed by predicting the MC of apple, cocoyam, and carrot slices. The results were encouraging; however, a GPR model trained on the data of all four commodities was more robust (R2 ≈ 1.00, RMSE = 1–2 gw 100 gs-1).
